KOFTA KEBAB
Lamb kofta recipe is a popular Middle Eastern dish but these are not just another lamb koftas. I will share with you my family's recipe for a tender and juicy kofta, that everyone has been asking me about.

Steps:
- Soak the bun in water until soft.
- In a large bowl, mix all other ingredients together.
- Squeeze water out of the bun and add to the meat mixture.
- Mix everything until well incorporated.
- If you are making meatballs, roll into little balls or else wrap the meat around wooden skewers.*
- Place kofta kebabs on a baking sheet lined with parchment paper or aluminum foil. Cover the kofta with aluminum foil and cook in a 350F oven for 10-15 minutes.
- While the kofta are in the oven, fire up your grill on high and grease the racks well.
- Place the kofta fingers on the grill for 5 minutes or less to take the grilling marks and be browned.
- Enjoy with your choice of side dishes and dips like toomeya, taktouka and tahini sauce.

- Preheat oven to 350 degrees. Cover a large pan with parchment paper
- Add the onion, parsley, salt, pepper, and garlic powder to a food processor. Grind until completely minced
- Add the ground beef to the food processor and grind until everything is mixed evenly
- Roll the beef mixture into 20 even meatballs
- Place the meatballs side by side on the prepared baking pan
- Bake for about 25 minutes
- Remove from oven. Serve with pita bread and hummus if desired!

- Place onion, parsley, mint, oregano and garlic in bowl of food processor. Pulse until minced. In large bowl, combine herb mixture, lemon pepper, salt, paprika and cumin. Add lamb; mix lightly but thoroughly. With wet hands, shape into 16 balls. In a large skillet, heat 1 tablespoon oil over medium heat. Brown meatballs in batches; drain. Remove and keep warm. Serve meatballs over cooked couscous. Top with yogurt, tomato wedges, and red onion. Garnish with mint leaves and lemon wedges.

Kofta, Kafta, or Kafka is often characterized as the Middle Eastern version of a hamburger. it is made with ground beef, ground lamb, or both, but that's pretty much where the similarity ends.

- In a ziped bag , combine the mince, onion, garlic, mint, parsley, chilli flakes, paprika, ginger, cumin and coriander.
- Use a food processor to ground the mixture of meat.
- Shape small handfuls of the mixture into short sausages, and slide them onto metal skewers (or soaked bamboo skewers). Place them onto a lined baking tray and refrigerate covered for 20 minutes.
- Heat an oiled barbecue plate to high. Place the koftas on the surface and reduce the heat to a low setting. Cook for 20 minutes, turning koftas occasionally, or until cooked through.
- Transfer the cooked koftas to a tray and cover with foil. Allow to rest for 5 minutes and serve with your choice of salad, bread, and other sides.
KOFTIT ROZ (RICE MEATBALLS)
This is a wonderful and easy recipe. Very traditional in Egypt. Served over plain white rice. My grandmother, and mother... and all my aunties have been making this for decades. Hope you enjoy it as much as I do.

- Preheat oven to 350°F.
- Puree the sauce ingredients in blender/food processor.
- Combine together together all the kofta ingredients in a large bowl.
- Ball your kofta into 1.5 inch balls and place in a 9in x 9in oven safe pan.
- Pour sauce over kofta and cook in oven for 45-60 minutes turning once.
