My husband swears this eggplant dish tastes like crispy fried eggplant Parmesan. It's easy and delicious!

1 eggplant, peeled and cut into 1/4-inch slices
salt to taste
2 eggs
2 tablespoons milk
½ cup grated Parmesan cheese
½ cup wheat germ
2 cups tomato sauce (such as Prego® Heart Smart)
1 teaspoon cayenne pepper
1 cup shredded mozzarella cheese

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Sprinkle the eggplant slices with a little salt on each side. Place onto a baking sheet, and set aside for 10 minutes. After 10 minutes, blot with paper towels to remove the moisture that has accumulated. Meanwhile, beat the eggs and milk together in a mixing bowl; set aside. Mix the Parmesan cheese and wheat germ until evenly combined; set aside.
  • Dip the dried eggplant slices into the egg, allow excess egg to drip off, then press into the Parmesan cheese mixture until coated on both sides. Gently shake off any excess Parmesan cheese, and place the eggplant slices onto a baking sheet. Repeat with remaining eggplant slices.
  • Bake in the preheated oven until tender and golden brown, 15 to 20 minutes. While the eggplant slices are baking, cook and stir the tomato sauce and cayenne pepper in a saucepan over medium heat until hot. When the eggplant is done, pour the sauce over top, and sprinkle with mozzarella cheese to serve.

2 tablespoons olive oil
1 large onion, chopped
6 garlic cloves, chopped
1 large bell pepper, chopped
2 lbs eggplants, peeled & cubed
8 cups tomatoes, peeled & cubed
1 (6 ounce) can tomato paste
4 tablespoons fresh basil
2 teaspoons dry oregano
1/3 cup sugar
1/8 cup salt
1 teaspoon pepper
1 cup dry red wine

Steps:

  • In a very large kettle, heat olive oil over medium heat.
  • Add onion and garlic; cook until the onion is soft.
  • Add tomatoes, eggplant, bell pepper, tomato paste, basil, oregano, sugar, salt, pepper, and wine; stir.
  • Bring to boil; reduce heat, cover and simmer for 30 minutes, stirring occasionally.
  • Put into hot jars and seal.
  • Makes 7 pints or 4 quarts.
  • Process in hot water bath for 40 minutes.
  • This is very good served over pasta with Mozzarella cheese.

1 medium eggplant (cut in 1/2-inch cubes)
4 cloves garlic (smashed and chopped)
2 tbsp extra virgin olive oil
28 oz can plum tomatoes including juice (I like Tuttorosso)
salt and fresh ground pepper
chopped basil or parsley (for garnish)

Steps:

  • Heat oil over medium-high heat in a large deep skillet, when hot saute the garlic in olive oil.
  • Add eggplant and cook about 3 minutes, until it begins to soften.
  • Coarsely chop tomatoes and add them to the skillet along with the juices.
  • Season with salt and pepper and simmer, uncovered about 15-20 minutes.
  • Add fresh chopped herbs and serve over your favorite pasta.

1 large (~550 g) eggplant ((unpeeled and cut into bite-size pieces // ~7 cups cubed eggplant as the recipe is written))
2 Tbsp olive or melted coconut oil ((if avoiding oil, omit))
½ tsp sea salt
2 Tbsp olive or coconut oil ((if avoiding oil, sub water))
1 large white or yellow onion ((thinly sliced))
3 cloves garlic ((minced))
1 Tbsp ground cumin
1 Tbsp smoked paprika
¼ tsp sea salt ((plus more to taste))
2 14.5-oz cans diced fire-roasted tomatoes
1/2 cup water ((or vegetable broth))
1 cup cooked chickpeas ((optional // well rinsed and drained // or sub cooked lentils))
1 Tbsp maple syrup or coconut sugar
2 Tbsp harissa paste ((or sub another favorite hot sauce or chili garlic sauce))
Cilantro or parsley
White rice, brown rice, or quinoa ((or sub cauliflower rice* for grain-free))

Steps:

  • Preheat oven to 425 degrees F (218 C) and line a large baking sheet with parchment paper.
  • Add diced eggplant, drizzle with avocado or olive oil, and sprinkle with salt. Toss to coat and roast for 30-35 minutes, flipping / tossing near the 20-minute mark.
  • In the meantime, heat a large rimmed pan or pot over medium heat. Once hot, add oil (or water) and onions. Sauté for 4-5 minutes, stirring frequently, or until soft and slightly caramelized.
  • Add garlic, cumin, and paprika and stir to coat. Cook for 1 minute more.
  • Add tomatoes and their juices as well as water (or vegetable broth). Cover and bring to a simmer over medium heat. Cook for 4 minutes to allow the flavors to develop.
  • Remove cover and add (rinsed, drained) chickpeas (optional), maple syrup, and harissa paste and stir to coat. Cover and simmer over medium-low heat.
  • Remove roasted eggplant from oven, turn oven off, and add eggplant to the tomatoes and chickpeas. Stir to combine and cover. Simmer over medium-low / low heat for another 10 minutes to allow flavors to deepen.
  • Taste and adjust flavors as needed, adding more maple syrup to balance the heat, cumin, or paprika for smokiness, salt to taste, or harissa paste for spice.
  • Serve as is or over rice or grain of choice (or pasta or roasted vegetables) with wedges of fresh lemon and fresh chopped parsley or cilantro. Additional harissa paste can be added as garnish for additional heat.
  • Store completely cooled leftovers in the refrigerator up to 5 days or in the freezer up to 1 month. Reheat on the stovetop, adding more water or vegetable broth as needed to rehydrate.

  • Cut eggplant into 1/2-in.-thick slices. Sprinkle with salt. Place in a deep dish; cover and let stand for 30 minutes. , Rinse with cold water; drain and dry on paper towels. In a 2-qt. saucepan, heat oil over medium heat Add the tomatoes, garlic, basil and sugar; bring to a boil. 1 medium globe eggplant (about 1-1/4 lb.)
Salt
Olive oil for frying
1-1/2 lb. sweet, ripe tomatoes, peeled and chopped (to yield 3 cups)
1 heaping tsp. minced garlic
2-1/2 tsp. red-wine vinegar; more as needed

Steps:

  • Fry the eggplant: Partially peel the eggplant lengthwise, leaving 1/2-inch stripes of skin. Remove the stem. For large eggplant, quarter it lengthwise first. Slice the eggplant just thicker than 1/4 inch. Sprinkle generously with salt and let stand in a colander for about 1 hour. Rinse the eggplant thoroughly and firmly squeeze each slice dry, patting with paper towels. In a large skillet over high heat, warm about 1/2 cup olive oil until very hot. Fry the eggplant slices a single layer at a time until rich brown on both sides, 1 to 2 minutes. per side; use more oil if needed. Drain on paper towels.
  • Make the sauce: Discard the oil from the pan and wipe it clean. Warm 1 Tbs. olive oil over medium heat. Add the tomatoes and sprinkle with a little salt; simmer, mashing the tomatoes with a fork, until they form a sauce and are no longer liquidy, about 15 minutes. Stir in the garlic and vinegar; remove from the heat.
  • Fan the eggplant slices on a platter and coat with the tomato sauce. Let cool and then refrigerate for at least a day. Serve cold or at room temperature.

Eggplant boats topped with chunky fresh tomato sauce that's loaded with onions and garlic. This traditional Greek dish is very easy to make using fresh ingredients.

2 large eggplants
1 cup olive oil ((for the eggplants))
+ a splash of olive oil ((for the sauce))
1 large red onion (cut into slices)
8 garlic cloves (cut into chunky bits)
3 medium-sized ripe tomatoes (cut into 2cm / 1-inch pieces)
1 teaspoon tomato paste
a handful fresh parsley (chopped)
1/3 teaspoon ground nutmeg
kosher salt + freshly ground pepper

Steps:

  • Remove the tops and bottoms of the eggplants. Cut them in half lengthwise to create eggplant boats.
  • Place the eggplants in a big bowl with cold water and soak them for 30 minutes. You may place a plate on top to weigh them down. The soaking helps remove the bitter flavor from eggplants skin.
  • Preheat oven to 230°C / 446°F.
  • Drain the eggplants and place in a casserole dish. Score them with a knife creating deep criss-cross lines to help the eggplants bake well in the center. Take the 1 cup of olive oil and using a spoon, add spoonfuls of the oil on each eggplant.
  • Season the eggplants with kosher salt and freshly ground pepper.
  • Bake for 30 minutes until nicely roasted on top. Meanwhile, start preparing the tomato sauce.
  • Heat the splash of olive oil in a skillet over medium heat. Add the garlic and the onion slices and cook until completely softened.
  • Stir in the tomatoes and season with some kosher salt, ground pepper, and ground nutmeg. Cook for about 10-15 minutes stirring occasionally, until tomatoes start to drain and become mushy. Add the tomato paste and cook for 2 minutes more stirring occasionally.
  • Using a fork press the eggplants a bit to make some space for the sauce to sit on. Add spoonfuls of the sauce on the eggplant boats. Reduce heat to 160°C / 320°F and slow-cook the eggplants for about 35 minutes. Then raise the temperature again to 200°C / 392°F and roast the eggplants for about 10-15 minutes more.
  • Serve with chopped fresh parsley on top.

8 ounces bow tie pasta (farfalle), cooked al dente

Steps:

  • Place eggplant in a colander and season generously with salt. Fill a 1-gallon plastic bag with water, seal tightly and place over eggplant to weigh down. Let stand for 40 minutes.
  • Rinse the salt off the eggplant, and pat dry. Place the olive oil in a large skillet over medium-high heat, add eggplant and cook, stirring often, until golden brown on all sides, about 20 minutes.

Mesa'ah is Egyptian fried eggplant with a homemade tomato garlic sauce. This recipe is vegan, delicious, and quick to make.

1 large eggplant (about 1 lb or 0.5 kg in size)
3 medium tomatoes
2 spicy pepper (if preferred)
4 garlic cloves
About 6 tbsp oil for frying the eggplant
2 tbsp of white vinegar
Salt and pepper to taste

Steps:

  • Wash the eggplant and slice into 1/4" thick disks.
  • In a large nonstick frying pan, add enough oil to coat the pan. Set the heat to medium-high heat.
  • Once the oil is hot, add enough eggplant to just cover the pan. Don't stack the eggplant on top of each other.
  • Using a fork, flip the eggplant once it's a golden brown. Cook on the other side.
  • Add a paper towel to a plate, and place the fried eggplant onto the towel to soak the extra oil.
  • Once the eggplant is all fried, set aside.
  • Chop the garlic into very fine pieces.
  • In a blender, blend the tomatoes. Strain the tomatoes using a fine mesh strainer.
  • Add 1 tbsp of oil to a nonstick frying pan on medium-high heat. Add the chopped garlic and cook until medium brown.
  • Add the vinegar, blended and strained tomatoes, and whole spicy pepper. Cook on medium-high heat for about 15 minutes to allow all of the flavors to infuse together.
  • Add the salt and pepper to taste at the very end.
  • Add the fried eggplant into the garlic tomato sauce mixture. Cook for another 2 to 3 minutes altogether.
  • Serve with fresh pita bread.

1 large clove garlic
1 4-ounce onion or 3 ounces chopped onion (1 cup)
1 28-ounce can chopped or crushed tomatoes, no salt added
1 1/2 tablespoons tomato paste, no salt added
1 teaspoon capers
Fresh basil
8 ounces no-egg fettuccine
Freshly ground black pepper

Steps:

  • Bring water to boil in covered pot for fettuccine; turn on broiler; cover broiler pan with aluminum foil.
  • Wash eggplant and trim off ends. Slice eggplant into rounds 1/4-inch thick; arrange on a foil-covered pan and spray lightly with olive oil. Broil 2 to 3 inches from heat source for about 10 minutes. Don't let the slices burn.
  • Mince garlic; chop the whole onion.
  • Heat a nonstick pan and spray lightly with olive oil. Saute garlic and onion until onion begins to soften.
  • Add tomatoes, tomato paste and capers. Cook over high heat for 10 minutes or so.
  • Turn eggplant and spray the other side; continue to broil another 6 or 7 minutes.
  • Cook pasta according to package directions.
  • Wash, dry and chop basil to make 1 tablespoon. Stir into the tomatoes; season with freshly ground black pepper.
  • Remove eggplant from broiler and roughly cut it into large chunks; do not peel. Stir into the sauce. To serve, drain pasta and top with sauce.

An incredible Greek side dish of fried eggplant which is then baked in a rich tomato sauce

5 small to medium eggplants
1 tsp salt
vegetable oil for frying
1 cup Mia Kouppa's chunky tomato sauce or marinara sauce (see Note)
3 garlic cloves (thinly sliced)
1 tbsp olive oil
1/2 tsp salt
1 tsp dried rosemary leaves

Steps:

  • Wash the eggplants, remove the stems and cut them length-wise into wedges. Place your eggplants in a bowl and cover them with cold water. Place another bowl or a dish over your eggplant in order to keep them submerged in the water. Allow to soak for about 5 minutes.
  • Drain the eggplant and then sprinkle them with 1 tsp of salt.
  • Heat about 1/4 inch of vegetable oil in your frying pan over medium heat. Once the oil is hot, start adding the pieces of eggplant. In order not to overcrowd your pan you may need to add them in batches. Fry each side of the eggplants until they are golden brown on all sides. This will take a total of about 7-8 minutes per batch. You might have to add a little bit of fresh vegetable oil in between batches.
  • Place the fried eggplants onto a plate. Continue cooking the rest until all of your eggplant has been fried.
  • Preheat your oven to 350 degrees Fahrenheit.
  • Take a small sauce pot, and heat 1 tablespoon of olive oil over medium heat. Add the garlic slices and fry them for about 1 minute. Add your chunky tomato sauce or your marinara sauce and 1/2 teaspoon salt. Heat through, stirring regularly, for just a few minutes.
  • While your sauce is being warmed up, place your eggplants in a roasting dish (we use a 9 X 13 inch roasting dish) and sprinkle your dried rosemary leaves on top of them.
  • Spoon your marinara sauce over the eggplant pieces. You will not be covering them entirely,
  • Place in the middle rack of your oven, and bake uncovered for 5 - 7 minutes.
  • Enjoy.

While the eggplant are set aside, saute the onions, garlic, and olive oil in a large skillet over a low heat, covering the pan with a lid to keep them moist. Saute the onions until they are soft and turning gold in color.
  • Mix the basil, oregano, tomato puree, water, salt and pepper into the pan of onions and simmer for ten minutes.
  • While the mixture is simmering, rinse off the eggplant slices and steam them either in a microwave steamer basket (in two batches at 10 minutes each) or in a steamer over the stove.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with non-aerosol cooking spray.
  • Spread 2 to 3 tablespoons of the tomato sauce-mixture over the bottom of the prepared baking dish. Arrange one layer of the eggplants on the bottom of the dish. Pour one third of the tomato sauce over the eggplant. Pour one container of yogurt over the tomato sauce. Repeat the eggplant layer, tomato sauce, yogurt, eggplants, and top the dish with the remaining tomato sauce.
  • Cover dish with foil and bake for 30 minutes. Uncover and sprinkle the wheat germ or breadcrumbs over the top of the casserole, followed by the Parmesan cheese. Bake for another 20 to 30 minutes; until topping is golden brown.

Steps:

  • Preheat oven to 350F. Prepare 2 baking sheets with parchment paper. Peel and cut potatoes into 1/4 inch thick slices. Place on baking sheet, brush both sides with olive oil and salt lightly. Bake for 25 minutes, flipping slices halfway. Set aside.
  • Meanwhile, prepare the eggplant. Slice into 1/4 inch thick rounds. Place on baking sheets covered in paper towels and lightly salt both sides. Let sit for 30 minutes. Rinse and pat dry the eggplant with a paper towel.
  • Place the eggplant slices on 2 baking sheets covered in parchment paper. Brush both sides with olive oil and salt lightly. Bake for 25 minutes and flip halfway through.
  • While the eggplant bakes, dice the tomatoes. Place in a large skillet and bring to a boil, then lower to a simmer and cook for 10 minutes. Add the crushed garlic clove and salt to taste.
  • Add the baked potato and eggplant slices to the tomato sauce. Stir gently to coat the vegetables in the tomato sauce and cook for an additional 10 minutes. Add freshly chopped basil and drizzle with olive oil at the end of cooking. Adjust seasoning if necessary.

Afterwards, the tender slices are stuffed and rolled with a mixture of three different cheeses, currants, pine nuts, and breadcrumbs, and baked in a fresh tomato sauce. The result is a vegetarian one-pan dinner and a culinary melting pot, reflecting influences from numerous invasions of Sicily over the centuries.

1/4 cup dried currants
Boiling water, for soaking
6 ounces fresh mozzarella
1/2 cup full-fat ricotta
2 ounces feta, crumbled
1/4 cup pine nuts, toasted and roughly chopped
Pinch of ground cinnamon
1 tablespoon fresh oregano or marjoram, finely chopped
1/2 cup packed fresh parsley leaves, finely chopped
1/2 cup fresh breadcrumbs
1 large egg, whisked
1/4 cup extra-virgin olive oil, plus more for drizzling
Vegetable oil, for brushing
Fresh basil leaves and crusty bread, for serving (optional)
3 tablespoons extra-virgin olive oil
3 cloves garlic, minced
2 pounds tomatoes, coarsely chopped
Kosher salt (we use Diamond Crystal) and freshly ground pepper

Steps:

  • Fresh Tomato Sauce: Heat oil in a medium straight-sided skillet over medium. Add garlic; cook until fragrant, about 30 seconds. Stir in tomatoes, 2 teaspoons salt, and 1/2 teaspoon pepper. Cook, stirring occasionally and breaking up tomato pieces with a wooden spoon, until tomatoes are soft, about 10 minutes. Remove from heat; let stand 10 minutes. Pass through the medium disk of a food mill. Sauce can be allowed to cool completely, then refrigerated in an airtight container up to 5 days. (Makes about 2 1/2 cups.)
  • Involtini: Trim and cut eggplants length-wise into 1/4-to-1/2-inch-thick slices. Place on a rimmed baking sheet fitted with a wire rack; season both sides with salt. Let stand 30 minutes.
  • Meanwhile, preheat oven to 375°F. Place currants in a small heatproof bowl and cover with boiling water. Let stand 10 minutes, then drain. Finely chop half of mozzarella and place in a bowl with currants, ricotta, feta, pine nuts, cinnamon, oregano, parsley, breadcrumbs, and egg. Season with salt and pepper; stir to combine.
  • Heat a grill or grill pan to medium-high. Pat eggplant slices dry with paper towels and brush both sides of each evenly with olive oil. Brush grates with vegetable oil and grill eggplant slices, turning occasionally, until charred in places and tender, about 3 minutes a side.
  • Transfer to a plate, piling slices on top of one another so that they continue to steam and soften. Let cool 15 minutes. Place 1 to 2 tablespoons filling at one short end of an eggplant slice. Roll up tightly to secure in a cigar shape. Repeat with remaining filling and eggplant slices.
  • Spread tomato sauce evenly in the bottom of a 9-by-12-inch gratin dish or 9-inch square baking dish. Arrange eggplant rolls snugly in an even layer, seam-sides down. Thinly slice remaining mozzarella and arrange over top.
  • Drizzle with olive oil and sprinkle with pepper. Bake until cheese has melted and eggplant is bubbly, about 30 minutes. Let cool slightly, then garnish with basil and serve with bread.

2 to 3 tablespoons olive oil
1 jar (about 24 ounces) spaghetti sauce
2 cups part-skim mozzarella cheese
1/4 cup Parmesan cheese (shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F/200 C/Gas 6.
  • Line two baking sheets with foil. Brush foil with a little of the olive oil.
  • Arrange slices of eggplant over the bottom of one of the baking sheets; brush slices with olive oil and sprinkle lightly with salt and pepper. Arrange bell pepper and mushrooms on the other baking sheet.
  • Bake in the preheated oven for about 8 minutes. Turn the vegetables and bake for 7 to 8 minutes longer. Remove from oven and let cool slightly.
  • Grease a 3-quart baking dish. Arrange a layer of eggplant slices in the bottom of the baking dish. Top with a few slices of bell pepper, some mushrooms, and about 1/3 of the sauce. Sprinkle with 1/3 of the mozzarella cheese. Repeat layers two more times, then sprinkle with the Parmesan cheese.
  • Bake the casserole for 25 to 30 minutes, until vegetables are tender and cheese is melted.
  • Serve and enjoy!

  • In a large heavy saucepan cook the onion and the garlic in 2 tablespoons of the oil over the moderately low heat, stirring occasionally, until the onion is softened, add the tomatoes with the juice, and simmer the sauce, uncovered, breaking up the tomatoes and stirring occasionally, for 15 minutes, or until it is thickened.
  • While the sauce is simmering, cut the eggplant into 1/2-inch dice, divide it between 2-jelly-roll pans, and drizzle it with the remaining 4 tablespoons oil. Bake the eggplant on the upper and lower racks of a preheated 400°.F. oven for 10 minutes, stir it and switch the pan positions in the oven. Bake the eggplant for 10 minutes more, or until it is very tender and golden, and stir it into the sauce with salt and pepper to taste.
  • In a kettle of boiling salted water boil the spaghetti until it is al dente and drain it well. Divide the spaghetti among dinner plates and spoon the sauce in the center of each serving.
