PRAWN & AUBERGINE CURRY

1 tsp vegetable oil
1 aubergine , cut into 1cm chunks
1-2 red or green chilli , sliced
thumb-sized piece of ginger , grated
1 tsp turmeric
2 tsp ground cumin
400g can cherry tomatoes or chopped tomatoes
150g raw prawns
2 tbsp dairy-free coconut yogurt
1 lime , juiced
½ small bunch of coriander , chopped
2 rotis or flatbreads, warmed

Steps:

  • Heat the oil in a deep frying pan over a medium-high heat, and fry the aubergine with a pinch of salt for 5 mins until lightly golden. Stir in the chilli, ginger, turmeric and cumin, cook for another minute, then pour in the cherry tomatoes. Simmer for 10 mins until thickened.
  • Stir in the prawns and simmer for 2-4 mins until pink. Remove from the heat, stir in the coconut yogurt, lime juice and coriander, then serve with the warmed rotis.

This recipe was clipped out of a magazine. A non-traditional version of chili that I thought was delicious. You can adjust the amount of spiciness to your taste. I prefer mine mild to moderately spicy. Add cayenne, red pepper flakes, or hot sauce if you prefer.

Number Of Ingredients 13

1 lb ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 large eggplant, peeled and cubed
1 (16 ounce) can stewed tomatoes, undrained
1 (8 ounce) can tomato sauce
1/2 cup water
2 tablespoons chili powder
1 tablespoon all-purpose flour
2 teaspoons sugar (optional)
1 teaspoon salt (or to taste)
pepper
1 (16 ounce) can kidney beans, undrained

Steps:

  • Add ground beef, onion, and garlic to a large pot; cook over medium heat until meat is no longer pink, stirring to crumble up the meat; drain well.
  • Add all the remaining ingredients except the kidney beans.
  • Stir to combine.
  • Cover and lower heat; simmer for 2 hours.
  • Add in kidney beans; stir.
  • Cover and cook 30 minutes; adjust seasoning to taste.

BUTTERY CHILLI PRAWNS

25g butter
2 tbsp olive oil
3 garlic cloves, finely chopped
1 red chilli, seeds left in and finely chopped
½ tsp sweet paprika
12-20 large raw king prawns with shells
juice 1 lemon, plus a few slices for a finger bowl
½ small bunch parsley, roughly chopped
small loaf crusty bread, warmed to serve

Steps:

  • Melt the butter and oil together in a frying pan. Add the garlic, chilli and paprika, then fry for 1-2 mins until starting to turn golden. Turn up the heat, throw in the prawns and fry for a few mins, stirring, until all the prawns turn pink. Take off the heat, season and stir in the lemon juice and parsley.
  • Add some lemon slices to a finger bowl of warm water, grab a bowl for the shells, then dig straight in with your fingers and hunks of crusty bread.

2 tablespoons soy sauce
1 tablespoon light-flavoured vinegar (try rice vinegar or white vinegar)
1 garlic clove, crushed
1 teaspoon caster sugar
1 eggplant (about 500g)

Steps:

  • Combine soy sauce, vinegar, garlic and sugar in a bowl. Set aside.
  • Slice eggplant into thin slices and place on a heatproof plate. Place plate in a steamer, cover with lid and steam for 15 minutes.
  • Pour over sauce and steam for another 5 minutes.
  • Serve sprinkled with 1 finely sliced small red chilli and 1 small handful chopped coriander.

A speedy, Asian-influenced stir-fry of jumbo juicy seafood, crunchy beansprouts and a sweet and spicy sauce

250g medium egg noodle
1 tbsp sesame oil , plus extra to serve (optional)
1 tbsp groundnut oil
bunch spring onions , thinly sliced lengthways
300g bag beansprout
4 garlic cloves , finely chopped
1 red chilli , finely chopped
400g raw peeled tiger prawn
1 tbsp soft brown sugar
1 tbsp dark soy sauce

Steps:

  • Cook the noodles following pack instructions, then rinse with cold water and drain. Toss with 1 tsp of the sesame oil.
  • Heat 2 tsp of the groundnut oil in a non-stick wok. Stir-fry most of the spring onions and all the beansprouts for a couple of mins until tender. Add the noodles and warm through. Stir through the remaining sesame oil and tip out of the wok onto a serving dish.
  • Carefully wipe out the wok and add the remaining groundnut oil. Toss in the garlic and chilli, and cook for 10 secs. Pop in the prawns and stir-fry for a couple of mins until they have just turned pink. Stir in the sugar and soy, then bubble until the sugar has melted and prawns are cooked through. Spoon on top of the noodles and sprinkle with the remaining spring onions. Add an extra drizzle of sesame oil, if you like.

  • Heat oil in a deep-sided frying pan or wok over medium-high heat until hot. Shallow-fry eggplant in batches, turning occasionally, until eggplant is tender and golden and prawn stuffing is cooked through (5-6 minutes). Drain on absorbent paper and serve hot with oyster dipping sauce.

  • Preheat a barbecue to medium. Grill eggplant, turning occasionally, until blackened and slightly yielding (20-30 minutes; skin should peel back without taking too much flesh and reveal a centre that's a soft but intact, and smoky but not burnt). Cool, peel and slice horizontally into 5cm-thick pieces.
  • Meanwhile, cook eggs in a saucepan of boiling water until medium-soft (6½ minutes). Remove, cool completely in cold water, peel and halve.
  • For dressing, whisk lime juice, fish sauce and palm sugar in a bowl until sugar dissolves. Season to taste and add chilli.
  • Poach prawns in a saucepan of simmering water over medium heat until just translucent (1 minute). Remove with a slotted spoon, drain, and place in a large bowl. Add chicken to water and poach until cooked (3 minutes). Drain, separate with a fork and add to prawns. Add onion, coriander and shallot, and toss to combine.
