3 tablespoons all-purpose flour
2 cups hot milk
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Pinch nutmeg
12 ounces Gruyere, grated (5 cups)
1/2 cup freshly grated Parmesan
16 slices white sandwich bread, crusts removed
Dijon mustard
8 ounces baked Virginia ham, sliced but not paper thin

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter over low heat in a small saucepan and add the flour all at once, stirring with a wooden spoon for 2 minutes. Slowly pour the hot milk into the butter?flour mixture and cook, whisking constantly, until the sauce is thickened. Off the heat add the salt, pepper, nutmeg, 1/2 cup grated Gruyere, and the Parmesan and set aside.
  • To toast the bread, place the slices on 2 baking sheets and bake for 5 minutes. Turn each slice and bake for another 2 minutes, until toasted.
  • Lightly brush half the toasted breads with mustard, add a slice of ham to each, and sprinkle with half the remaining Gruyere. Top with another piece of toasted bread. Slather the tops with the cheese sauce, sprinkle with the remaining Gruyere, and bake the sandwiches for 5 minutes. Turn on the broiler and broil for 3 to 5 minutes, or until the topping is bubbly and lightly browned. Serve hot.

1 shallot, minced
1 teaspoon olive oil
1 pound ground sirloin
1 pound ground chuck
1 tablespoon salt
1 teaspoon freshly ground black pepper
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 tablespoons finely chopped fresh sage leaves
5 eggs
1/4 cup whole milk
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 Portuguese muffins, halved
4 tablespoons butter
6 slices Gruyere cheese
6 slices prosciutto
3 tablespoons Dijon mustard
3 tablespoons mayonnaise

Steps:

  • Saute shallot in olive oil over medium-low heat until softened. Set aside to cool.
  • To make patties combine ground sirloin, ground chuck, salt, pepper, Worcestershire sauce, mustard, sage, and sauteed shallot in a large bowl. Mix well until all ingredients are thoroughly combined. Divide mixture into 6 equal portions and form patties (6 ounces each). Grill patties (in grill pan) over medium-high heat for 4 minutes on each side for medium rare.
  • While patties are cooking, prepare buns. Whisk eggs in a bowl with milk, salt, and pepper. Dip Portuguese muffin halves in mixture 1 at a time (place each on a plate after dipping). Heat 1 tablespoon butter in saute pan over medium heat. Place 3 muffin halves into pan and fry, flipping once until both sides are golden brown. Place cooked muffins onto plate and cover with foil. Repeat process using 1 tablespoon butter for every batch of 3 muffin halves until all have been cooked.
  • When patties have been cooked, remove the patties from the grill pan and rest on a half-sheet pan. Top with cheese slices and tent with aluminum foil. Repeat process with the remaining patties.
  • To assemble the burgers, place 1 patty (with cheese) on bottom half of the Portuguese muffin. Top with prosciutto, spread with 1 tablespoon of sauce, and add top of muffin. Serve.

  • Season sliced eggplant with smoked paprika, celery salt, and pepper. Then, roast it for 15 minutes at 200°C (400°F).
  • For the vegan bechamel, heat the milk with garlic, onion, nutmeg, bay leaf, salt and pepper. Then, let it infuse for 10 minutes.
  • Whisk oil and starch in a pot and pour in the milk. Bring the sauce to a boil while stirring and simmer until thick.
  • For each person, toast two bread slices and top each of them with a layer of mustard, bechamel, cheese, and aubergines. Then, top one slice with extra bechamel and cheese.
  • Place the cheese-topped slice over the other and bake the croque monsieur for 15 minutes at 200°C (400°F).

¼ cup water
1 tablespoon vegetable oil

Steps:

  • Use 2 tablespoons of the butter to spread over one side of each slice of bread. On three of the slices, spread a layer of Dijon mustard over the butter, and top each with 4 slices of ham. My latest crush is this new incarnation of gourgeres, or cheese puffs. These were inspired by the classic French ham-and-cheese sandwich, Croque Monsieur. If you're serving only one thing with cocktails before dinner, it would have to be these heavenly puffs. They're perfect for "popping" in between sips of a Pear Thyme Fizz or Peach 75. ** Make sure you use an exciting gruyere cheese or possibly with cheddar jack for a little kick.

1/2 cup water
1/2 cup whole milk
6 tablespoons salted butter
1/2 teaspoon salt
1/2 cup minced ham
1 cup all-purpose flour
4 eggs, large
3/4 cup about 2 3/4 ounces gruyere cheese, grated
1 tablespoon chives, freshly chopped

Steps:

  • Adjust rack to the middle of an oven and preheat to 400 degrees.
  • Combine water, milk, butter, salt, and ham in a heavy, medium saucepan. Bring to a boil over medium-high heat.
  • All at once, add the flour and stir in quickly with a wooden spoon. Keep stirring-the mixture will come away form the sides of the pan and become thick and stiff. Keep stiring and turning over for about 1 minute (you want it to dry out a bit).
  • Transfer the dough to an electric mixer, and turn mixer on medium-high speed. Add 1 egg and as soon as it is partially incorporated, increase mixer speed to high. Add the remaining eggs, one at a time when the previous egg is well incorporated. The mixture should be smooth. Mix in the cheese and chives.
  • IF you have a strong arm, the dough can also be mixed by hand with a wooden spoon in a mixing bowl. Proceed as directed, and be sure to beat the dough until smooth before mxing in the cheese and chives. Let the mixture cool for about 10 minutes.
  • Meanwhile, line baking sheets with parchment paper or spray them with cooking spray. (Watch the puff bottomes closely to prevent over-browning if not using parchment.) By heaping teaspoonfuls, drop the mixture onto baking sheets in little balls, spaced apart. They shoud be the size of large marbles or jaw-breakers. (You can also pipe them out using a pastry bag.).
  • Bake for about 20 to 25 minutes, or until golden. Serve warm. You can bake these a few hours in advance and reheat in the oven as well!

3/4 teaspoon Dijon-style mustard
3/4 teaspoon kirsch
8 slices of homemade-type white bread
4 thin slices of cooked ham
1/2 stick (1/4 cup) unsalted butter, softened

Steps:

  • In a bowl stir together 1 cup Gruyère, the sour cream, the mustard, and the kirsch and spread 1 tablespoon of the mixture evenly over each bread slice. Arrange the ham on 4 of the bread slices and top it with the remaining bread slices, spread side down. Remove the crusts with a sharp knife and spread the tops of the sandwiches lightly with 2 tablespoons of the butter. Invert the sandwiches into a large skillet, spread the tops with the remaining 2 tablespoons butter, and grill the sandwiches over moderately high heat, turning them once, for 6 to 8 minutes, or until they are golden brown on both sides.
