Serve with cooked rice or even better, warmed naan or other flatbread for scooping. This Indian vegetarian eggplant recipe doubles easily if you're serving a crowd or just love leftovers.

2 medium eggplant (about 1 pound, 2 ounces each)
2 small onions
2-inch piece of fresh ginger, peeled
4 cloves garlic
2 tablespoon safflower oil
4 tablespoons unsalted butter
1 teaspoon cumin seeds
1/4 teaspoon turmeric
3 small Thai chiles, seeded if desired, and minced (1 teaspoon) or 1/2 serrano chile, minced with seeds
2 medium tomato, coarsely chopped (2 cups)
Coarsely chopped cilantro and yogurt, for serving

Steps:

  • Roast eggplant directly on a gas burner or under a broiler, turning occasionally, until charred all over and very soft, about 12 minutes. Let cool 10 minutes. Scoop out flesh and discard skin. You should have about 2 1/2 cups eggplant.
  • Grind onion, ginger and garlic together in a food processor to form a paste. Heat oil in a large skillet over medium-high heat; add butter and melt. Add cumin; when it sizzles, stir in onion paste, and chiles. Cook, stirring frequently, until translucent, about 3 minutes. If onion is sticking to pan, stir in 3 tablespoons water and scrape up browned bits, then stir in tomatoes.
  • Cook, stirring frequently, until tomatoes are broken down, about 5 to 7 minutes. Add turmeric and stir to combine, then add eggplant, stirring until heated through.

This is a traditional North Indian (Punjabi) Bhurtha made with eggplant and tomato, and seasoned with cumin, turmeric garlic and ginger. Serve with fresh roti or naan.

1 eggplant
2 tablespoons vegetable oil
½ teaspoon cumin seeds
1 medium onion, sliced
1 teaspoon chopped fresh ginger
1 large tomato - peeled, seeded and diced
1 clove garlic, minced
½ teaspoon ground turmeric
½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon cayenne pepper
½ teaspoon salt, or to taste
ground black pepper to taste
¼ cup chopped fresh cilantro

Steps:

  • Preheat the oven's broiler. Rub oil on the outside of the egg plant, or coat with cooking spray. Place under the broiler, and cook until the flesh is soft and the skin is blistering off, about 30 minutes. Turn as needed for even cooking. Cut the eggplant in half lengthwise, and scoop the flesh out of the skin. Discard the skin; chop up the flesh, and set aside.
  • Heat the oil in a large skillet or wok over medium-high heat. Add the cumin seeds, and let them crackle for a few seconds and turn golden brown. Be careful not to burn them. Add the onion, ginger and garlic; cook and stir until tender. I don't let the onions get very brown. Stir in the tomato, and season with turmeric, ground cumin, ground coriander, cayenne pepper, salt and black pepper. Cook and stir for a few minutes.
  • Place the eggplant pieces in the skillet, and cook for 10 to 15 minutes so some of the moisture evaporates. Taste, and adjust seasonings if desired. Garnish with fresh cilantro, and serve.

Punjabi baingan bharta is easy to make and has a delicious smoky flavor from the roasted eggplant. Serve it with freshly made with hot chapatis.

3 medium-sized eggplants (roughly 1 pound/500 grams)
2 tablespoons vegetable oil
1 teaspoon cumin seeds
2 medium onions (finely chopped)
1 tablespoon garlic paste (or finely chopped garlic)
1-inch piece ginger (finely grated)
2 large tomatoes (finely chopped)
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala
2 tablespoons fresh green coriander (finely chopped)
Optional: 2 green chilies

Steps:

  • Gather the ingredients.
  • Punjabi baingan ka bharta requires roasted eggplant. Roast eggplant on a gas cooktop by placing the eggplants straight over the burner(s) and keeping the flame on low setting. Keep turning and cooking until all the skin on the eggplant is charred and the inner flesh looks really soft, about 20 minutes; the eggplant will seem to 'cave in' on itself. Or, you can grill the eggplant in your oven broiler or on your barbecue grill. Again, keep turning periodically until all the skin on the eggplant is charred and the inner flesh looks really soft, 20 to 25 minutes.
  • Once the eggplant is roasted, allow to cool fully and then peel off and discard the charred skin.
  • Once cool, coarsely mash it and keep aside for later use.
  • Place pan over medium heat and add the cooking oil. When hot, add the cumin seeds and cook till the spluttering stops.
  • Add the onions and fry until soft and translucent.
  • Add the garlic and the ginger and then fry for 1 minute.
  • Add the tomatoes, optional green chiles, coriander, ground cumin, and garam masala. Stir well and cook for 3 to 5 minutes, stirring often to prevent the spice mix from sticking to the pan. Sprinkle a little water if needed.
  • Add the eggplant and salt and mix well. Taste and add more salt if needed. Add the chopped fresh coriander (cilantro) and stir. Cook another minute and turn off the heat. Serve hot with chapatis or rice and your favorite daal dish.

1 tablespoon oil
1 medium onion, cut into long slices
2 garlic cloves, chopped
1 teaspoon ginger powder
1/2 teaspoon cayenne powder
1 teaspoon cumin powder
1/2 teaspoon cinnamon
1/4 teaspoon black pepper (optional)
1/2 teaspoon turmeric powder
2 medium tomatoes, cut into half inch pieces
1 medium eggplant, cut into 1 inch pieces
1/2 teaspoon salt
4 tablespoons chopped coriander leaves or 4 tablespoons cilantro

Steps:

  • Heat oil in a saucepan on medium flame.
  • Add onion and saute until it turns transparent (takes about 2 minutes).
  • Fold in garlic and saute for 2 minutes or until the raw smell is gone.
  • Stir in all the spice powders (masalas).
  • Saute for 2 minutes.
  • Now add half a cup of water and the tomatoes and cook for 5 minutes.
  • Fold in eggplant and salt.
  • Cook for 10 minutes or until the eggplant is well cooked. It should be dry (no gravy/curry is present).
  • Garnish with chopped cilantro.
  • Serve hot with rotis and raita.
  • Enjoy!

BAINGAN BHARTA (ROASTED EGGPLANT SALAD)

2 large eggplants
2 tablespoons peanut oil, plus more for eggplant
1 medium white onion, finely diced
4 cloves garlic, minced
1 small serrano pepper, seeded (if you wish less heat) and minced
1/4 cup fresh cilantro leaves and soft stems, minced, plus more picked leaves for garnish
1/4 teaspoon ground turmeric
1/4 teaspoon ground cumin, plus more for sprinkling
Kosher salt and freshly ground black pepper
2 cups Greek yogurt, beaten until smooth

Steps:

  • Preheat the oven to 500 degrees F.
  • Line a baking sheet with foil. Make 3 slashes in each eggplant, from top to tail, equally distanced around the eggplant. Rub the eggplants with a little peanut oil. Sit them on the baking sheet and roast until soft all the way to the center and the skin is brown, about 45 minutes, rotating the pan and flipping the eggplants halfway through. Remove from the oven and cool.
  • Once cool, skin the eggplant. Chop the flesh until it's relatively smooth but not mushy.
  • In a large skillet, warm the peanut oil over medium-high heat. Once the oil is shimmering, add the onion and saute until it turns golden brown. Add the eggplant flesh, garlic, chile and cilantro leaves. Cook 2 minutes. Add a splash of water if it begins to stick.
  • Add the turmeric, cumin, and 2 teaspoons of salt. Stir and cook another 5 minutes.
  • Turn off the heat. Add the yogurt and stir to combine. Taste for seasoning, and garnish with cilantro leaves and a sprinkle of ground cumin. Serve either warm or slightly chilled.

The Best Baingan Bharta image

This smoky roasted eggplant dish from India is one of my favorites. It's served as a main course, as part of a selection of dishes in a thali. Different versions are made in various parts of the country but this Punjabi recipe is the most popular. The best flavor and smokiness comes from roasting the eggplant on a direct flame or grill. I never add dried spices to my baingan bharta in order to really taste the smoky eggplant with sweetness from the onions, tang from the tomatoes, a little heat from the green chiles and a burst of freshness from the cilantro. It's precisely this combination of flavors that makes this dish so amazing!

1 medium globe eggplant (about 1 pound)
3 tablespoons vegetable or olive oil
1 medium red onion, chopped (1 packed cup)
1 to 2 Indian or Thai green chiles, 1/2 to 1 serrano chile or 1/2 jalapeño, chopped (seeded for less heat, if desired)
3 to 4 tomatoes, chopped (1 packed cup)
Kosher salt
1 small bunch fresh cilantro, chopped (about 1/2 cup)

Steps:

  • Put the whole eggplant directly over a moderate flame on a gas stove or grill. Cook, turning it every couple of minutes with metal tongs, until charred all over and the flesh is completely soft, about 10 minutes.
  • Wait until the eggplant is cool enough to handle then peel off the skin and discard--don't worry if little bits of skin remain. Remove and discard the stem, coarsely chop the flesh and set aside.
  • Heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring and scraping the bottom of the skillet occasionally, until softened with just a hint of color, about 10 minutes. Add the chiles and cook, stirring occasionally, until the raw smell goes away, about 2 minutes. Add the tomatoes and 1/2 teaspoon salt and cook, stirring occasionally, until softened, about 8 minutes. Add the eggplant and cilantro and cook, stirring occasionally, until well mixed and the flavors have melded, about 3 minutes. Adjust salt to taste and serve hot.

1 teaspoon vegetable oil
1 medium onion, chopped
2 roma (plum) tomatoes, chopped
¼ teaspoon ground cayenne pepper

1 large finely chopped onion
5 garlic cloves, peeled and crushed
2 green chilies, chopped
1 teaspoon salt
1/2 cup chopped fresh cilantro
1 tablespoon vegetable oil (for frying)

Steps:

  • Cut eggplants in half.
  • Rub some oil over the cut side of the eggplant.
  • Roast or broil, until the skin is lightly burned, and the eggplant is completely soft (12-15 minutes).
  • Peel eggplant.
  • Put pulp into a bowl, and mash with a potato masher.
  • Add onion, garlic, chilies, salt, cilantro, and 1/2 tsp oil, and mix very well.
  • Heat remaining oil in a frying pan.
  • Add eggplant mixture, and fry for 3-5 minutes , until fairly dry.
  • Serve alone, or with basmati rice.

1/3 cup vegetable oil
2 large onions, coaresly chopped

  • Preheat oven to 350°.
  • Oil rimmed baking sheet; place eggplant halves, cut side down, on sheet.

  • Discard skins.
  • Heat oil in heavy large skillet over medium-high heat.

1/2 kg eggplant
2 large onions
2 large tomatoes
1 green chili
2 tablespoons oil
4 garlic cloves, crushed

1/2 teaspoon garam masala powder

Steps:

  • Prick eggplants and roast them over open flame or in a tandoor/preheated oven until the skin scorches and starts peeling off.
  • The sure shot way to check if the eggplants are done is to pierce them with the back of a spoon, if it enters the brinjal like soft butter then they are done.
  • When at room temperature remove the skin and mash the pulp.
  • Chop the onions, tomatoes and green chilli.
  • Heat oil(preferably mustard oil) in a kadahi(wok) and add chopped onions. Sauté until they are pink. Do not brown them.Then add chopped ginger, garlic, chopped green chilli and stir.
  • After about 1/2 a minute add the tomatoes and the salt(adding salt with the tomatoes softens the tomatoes faster and thus makes cooking easier)When the tomatoes are done(oil seperates from them)add all the powders except for the garam masala powder and cook for another 1/2 a minute.
  • Now add the mashed brinjals. After this point not much cooking is required. Cook for about 1/2 to 1 minute and finally add the garam masala and chopped corriander leaves.
  • Serve immediately with roti, paraatha, naan, pitta bread, or even on a toast! We love it on a crunchy toast - irresistable, I tell you!
