This is the final recipe I am entering from the "1 of a Kind" cookbook of the Junior League of Mobile, AL. It is yet another eggplant recipe, but 1 I found especially appealing for its use of prepared stuffing mix & simple ingredients w/a quick & easy prep. I have not tried this, but hope some of you will give it a try & enjoy the outcome.

2 large eggplants
1 1/3 cups Pepperidge Farm Herb Stuffing (divided)
1 medium onion (chopped)
1/2 green bell pepper (chopped)
1 (14 1/2 ounce) can diced tomatoes (drained, or use 3-4 fresh tomatoes, seeded & chopped)
8 ounces mozzarella cheese (approx 2 1/2 cups, shredded or grated)
1/2 cup parmesan cheese

Steps:

  • Preheat oven to 350°F.
  • Peel, cube & parboil eggplant for 5 min in boiling water. Drain well & set aside.
  • Butter a 2 qt baking dish. Begin by sprinkling 2/3 cup of stuffing mix on the bottom & then place 1/2 of the eggplant on top of the stuffing.
  • Distribute entire amt of onion, bell pepper & tomato evenly over the eggplant & then 1/2 of the mozzarella cheese over that.
  • Then layer on the remainder of the stuffing mix, eggplant & mozzarella cheese (in that order) & top evenly w/Parmesan cheese.
  • Bake for 30 min or till hot & bubbly. Serve immediately.
  • NOTE #1: This is 1 of several recipes I have seen lately to suggest parboiling eggplant. I have always sauteed eggplant in olive oil till just slightly tender for such uses & assume that can be done here as well if your pref.
  • NOTE #2: While not a part of the recipe, the use of garlic here would be a must for me. If you agree, then lightly sprinkle garlic powder (or salt if your choice) over the onion, bell pepper & tomato layer b4 completing assembly of the casserole.

PIQUANT CRAB AND EGGPLANT (AUBERGINE) DRESSING

This is a cajun recipe that I originally found somewhere on the 'net but have made some modifications. I serve this as a side-dish, but it could probably be used as a main dish as well. Recipe is very spicy, feel free to adjust to your own preference.

4 -8 ounces butter (as much as needed for sauteing vegetables)
3 large onions, chopped fine
2 celery ribs, chopped fine
2 medium bell peppers, chopped fine
4 medium eggplants
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons white pepper
1 1/2 teaspoons black pepper
1 1/2 teaspoons salt
4 -6 dashes Tabasco sauce (or to taste)
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
16 ounces canned crabmeat
1 cup chopped green onion
1 cup chopped parsley
grated parmesan cheese, as needed for topping
breadcrumbs, as needed for topping

Steps:

  • Melt the butter in a Dutch oven or other large heavy pot.
  • Add onions, peppers and celery.
  • Cook until the vegetables are very soft, stirring occasionally, about 30 minutes.
  • Meanwhile, peel the eggplants and cut into 1-inch cubes.
  • Place them in a pot and cover with water.
  • Bring to boil and boil slowly for a few minutes, just until they are tender.
  • Drain well and puree until smooth in a food processor or blender.
  • Add the eggplant puree, seasonings, herbs and the juice from the canned crab (if any) to the vegetable mixture, return to simmer and cook over medium heat for 10 minutes, stirring occasionally.
  • Add the crab meat (picked over of course to remove any shell) and cook just long enough to heat through.
  • Remove from heat.
  • Stir in the green onions and the parsley.
  • Spoon the hot mixture into a casserole or individual ramekins, if desired.
  • Sprinkle generously with Parmesan cheese and bread crumbs.
  • Place under broiler just long enough for cheese to melt, and serve immediately.

EASY MARINATED EGGPLANT

Grilled eggplant marinated in a spicy garlic and herb marinade is a delicious, gluten-free addition to any antipasto platter or cheese board.

olive oil (for brushing)
¾ cup olive oil
1/3-½ cup fresh lemon juice ((amount depends on the acidity of the lemon juice) )
4 garlic cloves (crushed)
2-3 tsp red chilli (finely chopped)
2 tsp dried oregano
2 tsp salt
1 tsp pepper

Steps:

  • Brush the slices of eggplant with olive oil then grill in a hot grill pan until softened and caramelized on both sides.
  • Place the slices of eggplant into a large jar or sealable container.
  • Mix all the marinade ingredients together, adjust seasoning as necessary and pour over the eggplant.
  • Seal the jar or container and allow to marinade for at least 6 hours but up to 1-2 weeks in the fridge.

3/4 lb ground lean pork or 3/4 lb hot Italian sausage
1 slice bacon, diced
2 cups chopped onions
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1/4 cup chopped red bell pepper
2 garlic cloves
4 medium eggplants, peeled and chopped
1 cup chicken broth
1 teaspoon minced fresh sage or 1/4 teaspoon ground sage
salt, to taste
fresh ground black pepper, to taste
cayenne pepper or cajun seasoning
2 cups cooked long-grain rice
1 cup cooked wild rice (you may omit if you use 3 cups long-grain rice)
2 tablespoons chopped fresh parsley

Steps:

  • In a large heavy pot over medium high heat, brown the beef, pork, and bacon.
  • Add the chopped onions, celery, bell peppers, and garlic and continue to cook, stirring often, until they begin to soften, about 5 minutes.
  • Add the eggplant, broth, and sage, and simmer until eggplant softens, about 15 minutes.
  • Mash the cooked eggplant with a fork and season to taste with salt, black pepper, and cayenne (or Cajun seasoning).
  • Add cooked rice and parsley, stir well to mix.
  • Place in serving dish and enjoy!
  • Notes: other possible additions include- for the holidays, dried cranberries, currants, or golden raisins; shrimp; curry powder could also be tasty.

MINTY SWEET AND SOUR EGGPLANT (AUBERGINE)



Minty Sweet and Sour Eggplant (Aubergine) image

An absolutely delightful canape or side dish with lamb or grilled fish from Madhur Jaffrey. It's easiest done with long, skinny Japanese eggplant, but it works equally as well with standard Italian eggplant, cut into half-circles. You can slice and broil the eggplant in advance and do the final touches just before you're ready to serve.

2 1/2 lbs eggplants
6 -8 tablespoons peanut oil or 6 -8 tablespoons canola oil
1 -2 teaspoon kosher salt
fresh ground pepper
1 teaspoon cumin seed
3 tablespoons lemon juice, fresh
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 tablespoons sugar
1 tablespoon mint, fresh, very finely minced

Steps:

  • Preheat the broiler and position the rack on the top level.
  • Line a baking sheet with foil and brush the foil with oil.
  • If using Japanese eggplants, slice on the diagonal 1/3 inch thick.
  • If using Italian eggplants, slice in half lengthwise, and then cut slices 1/3 inch thick.
  • Lay as many as will fit on the baking sheet and brush with oil and sprinkle with salt and pepper.
  • Broil until lightly browned.
  • Turn and repeat.
  • If you have more slices than will fit on one baking sheet, repeat the process until all slices have been browned.
  • Turn off broiler and pre-heat oven to 350°F.
  • Toast the cumin seeds in a small saute pan until they darken and give off an aroma.
  • Cool the seeds and place in a bowl with the rest of the seasoning ingredients.
  • Lay the eggplant slices in a baking dish in slightly over-lapping rows or concentric circles. Dribble or brush over each row the seasoning mixture until all slices are used.
  • Cover with foil and bake for 20 minutes. (Result is a lovely casserole/gratin of eggplant to serve as a side.
  • In the alternative, place slices on baking sheet, brush with seasoning mixture and bake till mixture is absorbed. (Result is a canape which can be served on its own).
  • Beware--the aroma is so good you will be tempted to pick one up and eat it to the despair of your fingertips and tongue.
  • As a canape or a side, the eggplant can be served hot or at room temperature.

A recipe my family grew up on that our mom made, simply ingredients and cooking. Great as a meal with sliced tomatoes or a side dish. **My mom would also slice bell peppers in half, remove seeds and rub a bit of oil on outside then mound this eggplant dressing inside, place stuffed bell pepper in 9 x 13 dish with a just enough water to cover bottom and bake at 350 for 25-30 minutes to be served as a side dish. ***You can also just cook your eggplant down with the seasonings S,P Garlic Powder, onion and bell pepper. Cool then freeze in smaller packages with a good seal. When ready to use take out defrost add cooked meat and rice and heat thoroughly.

2 eggplants
1 1/2 lbs hamburger meat
1 medium diced onion
1 medium diced bell pepper
1 teaspoon garlic powder
1 teaspoon salt and black pepper
1 cup rice

Steps:

  • 1. Cook ground hamburger meat-use a 92/8 mixture drain any fat, add garlic powder, S & P, and chopped bell pepper, and onion cook on low till onion wilted.
  • 2. Peel eggplant, slice and cut each slice into 1" cubes.
  • 3. Add eggplant to meat mixture, turn up heat, put lid on so eggplant will steam. Each time you check mash down eggplant with back of spoon. Continue until eggplant is tender and mixes in with meat mixture. This takes about 45 minutes.
  • 4. Cook rice according to package directions.
  • 5. Stir in cooked rice to mixture and heat so its hot through and through.
  • * Cooking time for recipe maybe a little bit more.

OVEN FRIED EGGPLANT (AUBERGINE)

This recipe appeared in "Cooking Light" magazine. This is a non-traditional way to prepare eggplant, but it really cuts the calories.

1 tablespoon minced onion
1 lb unpeeled eggplant, sliced-about 12 (1/2 inch slices)
1/3 cup fine dry breadcrumb
1/3 cup grated parmesan cheese (or parmesan alternative, like asiago)
1/2 teaspoon dried Italian seasoning
vegetable oil cooking spray

Steps:

  • Combine first 2 ingredients, stir well.
  • Spread evenly over both sides of eggplant slices.
  • Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl; dredge eggplant in breadcrumbs mixture.
  • Place eggplant on a baking sheet coated with cooking spray.
  • Bake@ 425 degrees for 12 minutes.
  • Turn eggplant over; and bake an additional 12 minutes or until golden.

HALLOUMI AND EGGPLANT (AUBERGINE) STACK

8 slices halloumi cheese
flour
olive oil
3 tablespoons olive oil
1 garlic clove, minced very fine

1 small onion, finely chopped

  • Coat haloumi cheese in flour and fry in a little olive oil in a not-stick frying pan on high heat until lightly brown on both sides; alternatively, grill on BBQ (do not coat with flour if grilling on the bbq).
  • Divide eggplant and haloumi slices into 2 equal portions; place the largest slice of eggplant on a plate, cover with one layer of haloumi cheese and alternate eggplant and haloumi slices, ending with an eggplant layer; repeat this process with the remaining eggplant and haloumi slices.
  • Spoon salad dressing ingredients over the two stacks.

  • Brown ground beef in skillet until done. Drain fat from ground beef.
  • Combine all remaining ingredients except rice, to the ground beef mixture and cook on medium heat for 20 minutes or until well done, stirring at intervals so mixture doesn't stick.

2 medium eggplants
vegetable oil (for frying)
1 medium garlic clove
1 jalapeno pepper
1 teaspoon salt
1/3 cup lemon juice
1/2 cup tahini (approx)
2/3 cup middle eastern yogurt
1/3 cup water

Steps:

  • Peel eggplant.
  • Slice eggplant into circles.
  • Salt eggplant to help eggplant not absorb so much oil.
  • Let frying oil get hot and fry until eggplant gets golden brown.
  • Let eggplant drain.
  • In a mortar and pestle or mini food processor, add salt, garlic and jalepeno pepper and chop until a fine paste.
  • Then add to lemon juice.
  • Then add tahini.
  • Stir very well until smooth which will take several minutes.
  • Then add yogurt and water and stir until all is blended.
  • Arrange eggplant on a plate and drizzle dressing over the eggplant.
  • Enjoy.

A quick and easy side dish or appetizer, and an alternative to fried eggplant strips. Could easily be made into a "parmigiana" verison with a bit of sauce and some good mozzarella cheese.

2 large eggplants
1 cup breadcrumbs
1/2-3/4 cup of good quality parmesan cheese or 1/2-3/4 cup pecorino romano cheese
2 eggs, beaten
1 teaspoon garlic salt
1 teaspoon oregano, rubbed between palms
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup olive oil

Steps:

  • Cut ends off of eggplants, cut in half length-wise and then into five pieces, length-wise.
  • Cut across into 3/4" chunks.
  • Steam eggplant chunks for 10 minutes and cool slightly.
  • Heat oil in a large frying pan - you may mix vegetable and olive oil instead of using just olive oil.
  • Squeeze liquid out of steamed pieces with your hands, keeping pieces from getting too mashed.
  • Place bread crumbs (seasoned or unseasoned), parmesan cheese and seasonings into a large bowl and mix.
  • You could use a clove or two of fresh garlic, sauteed in place of the garlic salt.
  • Beat eggs in a small bowl and add to bread crumb mix along with eggplant pieces.
  • Stir to mix well.
  • Form patties of any size, but not exceeding an inch in thickness and place in frying pan.
  • Cook for five minutes on each side.
  • Remove to a towel-lined plate to drain.
  • Place in a warm oven if you are not ready to serve them immediately.

SHRIMP STUFFED EGGPLANT (AUBERGINE)

My Dad mailed me this sometime in the 80's along with a story about the grumpiest man in the club restaurant he managed falling in love with this dish. I have modified his recipe some.

1 medium eggplant, per 2 servings
1 medium onion
1 garlic clove
1/2 cup small raw shrimp
1/4 cup fresh basil, chopped
2 tablespoons breadcrumbs, as needed
salt and pepper
1/2 cup swiss cheese, shredded (optional)

Steps:

  • Cut each eggplant it half, cutting through the stem and down its length.
  • Cut perpendicular (criss-cross) slices in the flesh of the eggplant to within ¼ inch of the shell.
  • Use a spoon to scoop out cubes of eggplant pulp.
  • Place shells in an oven preheated to 350 while preparing the filling or in a shallow pan of boiling water. You want the shells a little tender but not fully cooked when you stuff them.
  • Saute onion and garlic in a little oil in a skillet until transparent but not brown.
  • Add the eggplant pulp and cook until done.
  • Add shrimp and cook for about 5 more minutes.
  • Add basil and enough breadcrumbs until mix is firm but not dry. Salt and pepper to taste. Cheese can be added if desired at this step and grated on top after cooking as well.
  • Stuff shells and put in oven proof dish. Heat in 350 oven until piping hot or freeze.
  • Serve with a salad and good French or Italian bread. Fantastic.
