1 small eggplant (such as Japanese eggplant)
3 tablespoons olive oil, divided
1 pound prepared pizza dough, at room temperature
1 garlic clove, minced
8 ounces fresh mozzarella, sliced
0.5 cup shredded rotisserie chicken
0.33 cup roasted red bell pepper slices
2 teaspoons capers
0.25 teaspoon kosher salt
2 teaspoons fresh lemon juice
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Place a pizza stone or baking sheet in oven. Preheat oven to 450°F. Using a vegetable peeler, peel thin strips from the eggplant until you reach the seeds. Discard the seedy core.
  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high. Add the eggplant and cook, stirring constantly, until tender, about 2 minutes.
  • Place the pizza dough on a sheet of parchment paper. Stretch or roll the dough into a 14-inch circle. Combine the garlic and the remaining 1 tablespoon of oil in a small bowl; brush evenly over the dough. Lay the mozzarella over the dough, leaving a ¾-inch border. Top the mozzarella evenly with the eggplant, chicken, bell pepper, and capers. Sprinkle with the salt. Slide the pizza on the parchment onto the hot pizza stone or baking sheet.
  • Bake until the mozzarella is melted and the crust is golden brown and crispy, about 15 minutes. Drizzle with the lemon juice and sprinkle with the parsley.

4 graffiti eggplants, or other small, Italian-style eggplants
2 medium zucchini
1 yellow bell pepper
1 red bell pepper
15 cherry tomatoes, preferably on the vine
2 garlic scapes
5 spring onions
2 leeks
2 tablespoons capers
4 anchovies, oil-packed
3 shallots, thinly sliced
kosher salt, to taste
Freshly ground black pepper, to taste
1/4 cup red wine vinegar
1/2 cup extra-virgin olive oil, plus more for serving
2 stalks celery, including leaves
1/2 cup flat-leaf parsley, stems included
1/2 cup basil
1/4 cup mint
Crusty bread, for serving
Buffalo mozzarella, for serving

Steps:

  • Light the grill: Place a chimney starter on the grate of a charcoal grill. Add newspaper in the bottom, then fill the top with charcoal. Light the newspaper; the fire will light the charcoal. When the charcoal is mature with ashed-over gray embers (about 30-45 minutes later), pour the charcoal from the chimney into the bottom of the grill. Set the grill rack aside-you won't need it for this recipe.
  • Roast the vegetables and make the vinaigrette: Place the eggplant, leeks, zucchini, peppers, tomatoes, and garlic scapes directly onto the coals in an even layer. Stand the bunch of spring onions up so the bulbs are in the coals and the stalks are leaning against the side of the grill (this will create a natural handle for easy removal). Cook 10-15 minutes, turning the vegetables once to ensure they char evenly. Meanwhile, make the vinaigrette: In a mortar, combine the capers, anchovies, shallots, a big pinch of salt, and pepper. Using the pestle, crush and grind the mixture to break it down to a chunky mash. Transfer to a large bowl; stir in the vinegar and olive oil to saturate and combine. Season with lots of black pepper. Set aside.
  • Finish roasting the vegetables: The vegetables are done when they're charred and soft. The tomatoes will be done first, followed by the leeks, peppers, zucchini, eggplant, and spring onions. Remove the tomatoes and add them directly into the vinaigrette; crush them with the back of a spoon to release juices. Chop the onions into fourths, discarding the charred stalks, and add to bowl. Chop the eggplant into chunks, add to bowl, and stir to combine; the eggplant will start to absorb the oil. Add the chopped celery and leaves; then chiffonade all the herbs, add them to the bowl, and stir thoroughly. Chop the zucchini and add to the bowl. Chop the peppers, discarding the seeds but keeping the charred skin, and add to the bowl. Stir while the vegetables are still hot so they will absorb all of the vinaigrette. Season to taste with more salt and pepper.
  • Assemble the caponata: Cut the bread into big chunks and place on the coals to toast for a few minutes until lightly charred. Cut the mozzarella into rustic pieces (or tear by hand) and place on a serving platter. Arrange the caponata next to the mozzarella, hand-tear the toasted bread, and add it to the platter. Finish with a drizzle of olive oil and serve.

salt to taste
¼ cup olive oil, divided
1 cup finely chopped celery
1 onion, finely chopped
1 clove garlic, minced
1 ½ cups canned plum tomatoes, drained and coarsely chopped
12 green olives, pitted and coarsely chopped
1 ½ tablespoons drained capers
1 tablespoon tomato paste
1 teaspoon minced oregano
2 tablespoons red wine vinegar
2 teaspoons white sugar
1 teaspoon salt
ground black pepper to taste
2 teaspoons minced fresh parsley, or to taste

Steps:

  • Toss eggplant with salt and place in a colander set over a bowl. Let sit, about 30 minutes. Rinse and pat dry.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add celery; cook, stirring often, until softened, about 4 minutes. Add onion and garlic; cook and stir until onion is soft and lightly golden, about 5 minutes. Transfer mixture to a bowl using a slotted spoon.
  • Heat remaining 2 tablespoons olive oil in the skillet. Add eggplant and cook, stirring constantly, until lightly browned, 5 to 7 minutes. Stir in celery mixture, tomatoes, olives, capers, tomato paste, and oregano. Bring to a boil; reduce heat to low and simmer uncovered until caponata is thickened, about 15 minutes.
  • Season caponata with vinegar, sugar, salt, and black pepper. Transfer to a serving bowl and garnish with parsley.

olive oil
2 large eggplants or 4 small eggplants, small dice
1 large red pepper, small dice
1 medium green pepper, small dice
2 medium red onions, small dice
3 tablespoons garlic, chopped
4 tablespoons capers, divided (2 Tablespoons chopped, 2 Tablespoons whole)
6 anchovy fillets, minced (optional)
1 cup balsamic vinaigrette
3/4 cup brown sugar
3/4 cup tomato puree
1 bunch basil, chiffonade (means finely chopped)
2 tablespoons oregano, chopped
salt and pepper
1/2 cup red wine vinegar
1 cup pitted green olives (usually come in a jar stuffed with pimentos)

Steps:

  • Heat about 1/4 inch of oil in a large saute pan (as the eggplant will soak it up).
  • Brown the eggplant in the oil in small batches.
  • Set aside in a stainless steel bowl.
  • Note: the eggplant is usually cooked with the skin on it adds color to the dish, however if you find the skin to be particularly tough or stringy you can peel the eggplant and cook it skinned.
  • Heat more oil.
  • Sauté peppers until soft.
  • Add sautéed peppers to bowl with the eggplant.
  • Cook onions and garlic until onions are tender.
  • Add brown sugar and vinegar and cook 2 minutes more.
  • Add tomato puree and green olives and cook until you have a thick, brown sweet-and-sour sauce.
  • Pour sauce over eggplant and peppers and toss to coat.
  • Add capers, anchovies and herbs, and mix well.
  • Adjust seasonings to taste.
  • Serve warm or at room temperature with slices of crusty Italian bread.
  • Also excellent served hot on top of pasta or chilled and served as a salad.

2 lbs eggplants
1 teaspoon salt
1/2 cup olive oil
2 cups celery, chopped
3/4 cup onion, chopped
1/3 cup wine vinegar
4 teaspoons sugar
3 cups crushed tomatoes, drained
2 tablespoons tomato paste
1/4 cup kalamata olive, sliced
2 tablespoons capers, rinsed
1/2 teaspoon black pepper
1 teaspoon salt
2 tablespoons pine nuts

Steps:

  • Cut the eggplant into 1/2 inch cubes sprinkle with salt and place in a colander over paper towles or container. After 30 minutes pat dry with dry paper towels and set aside.
  • Mix the wine vinegar and sugar and set aside.
  • In a heavy 12 to 14 inch skillet, over moderate heat, add 1/4 cup olive oil then add celery, stirring frequently for 10 minutes.
  • Add the chopped onions to the celery and cook until soft and lightly colored about 10 minutes. Using a slotted spoon transfer them from the skillet into a bowl.
  • Add the remaining olive oil (1/4 cup) into the skillet, and under high heat add the eggplant cubes, stirring and turning them constantly for 8 minutes or until lightly browned.
  • Return the celery and onions to the skillet and stir in the vinegar and sugar mixture, drained tomatoes, tomato paste, kalamata olives, capers, salt, and black pepper.
  • Bring to boil, reduce reat, simmer uncovered, stirring frequently, for 15 minutes. Stir in the pine nuts. Taste mixture season, if necessary, with salt, pepper, and/or a little vinegar.
  • Cool the caponata then transer to a serving/storage bowl and refrigerate for 4 to 6 hours (overnight is best). Enjoy.
