Soft Scrambled Eggs With Avocado image

12 eggs
1/4 cup heavy cream
3 tablespoons unsalted butter
Sea salt and freshly ground black pepper
3 avocados, peeled, pitted and sliced
Chopped fresh chives, for garnish

Steps:

  • Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

  • Place each avocado half in a ramekin. Crack 1 egg into each avocado half; season with salt, black pepper, and cayenne pepper. Place ramekins on a baking sheet.

1/2 lime, juice only
1 cup egg substitute
1/2 teaspoon chili powder
4 tortillas, multigrain

Steps:

  • In a skillet, over medium heat, combine black beans and salsa for 5 minutes, smashing the beans while cooking.
  • Meanwhile in a small cup or bowl combine avocado and lime juice; mashing with a fork.
  • Whisk together the egg substitute and chili powder in another bowl.
  • Over medium low heat, spray skillet with Pam cooking spray; add egg substitute mixture and cook for 2 to 5 minutes, stirring frequently.
  • Spread each tortilla with 1 tablespoon avocado mixture; top with 1/4 cup egg mixture and 1/4 cup bean mixture.
  • Roll up and serve.

1/2 cup light cream
1 teaspoon salt
1/2 teaspoon pepper
1 avocado, peeled and cubed (about 1 Cup)
2 tablespoons butter
12 slices bacon, crispy fried & crumbled
cream cheese, thinly cubed (optional)
tomatoes (optional)

Steps:

  • Mix eggs, cream, salt & pepper with a fork; stir in avocado.
  • Heat butter in skillet over medium heat until just hot enough to sizzle a drop of water;.
  • Pour mixture into skillet. I personally like to add cream cheese at this time. As egg mixture begins to set at bottom and side, lift cooked portion with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook until eggs are thickened throughout but still moist.
  • Sprinkle tomato if desired.
  • Remove from heat and sprinkle bacon on servings.

  • Slice the avocados in half and remove the pits.

2 tomatoes, halved
½ tsp rapeseed oil
2 eggs
1 small ripe avocado
2 slices seeded wholemeal soda bread (see goes well with)
2 handfuls rocket

Steps:

  • Heat a non-stick frying pan, very lightly brush the cut surface of the tomatoes with a little oil, then cook them, cut-side down, in the pan until they have softened and slightly caramelised. Meanwhile, heat a pan of water, carefully break in the eggs and leave to poach for 1-2 mins until the whites are firm but the yolks are still runny.
  • Halve and stone the avocado, then scoop out the flesh and smash onto the bread. Add the eggs, grind over black pepper and add a handful of rocket to each portion. Serve the tomatoes on the side.
