EGGLESS FRENCH TOAST
All the goodness of French Toast made without eggs. My husband came up with the recipe for our son, who is allergic to eggs and other foods. Serve with syrup and confectioners' sugar.

Steps:
- Whisk milk, cinnamon, and vanilla extract together in a shallow bowl.
- Press each slice of bread lightly into the milk mixture to coat both sides, removing it before it gets soaked.
- Melt butter in a skillet over medium heat. Cook coated slices in batches until golden brown and somewhat firm, 5 to 8 minutes per side.

PERFECT FRENCH TOAST
Steps:
- Preheat the oven to 350 degrees F. Whisk 4 eggs, 1 1/2 cups half-and-half or milk, 1/2 teaspoon nutmeg, 1 teaspoon vanilla extract, 1 teaspoon sugar and a pinch of salt in a shallow bowl. Heat 1/2 tablespoon butter in a nonstick skillet over medium heat. Working in batches, dip 6 thick slices white bread, challah or brioche in the egg mixture and cook in the skillet until golden, 2 to 3 minutes per side, adding more butter as needed. Transfer to a baking sheet and bake until puffed, 8 to 10 minutes. Meanwhile, melt 4 tablespoons butter in the same skillet until browned, about 5 minutes. Drizzle the French toast with the browned butter and maple syrup.
YUMMY FRENCH TOAST CASSEROLE - EGG-FREE, DAIRY-FREE
For the food-allergic people in your life, egg-free, dairy-free French toast casserole! Crispy on the outside, chewy on the inside, it's nice as a brunch item. This is our version of a recipe from a Food Allergy and Anaphylaxis newsletter ( http://www.foodallergy.org/ ). The original recipe called for unflavored rice milk, 1/4 tsp vanilla extract, and milk-free, soy-free margarine, so it can be converted to a soy-free dish as well, though we haven't tried it. I think the critical thing is using bread with a nice, crisp texture; it wouldn't be as good with bread that was soft and squishy!

Steps:
- Pre-heat oven to 400°F.
- Spray a 9x13" baking dish with cooking spray (note: do _NOT_ use butter-flavor cooking spray! This contains dairy ingredients).
- Combine melted margarine, vanilla soy milk, corn syrup, 1/2 tsp cinnamon, salt, and molasses in a large bowl.
- Fold bread into mixture so that it absorbs liquid evenly. Place in prepared baking dish, and cover with aluminum foil.
- Bake 15 minutes.
- Remove foil, and bake 15 minutes more.
- Sprinkle 1/2 tsp cinnamon over the top.
- Top as desired - allergen-safe syrup, fruit, or powdered sugar.

- Preheat griddle to just above medium heat.
- In a medium bowl, combine all ingredients except bread and butter. Mix until the cornstach is disolved. Transfer mixture to a shallow bowl or pan.
- Dip both sides of each bread slice into the mixture.
- Melt butter on the griddle or skillet. Place bread on heated surface and cook each side to a light golden brown.
- Serve immediately.

OVERNIGHT BLUEBERRY FRENCH TOAST
This is a very unique breakfast dish. Good for any holiday breakfast or brunch, it's filled with the fresh taste of blueberries, and covered with a rich blueberry sauce to make it a one of a kind.

- Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes.
- In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
- Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
- Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
- In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast

- Place the non-dairy milk, potato starch, cinnamon, and salt in a shallow bowl and whisk together.
- Place one tablespoon vegan buttery spread in a frying pan and melt over medium heat (5 or 6 on an electric stove).
- Once the pan is hot and the buttery spread is sizzling, take a fork and dip a piece of bread into the batter, making sure the bread is coated on both sides. Place in the pan. Repeat, but don't crowd the pan.
- Use your spatula to move the bread in the pan so it doesn't stick. After about 4-5 minutes, flip the bread. The French toast should be golden brown and crisp on both sides.
