EGG FREE FAT HEAD PIZZA DOUGH
The Fat Head Dough recipe is often called the Holy Grail of low carb pizza crusts. Here's an egg free version for those sensitive to eggs.

Steps:
- Place mozzarella in microwave bowl and microwave until melted. This took about 1 minute and 30 seconds for me.
- Let cheese cool slightly, then mix in cream cheese, parmesan cheese, almond flour, garlic powder and salt. Knead in with your hands.
- Sprinkle in the psyllium a little at a time, kneading in as you go. All ingredients may not be completely incorporated, but that's okay.
- Form dough into a ball and then roll out as flat as you can on parchment paper, a silicone mat, or pizza stone. If you want to flip the dough later, it's best to bake it on parchment paper.
- Shape edges of dough as needed to form a nice circle. Place on baking sheet (preferably lined with parchment paper).
- Bake at 425°F for about 15-20 minutes, or until browned.
- Flip the crust over so the browned top is now on bottom. Return to oven for about 5 more minutes until new top has browned.
- Add desired sauce and other toppings. Add additional cheese if desired.
- Return to oven and bake for an additional 5 minutes. If you want the top to brown, you can place it under the broiler for a few minutes.

THIN-CRUST FATHEAD PIZZA DOUGH
Made without cream cheese, this crust is not only keto-friendly but also tastes just like pizza! Even though it's thin, the xanthan gum helps make it sturdy enough to pick up and hold all your favorite pizza toppings. Note that the yeast won't help the dough rise since it's lacking sugar to activate it; it is solely included to add traditional bread-like flavor. Shred your own mozzarella from a block of cheese instead of buying pre-shredded; the latter does not melt well.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Dissolve yeast in warm water in a bowl. Set aside for about 5 minutes.
- Place mozzarella cheese into a microwave-safe bowl. Microwave for 90 seconds, stirring every 30 seconds until cheese is completely melted. Stir in yeast mixture and egg and stir to combine; mixture will not incorporate well at this point.
- Stir in almond flour, xanthan gum, and salt. If mixture is difficult to mix, reheat in the microwave for 20-30 seconds to soften the cheese. Stir again until well incorporated. Using your hands, knead the dough for 2 minutes.
- Place dough on baking sheet and press with your fingers into a thin crust, approximately 11-12 inches in diameter.
- Bake in the preheated oven until crust is lightly browned, about 10 minutes. Remove from oven, top with your favorite pizza toppings, and return to the oven for 5 minutes, or until cheese is melted.

MY PIZZA DOUGH (FAT FREE)
I sometimes use this pizza dough as a substitute for my grandmother's recipe (which contains leaf lard). This recipe works, but I prefer Nana's, LOL ;) NOTE: The 2 hour "cooking time" is the rising time for the dough.

Steps:
- Dissolve yeast in 1/4 cup water, let stand for about 5 minutes.
- Dissolve salt in 1 cup of warm water, place in a large bowl; add yeast and about 2 1/2 cups of sifted flour to the bowl - stir well to make a soft dough.
- On a board, place remaining flour, make a well in center and add the dough to the well.
- Knead the remaining flour into the soft ball of dough, turning the dough 1/4 turn as you knead and add flour, until dough is smooth and elastic and does not stick to hands or unfloured board.
- Cover dough and let rise in a warm place for about 45 minutes.
- Divide dough into 2 equal pieces, knead each piece for a few minutes, shape each into a ball, cover with a cloth and let rise for about 1 hour 15 minutes or until doubled.
- Place the dough on a floured board and pound it lightly to deflate it.
- Work and stretch each piece of dough until large enough to cover a round 12-inch pie plate (flouring both sides of dough to keep it from sticking to the board, hands or pie plate/pizza pan).
- Add sliced tomatoes and toppings as desired, bake in preheated 400° oven for 20-30 minutes, remove from oven, let cool for 5 - 10 minutes before slicing, serve hot.
