This is a delicious cheesecake for eggnog lovers. The secret to a smooth cheesecake is to cream the cream cheese in a food processor for several minutes.

1 cup graham cracker crumbs
2 tablespoons white sugar
3 tablespoons melted butter
3 (8 ounce) packages cream cheese, softened
1 cup white sugar
3 tablespoons all-purpose flour
¾ cup eggnog
2 eggs
2 tablespoons rum
1 pinch ground nutmeg

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl combine graham cracker crumbs, 2 tablespoons sugar and butter. Press into the bottom of a 9 inch spring form pan.
  • Bake in preheated oven for 10 minutes. Place on a wire rack to cool.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a food processor combine cream cheese, 1 cup sugar, flour and eggnog; process until smooth. Blend in eggs, rum and nutmeg. Pour mixture into cooled crust.
  • Bake in preheated oven for 10 minutes.
  • Reduce heat to 250 and bake for 45 minutes, or until center of cake is barely firm to the touch. Remove from the oven and immediately loosen cake from rim. Let cake cool completely before removing the rim.

Food has always been politicized in India, a person's diet often revealing the specifics of her cultural identity. And under the government of Prime Minister Narendra Modi, and the surge of pro-vegetarian Hindu nationalism, even the simple practice of serving eggs at school lunch has become fraught. But eggs have long been an important source of nutrition across the country, and form the base of many classic regional dishes. In Andhra Pradesh, this spicy, tomato-rich egg curry would have firmer, more crumbly yolks (boiled for about 11 or 12 minutes), but I like to cook them a little softer (8 minutes, max).

1/4 cup neutral oil, such as grapeseed or canola
2 medium yellow onions, chopped
6 garlic cloves, finely chopped
1 (2-inch) piece fresh ginger, peeled and finely chopped (about 2 tablespoons)
2 small cinnamon sticks
6 green cardamom pods
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon whole black peppercorns
6 Roma tomatoes, finely chopped
1 teaspoon kosher salt
1/2 teaspoon garam masala
6 to 8 hard-boiled eggs, peeled
Handful of small, tender fresh cilantro stems

Steps:

  • In a large, heavy skillet, heat the oil over medium. Add the onions and cook, stirring occasionally, until evenly caramelized and light brown, 25 to 30 minutes. Stir in the garlic and ginger, and fry, stirring occasionally, another 4 minutes. Add the cinnamon and cardamom. When the spices start to toast, after about 2 minutes, stir in the coriander, turmeric and peppercorns.
  • Add the tomatoes, salt and 1 cup water. Cook, stirring occasionally, until the mixture thickens and the fat rises to the top, about 15 minutes. Stir in the garam masala and lower the heat. If the sauce isn't runny, stir in 1/2 cup water.
  • Add all but 2 of the eggs and stir gently. Halve the remaining eggs lengthwise and arrange on top, yolk-side up. Heat until the eggs are warmed through, then top with cilantro.

1 ¼ cups water
1 tablespoon vinegar
salt to taste

Steps:

  • Heat oil in a large pot over medium heat. Add onion; cook and stir until browned, about 5 minutes. Stir in garlic and ginger paste. Mix in coriander, cumin, turmeric, chile powder, and black pepper; cook until fragrant, about 1 minute. Add tomato puree; cook until curry thickens, about 4 minutes.
  • Pour water into the pot; bring sauce to a boil. Stir in vinegar and salt. Slip eggs into the pot; cook until flavors combine, about 5 minutes.

This recipe does not have any curry in it. For that matter, it doesn't have any cheese in it either. In fact, it is a sweet cake. I found this recipe in a cookbook I bought at a garage sale. "Good Things in England" by Florence White was published in 1933. The recipes are from 1399 to 1932. Posted for the Zaar World Tour 2005. Time to make and serving amounts are estimated.

1/4 lb butter
1/4 lb sugar
1 egg yolk
2 egg whites, beaten
2 ounces candied orange peel or 2 ounces candied lemon peel
2 tablespoons rum (to taste)
1 sheet puff pastry

Steps:

  • Preheat the oven to 400 degrees. (This is an estimate. Follow baking instructions for the pastry.).
  • Cream the butter.
  • Beat in the sugar and eggs.
  • Stir in the peel and rum.
  • Line a pie tin with the puff pastry, trimming and decorating the edges as desired.
  • Pout the egg mixture into the pastry lined pie tin.
  • Bake for 30 to 45 min, until the pastry is done and the pie is set.
  • Allow to cool before serving. This pie should be kept in the refrigerator.

8 hard-boiled eggs, peeled and quartered
1 tablespoon oil
2 onions, chopped
2 cloves garlic, minced
1 tablespoon grated fresh ginger
3 teaspoons coriander powder
1 teaspoon turmeric
1/2 teaspoon chili powder
3 teaspoons cumin powder
1/2 teaspoon salt
2 teaspoons tomato paste
1 (14 ounce) can chopped tomatoes, drained
1/2 cup water
2 teaspoons garam masala

Steps:

  • In a small bowl or coffee cup, mix the coriander, turmeric, chilipowder, cumin and salt.
  • In a large frying pan, saute the onion, garlic and ginger in the oil until the onion softens.
  • Add the spice mix to the onion mix, coating all the vegetables.
  • Stir in the tomato paste, tomatoes and water.
  • Allow to gently simmer 10-15 minutes uncovered, till the sauce begins to thicken.
  • Gently stir in the eggs and the garam masala.
  • Allow the eggs to heat through, and serve immediately.

This is a simple cheesecake recipe that I sometimes bring to family occasions. I am posting this recipe for my cousin Amy since she requested the recipe.

1 prepared graham cracker crust (I use Keebler)
2 (8 ounce) packages cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 can cherry pie filling (I use Comstock)

Steps:

  • Preheat oven to 350 degrees.
  • Place the cream cheese in a bowl in the microwave.
  • Microwave it on the defrost setting for a couple of minutes to slightly soften the cream cheese (This is so that you don't kill your mixer when beating the cream cheese).
  • Add sugar to cream cheese and beat it with an electric mixer until smooth.
  • Add eggs and vanilla and blend until smooth.
  • Pour into ready made crust.
  • Bake at 350 degrees for 25 to 30 minutes.
  • Note: The cheesecake is done when the sides are puffed- The center will not be as puffed- It will be possible to jiggle the center slightly but it will not be runny.
  • Let cool.
  • Top with cherry pie filling and chill.
