BAKED EGGS WITH ONIONS AND CHEESE
Eggs can be baked on a bed of almost anything -- cooked spinach and sliced tomatoes come to mind immediately -- but the trick in every case is to avoid overcooking. The consistency of baked eggs should be like that of fried eggs, with a barely cooked white and a soft, runny yolk.

Steps:
- Preheat oven to 450 degrees. Put butter or oil in large, ovenproof skillet, and set over medium-high heat. Add onions and a liberal sprinkling of salt and pepper, cover skillet and turn heat to medium. Cook, stirring occasionally, until onions are very soft and tender but not browned, for about 15 minutes.
- Combine bread crumbs and cheeses, and sprinkle half of this mixture over onions. Use back of spoon to make 8 little nests in the mixture, and crack 1 egg into each. Season with salt and pepper, and distribute remaining bread crumbs and cheese mixture over top.
- Bake for 5 minutes, or until eggs are barely set. Turn on broiler, and run skillet under it to brown top for a minute or so, being careful not to overcook the eggs. Serve hot or at room temperature.

NITKO'S SCRAMBLED EGGS WITH ONION AND BACON
This is one of my favorite egg meals. I do not remember when I have started eating this meal, but I am sure I was very young. It can be nice lunch, heavy breakfast or even supper. It is even better if you use spring onion. This meal has Dalmatian flavor (herbs, olive oil) but you can do it without this ingredients.

Steps:
- First, make the pastry. Tip the flours into a medium bowl with the cayenne, onion seeds, parmesan and a generous pinch of salt. Rub in the butter until the mixture resembles breadcrumbs, then pour in half the egg and 2 tbsp cold water and bring everything together using your hands. Knead a couple of times until smooth. Flatten a third of the dough into a disc, then do the same with the remaining dough. Wrap both pastry discs and chill in the fridge for at least 30 mins. Will keep chilled for up to two days.
- Meanwhile, make the filling. Heat the butter in a saucepan over a medium heat until sizzling, then scatter in the onions, bay, thyme, a large pinch of salt and good grinding of black pepper. Stir, then cook slowly for 10 mins until the onions have cooked down and started to caramelise. Stir in the sliced potatoes, cover and cook for 8-10 mins more, stirring occasionally until the potatoes are soft and starting to break down. Stir in the cream, remove the pan from the heat and leave to cool. Once cool, remove and discard the bay, then fold in the cheese.
- Roll the smaller pastry disc out on a lightly floured surface to the size of a dinner plate and lift onto a baking sheet lined with baking parchment. Roll out the remaining pastry disc along with any offcuts to a circle about 5cm wider than the first. Spoon the filling into the middle of the smaller circle on the baking sheet, leaving a 4cm border. Brush the exposed border with some of the remaining beaten egg, then drape over the larger pastry circle. Tuck the edge around the filling to enclose it, as if making a giant ravioli. Trim the edge to neaten, then crimp with a cutlery knife handle or fork to seal. Brush the pie all over with most of the remaining beaten egg, and use any trimmings to make decorations, if you like.
- Heat the oven to 210C/190C fan/gas 7. Bake the pie for 35-40 mins until deeply golden, brushing with the rest of the beaten egg halfway through. Leave to cool on the baking sheet for at least 20 mins before cutting into wedges, or leave to cool completely and serve cold.

- Add the oil to a large nonstick skillet over moderately-high heat. Add the meat and onion, and cook until the meat is browned and the onion is softened, about 5 to 7 minutes, stirring occasionally and using a wooden spoon to break up the meat. Stir in the salt and pepper.
- Turn heat down to medium and pour in the eggs. Let the eggs cook until slightly set, about 1 minute, then gently stir upward from the bottom so the uncooked eggs are exposed to the bottom of the pan; continue stirring like this until eggs are set, about 1 to 2 minutes more.

- In a large skillet, heat 1 teaspoon olive oil over medium-high until just shimmering. Add the onions and 1/2 a teaspoon salt, stirring to evenly coat the onions with oil. Keep cooking, stirring the onions occasionally and adjusting the heat (if necessary) to accommodate slow, even browning. As the onions cook, scrape up any brown bits that begin to form on the bottom of the skillet. (Add a splash of water to deglaze, from time to time.) Keep cooking until the onions are slumped, have dramatically shrunk in volume, and are deep-caramel brown. Season with about 1/2 teaspoon balsamic vinegar, and transfer to a medium mixing bowl.
- Wipe out the skillet, and heat the remaining 1 tablespoon olive oil over medium-high heat until shimmering, but not smoking. Add the kale, a generous pinch of salt, and cook, stirring occasionally, until bright green and somewhat wilted, 2-3 minutes. Add the kale to the caramelized onions. Cool for 10 minutes, then add 3/4 cup gouda, tossing everything together with tongs to evenly distribute the filling ingredients.

- Place the flank steak in a large pot. Add the onion, carrot, bay leaf, thyme, garlic, parsley stems (if using), salt, and pepper. Pour in enough water to cover the steak by about 1 ½ inches. Bring the pot to a boil. Cover, lower the heat, and simmer for 1 ½ to 1 ¾ hours, or until the beef is easily shredded with a fork.
- Remove the steak from the pot, reserving 1 ½ cups of the cooking liquid. Set the broth aside. When the beef is cool enough to handle, remove any fat or sinew and slice it crosswise into thirds. Chop it into a fine dice, then chill, covered until ready to use. If refrigerated, the steak will last, covered for up to 2 days. To freeze it, cover shredded or chopped beef with the cooking liquid just until submerged. Freeze it in containers for up to 3 months.
- Make the filling: Heat the oil in a large skillet with high sides over medium-high heat. Add the white onions and cook, stirring, until softened, about 5 minutes. Add the paprika, salt, cumin, red pepper flakes, and black pepper, stirring well to combine.
- Add the beef and broth, stirring to combine. Bring them to a boil, then lower the heat to medium and continue cooking, uncovered, until all of the liquid has been absorbed, about 10 minutes (the beef mixture should still be moist). Remove the filling from the heat and stir in the vinegar. Cover and chill the filling completely, at least 3 hours, but preferably overnight.
