Easy Vegan Garlic Aioli image

This Easy Vegan Garlic Aioli is cashew based and oil free! In as little as 10 minutes you can have this delicious and healthy aioli ready for any occasion.

Number Of Ingredients 6

1 cup raw cashews OR roasted
1/2 cup water
2 tsp dijon mustard
4 tsp lemon juice, about 1/2 a lemon
3 garlic cloves, roughly chopped
1/4 tsp salt

Steps:

  • Soak the cashews in very hot water, enough to cover, set aside for at least 5 minutes
  • Place the cashews and ALL remaining ingredients in a food processor, blender or magic bullet. Blend on high for about 30 seconds. Stop and scrape down sides if necessary. Taste and add more lemon or dijon to your preference, or more water if you want a thinner consistency. Pulse for another 30 - 60 seconds until rich and creamy.
  • Ready to serve immediately or keep in fridge for up to 1 week

If you love garlic then this spread is a must-try. Use it on sandwiches and veggies. I have coated this on salmon fillets before baking. My advise is if you are using this to coat your salmon fillets, you might want to decrease the garlic amount. This spread does a great job keeping the moistness in the fish and gives it a fantastic flavor. Please don't leave out the fresh tarragon--it's what brings this spread to life! The garlic amount may be decreased. Use only mayonnaise not salad dressing for this.

1 cup mayonnaise (not salad dressing)
1/2 cup lemon juice
1 tablespoon Dijon mustard
1/4-1/3 cup minced garlic
1 tablespoon lemon zest
1/3 cup finely chopped tarragon

Steps:

  • In a bowl whisk together all ingredients.
  • Cover and chill for a minimum of 3 hours before using.
