EASY TURKEY TACO CASSEROLE
This easy and healthy baked taco casserole made with ground turkey takes taco night to a whole other level!

Steps:
- Pre-heat your over to 375 degrees.
- In a large skillet, warm your oil over medium heat and sauté garlic and onion for 2-3 minutes, stirring occasionally.
- Add Foster Farms Organic Ground Turkey and cook until browned.
- Add a splash of water to the meat and mix in the two taco seasoning packets thoroughly. Turn heat down to low setting and cover.
- In a casserole dish, evenly layer your corn tortilla chips on the bottom, then evenly add the ground turkey.
- Pour the jar of salsa over the meat, spreading it out as even as possible.
- Top with shredded cheddar cheese and bake uncovered for about 20 minutes, or until cheese is melted and bubbly.
- Allow your turkey taco casserole to cool slightly and top with lettuce, diced tomatoes, green onion, avocado, or whatever your chosen toppings are.
EASY TURKEY TACO CASSEROLE
This Easy Turkey Taco Casserole is a classic throwback dish, but sooooo delicious and satisfying. Perfectly seasoned ground turkey is layered with tortillas, beans and cheese then "customized" toppings are added to make your perfect plate!

- Add olive oil to a large skillet over medium-high heat. Add ground turkey and brown turkey, breaking up the meat with a wooden spoon or potato masher Pro Tip: Using a potato masher when the meat is about halfway cooked works great at getting the meat broken up nice and fine ????
- When meat is browned and almost cooked through, add the taco seasoning and taco sauce. Stir and simmer 2-3 minutes more to allow flavors to combine.
- While meat is cooking, add beans to a pan over medium heat with about 1/4 can of water to thin them out and make them spreadable. Stir until smooth and heated through.
- Preheat oven to 375 and spray a 9 x 12 baking pan (or similar) with cooking spray.
- Assemble the casserole: Layer 1/2 the tortillas, beans, taco meat and cheese into even layers. Repeat ONCE so there are two layers of every item. The last layer should be cheese.
- Bake, uncovered for 30-40 minutes until casserole starts to bubble and cheese is nicely melted on top.
- Remove from oven and allow 5-10 minutes for the casserole to cool. Top with toppings and enjoy!

- Place corn chips in a greased shallow 2-1/2-qt. baking dish. Place the refried beans in a small saucepan; cook and stir over medium heat until heated through. Remove from the heat; stir in 1 cup cheese and salsa. Spread over chips. , In a large bowl, combine turkey and taco seasoning; sprinkle over bean mixture. Top with remaining cheese. EASY TACO CASSEROLE
This is what I would serve at a typical supper here at my house when I am pressed for time and need something fast and filling. I have used ground turkey or ground chicken with great results but there is no reason that you could not use plain old ground beef. Hope you like it!

Steps:
- Brown meat, onion and garlic in large skillet until no pink remains and onion is clear. Drain grease.
- Add spices, tomatoes, beans and corn and mix well.
- Continue to cook over medium heat until some of the liquid has evaporated. You want a little liquid but not alot- like a sloppy joe mixture.
- In an 8x8 greased pan crush a handful of chips and place on the bottom of the pan, adding more chips until you have a good layer. **** I like to get it as dry as possible here so that it holds together like a lasagna. PLEASE use your taste and judgment here and make it as dry or as liquid as you like. :)
- Layer meat mixture on top of chips.
- Crush some more chips and place on top of meat. Press down on chip layer to draw some moisture into the top layer of chips.
- Top with cheese.
- Bake at 350F for about 20 minutes or until cheese is thoroughly melted.
EASY TURKEY CASSEROLE
This casserole was brought to me after a new baby many years ago by a lady at our church. When I asked for the recipe, I couldn't believe how simple it was. We use this for a quick dinner anytime or to use up leftover turkey after Thanksgiving. Can also be made with chicken.

- Add all other ingredients, except for potato chips, and mix.
- Add small amount of additional milk if needed until creamy.
