SUPER EASY CHEESY ENCHILADAS
When you don't have a lot of time or money. I made this for my family for around a dollar per serving. If the only Mexican food your kids will touch is cheese quesadillas (cheese melted on a tortilla), give this a try as a "step up". My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Now she has been known to eat spinach enchiladas and chicken enchiladas! :) She gave this recipe two thumbs up. :)

Steps:
- First, you want to mix the first four ingredients together until they are really well combined. Seriously, you will not see any little shreds of cheese and it will have the texture of stiff play dough (this is important).
- Preheat your oven to 350 and grab a pan. I used an 11x7 inch oval baking dish, but you can also use an 8inch square.
- Pour about 1/4 of the enchilada sauce into the bottom of the pan and swirl the pan until the bottom is coated.
- Reach in with your clean hands and grab about 2 tablespoons of cheese mixture in your hands and shape into a log. Roll a tortilla around this log and place in the pan. Repeat for the rest of the cheese and tortillas.
- Pour the rest of the sauce on top, spreading it to cover.
- Sprinkle the last 1/2 cup of cheese on top, and place in the oven. Bake 20-30 minutes or until hot and bubbly.
- For OAMC: Freeze before cooking, thaw in refrigerator and bake according to directions.
EASY TEXAS CHEESE ENCHILADAS
I love Tex-Mex. I was craving Enchiladas. I made these. The spices are approximate, I always taste and add a dash of this or that if it needs it.

- Melt butter in pan over medium high heat.
- add flour and cook 2 minutes.
- add spices and tomato paste, mix well (forms a ball).
- pour in unsalted chicken stock and mix until smooth.
- simmer 10 minutes.
- cover and allow to cool.
- smooth enough sauce over the bottom of 13x9 pan to cover.
- roll shredded cheese in corn tortillas and line pan seam side down.
- cover with sauce.
- cover with shredded cheese.
- bake at 350 until hot and bubbly.

CHAR-GRILLED TEXAS T-BONE WITH CACIOTTA CHEESE ENCHILADAS

- Prepare the enchiladas and heat the grill. Rub the steaks with the oil and seasonings and set aside at room temperature while grill heats. When the grill feels medium-hot when you hold your hand 5 inches over the fire, it is ready to use. Place the steaks on the grill and cook them for 5 minutes on each side for medium.
- For the chile sauce: Place the chile paste, tomato, cumin, and honey in a blender and puree until smooth. Adjust seasonings with salt. Heat the oil in a skillet over medium-high heat. Pour in the puree and cook for 3 minutes, until the flavors are well combined. Use the sauce immediately on enchiladas, or store in a glass container in the refrigerator until ready to use. Keeps for a week.
- At serving time, place the steaks on 4 plates and top each steak with 2 hot Caciotta Cheese Enchiladas. Serve immediately.
- Lightly grease an 11 3/4 by 7 1/2-inch glass baking pan. Set aside. Heat the oil in a small skillet over low heat, until it's hot enough to sizzle when a tiny piece of tortillas is dropped in. Using tongs, dip a tortilla into the hot oil, removing it quickly and letting excess oil drip off. Dip tortilla into chile sauce and lay it on a flat surface. Sprinkle 1/2 cup of the cheese down the center of the tortilla and roll the tortilla from 1 end to the other. Lay the enchilada in the prepared pan with the seam down. Repeat the steps with each tortilla, fitting them tightly into the pan. Pour the remaining chile sauce over the top of the enchiladas and sprinkle them with the remaining cheese. Prepare these as close to serving time as possible. To finish the enchiladas, preheat the oven to 400 degrees and bake them for 12 minutes. Serve at once.
- Combine all of the ingredients in a small bowl, blending well to evenly distribute the spices. Be sure to break up any chunks that appear. Store the blend in an airtight container. Shake or stir it again before each use.

- Preheat the oven to 375 degrees F.
- Heat a cast-iron skillet over medium-high heat until hot. Add the jalapeno slices to the dry skillet and cook until just starting to blacken. Set aside to cool.
- Mix together the sour cream, cumin, cayenne pepper, green onions, cooled jalapenos and 2 1/2 cups of the grated Cheddar in a bowl.
- Using tongs, char the tortillas one at a time over a gas flame for 5 to 10 seconds per side, then dunk each tortilla in the Enchilada Sauce. Lay a tortilla on a plate, then spoon a good 2 to 3 tablespoons of the sour cream mixture in the middle. Roll the tortilla, then place it seam-side down in a 9-by-13-inch baking pan. Repeat with the remaining tortillas and sour cream mixture.
- Cover the dish with the remaining 1 1/2 cups cheese, then bake until bubbly, 15 to 20 minutes. Sprinkle with extra green onions and serve immediately.
- Heat the oil in a medium saucepan over medium heat. Add the peppers, onions and garlic and cook until soft, about 2 minutes. Add the chili powder, cumin, cayenne, bouillon cubes and some salt and pepper and cook for 2 minutes. Add the flour and cook for another minute. Add the stock and stir to combine. Add the tomato sauce and 3 cups water and bring to a boil. Lower the heat to a simmer and cook until reduced by one-third, about 20 minutes.
- Let the mixture cool slightly, then transfer to a blender and puree until smooth.
- The sauce will keep in the refrigerator for up to a week and can also be frozen.

- Preheat oven to 350°. In a large saucepan, combine first six ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 4-5 minutes, stirring occasionally. , Mix sour cream, parsley, salt and pepper; stir in Monterey Jack cheese, 2 cups cheddar cheese and onions. Spread 2 tablespoons sauce over each tortilla; top each with about 1/3 cup cheese mixture and roll up. Place in two greased 13x9-in. baking dishes, seam side down. - Preheat oven to 350°F
- Lightly grease a 9x13 inch glass casserole dish.
- Combine the minced onions and jalapenos.
- Pour both cans of enchilada sauce into a 2 quart sauce pan, bring to a boil, immediately reduce heat, stir and simmer for 2 minutes Remove from heat.
- Add 1/2 cup of heated sauce to the bottom of the casserole dish and spread evenly. Save remaining sauce.
- In a large skillet, over the Med-High setting, heat corn oil. When the oil is hot add 3 corn tortillas at a time, sizzling approx 5 seconds turn with tongs and heat an additional 3 to 5 seconds (or until soft -- do not allow them to get crisp). Use paper towels to drain the heated tortillas and layer 6 of them over the sauce in the dish.
- Add a third of the minced onions and jalapenos followed by a third of the cubed and shredded cheeses and lightly salt. Pour another 1/2 cup of sauce over cheese. Repeat layers twice, ending with all remaining cheese, onion/jalapeno mix, cheese, sauce and salt.
- Bake uncovered at 350 F for 20 mins or until cheese is melted and bubbly --do not allow to brown. Remove from oven and allow to rest 5 minutes.
- Cut into squares and serve with cold beer, Mexican rice, beans, sour cream or cornbread.

- Quickly cook tortillas in hot oil until softened. Drain well on paper towels. Set aside.
- Saute onion in oil until limp. Drain.
- Place one stick of cheese and some onion onto each tortilla. Roll up. Place seam side down in lightly greased casserole.
- Combine enchilada sauce and chili in a medium bowl. Pour over tortillas.
- Bake at 375 until done (20-40 minutes).

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix cream cheese with 2 cups salsa and 2 chopped green onions in a bowl until thoroughly combined; lightly stir 2 cups shredded Cheddar and 2 cups Monterey Jack cheese into cream cheese mixture. Spoon a scant 1/2 cup of cheese filling in a line down the center of each tortilla and roll tortilla into a log around the filling. Repeat with remaining tortillas and cheese filling. - Preheat the oven to 350 degrees F (175 degrees C).
- Heat the ground beef in a large skillet over medium heat. Cook, stirring to crumble, until no longer pink. Drain off grease and season with chili powder, paprika, cumin, garlic powder, and salt. Mix in the tomato sauce and 2 cups of the water. Simmer over low heat. Mix the remaining water with the flour and sugar until flour is dissolved; stir into the simmering meat sauce. Simmer until thickened, about 10 minutes.
