This is an Americanized version of a popular sauce, made from ingredients that most cooks have on hand. Use this sauce as a marinade for chicken wings, prawns, or your favorite meat. 1/2 cup sugar
1/2 teaspoon garlic powder
1/2 teaspoon powdered ginger
2 tablespoons cornstarch (optional)
1/2 cup soy sauce
1/2 cup cold water
1 tablespoon vinegar

Steps:

  • In a saucepan, combine the dry ingredients. Include the cornstarch if you want a sauce to add to your stir-fry or if you want a basting sauce. For a marinade, leave out the cornstarch.
  • Add soy sauce, water, and vinegar.
  • Stir or whisk until all ingredients are thoroughly mixed.
  • Set the saucepan on medium heat and bring to a boil. For a marinade, let cool and pour over meat. For stir-fry or basting, boil for one minute or until thickened.
  • If using as a marinade, place meat in a shallow container and pour the sauce over all. Cover and refrigerate, turning meat occasionally. Marinate prawns for no more than 30 minutes, chicken or beef 4-8 hours.
  • Unused sauce can be stored indefinitely in the refrigerator. Discard any leftover marinade, as the meat juices in it will spoil.

You can use lemon or lime juice in place or orange juice or for a milder taste just use water, if you are not a ginger-lover then you may omit the ginger, if you want a thicker sauce to cook chicken in just add in 1-2 tablespoons cornstarch to the ingredients and microwave for 3 minutes to thicken.

1/4 cup canola oil
3 tablespoons sugar
2 teaspoons grated fresh ginger
2 teaspoons toasted sesame oil

  • For the marinade: Combine the soy sauce, oil, sugar, ginger, sesame oil, sesame seeds, garlic and 1/2 teaspoon salt in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Remove the chicken from the bag, letting any excess marinade drip off, and transfer to a foil-lined baking sheet. Broil, turning halfway through, until lightly charred, cooked through and an instant-read thermometer registers 165 degrees F, about 12 minutes.

2 tbsp toasted sesame oil
6 skinless and boneless chicken thighs, sliced
2 large garlic cloves, crushed
1 thumb-sized piece ginger, grated
50g runny honey
30ml light soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame seeds , to serve
4 spring onions, shredded, to serve
sticky rice, to serve
steamed bok choi or spring greens, to serve

Steps:

  • Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
  • Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.

85g light brown soft sugar
70ml light soy sauce
1 large garlic clove, crushed
4cm piece ginger, peeled and finely grated
1 tbsp cornflour
1 tbsp rice wine vinegar
sesame seeds (optional)
2 spring onions, finely sliced (optional)

Steps:

  • Pour 350ml water into a small saucepan with the sugar, soy sauce, garlic and ginger. Slowly bring to a simmer, stirring occasionally until the sugar has dissolved. Cook for 5 mins more or until glossy and slightly thickened. Combine the cornflour with 1 tbsp water and quickly whisk through the sauce. Whisk through the rice wine vinegar. If it's still too thick, add a splash more water. Pour into a clean jar and leave to cool at room temperature.
  • Once cooled, will keep in the fridge for up to 1 week. Sprinkle with sesame seeds and spring onions just before serving, if you like.
