This pork carnitas recipe is super tender on the inside and nice and crispy on the outside. It's savory, slightly spicy, and oh-so delicious.

1 tablespoon garlic powder
1.5 teaspoons chipotle powder
½ tablespoon brown sugar
½ tablespoon chili powder
½ tablespoon onion powder
½ teaspoon ground oregano
½ teaspoon paprika powder
½ teaspoon ground cinnamon
½ teaspoon black pepper
1 teaspoon salt
3-4 pound pork shoulder
2 tablespoons olive oil
1 medium white onion, chopped
5 cloves garlic, minced
1/2 cup broth (any kind)
¼ cup orange juice
3 tablespoons lime juice
⅓ cup fresh chopped cilantro

Steps:

  • Combine the spices for the dry rub in a small bowl and set aside.
  • Season the pork shoulder with the dry rub by massaging the pork with the spices on all sides. Let it sit for at least 10-15 minutes.
  • Meanwhile, place the white onion, garlic, and broth into the slow cooker and turn your slow cooker to high.
  • Heat a large skillet over medium/high heat. Add olive oil. When olive oil is fragrant, add the pork shoulder to the pan. Brown both sides of the pork shoulder for 3-4 minutes on each side.
  • Transfer the browned pork shoulder into the slow cooker and pour the orange juice over the meat and then cover the slow cooker. Cook the pork shoulder on high for 7-8 hours or until the pork falls apart.
  • Once the pork is done cooking, preheat the oven to 450ºF and spray a baking sheet with non-stick cooking spray.
  • Uncover the slow cooker and use 2 forks to carefully shred the pork. It should be super tender and easy to shred. Toss the shredded pork with all of the juices in the slow cooker.
  • Transfer the shredded pork to the baking sheet and spread it out. Then, bake at 450ºF for around 5-7 minutes to make your carnitas nice and crispy.
  • Remove the pork from the oven and squeeze on fresh lime juice. Then, sprinkle on fresh cilantro.
  • Serve in a taco, in bowls, in a burrito, etc.

4 lb boneless pork roast
3 Tbsp fine sea salt ((or 2 1/2 tsp table salt))
1 Tbsp ground black pepper
1 tsp dried oregano
1 large onion (diced)
5 garlic cloves
4 Tbsp lime juice ((from 2 limes))
1/2 cup orange juice ((from 2 oranges))
1 cup chicken broth
2 bay leaves

Steps:

  • Pat the pork dry with a paper towel. Combine salt, pepper and dried oregano and rub pork with the seasoning.
  • In the slow cooker, add chopped onion, garlic cloves, broth, lime juice, orange juice, and bay leaves.
  • Add the pork to the slow cooker. Cook on high for 5 hours or on low for 7-8 hours.
  • Remove the pork from the slow cooker. Shredded the pork with two forks. Keep the juice.
  • To get crispy edges, transfer the shredded pork to a baking sheet. Pour ½ cup of the juices on top of the meat and broil it for 5-7 minutes, or until golden brown.

There's nothing like carnitas. Cubes of fragrantly spiced pork are slowly cooked in lard until they're crispy on the outside while at the same time remaining soft and succulent inside. Bust some up on a warm tortilla, drizzle with braising liquid, top with a little salsa, onion, and cilantro, and you're probably enjoying the world's best taco.

3 pounds boneless pork butt (shoulder)
8 cloves garlic, peeled
¼ cup olive oil
1 orange, juiced, orange parts of peel removed and sliced into thin strips
1 tablespoon kosher salt
2 bay leaves, torn in half
1 teaspoon ground black pepper
1 teaspoon ground cumin
¾ teaspoon ground cinnamon
½ teaspoon Chinese 5-spice powder

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Remove fat from pork; cut pork meat into 2-inch cubes and roughly chop fat.
  • Mix pork, garlic, olive oil, orange peel, orange juice, salt, bay leaves, black pepper, cumin, cinnamon, and 5-spice powder together in a bowl until pork is coated completely. Transfer mixture to a 9x13-inch baking dish. Place baking dish on a baking sheet and cover baking dish tightly with heavy-duty aluminum foil.
  • Bake in the preheated oven until pork is fork-tender, about 3 1/2 hours.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Transfer meat to a colander set over a bowl. Remove garlic, bay leaves, and orange peels from baking dish and pour accumulated juices from the baking dish over meat in colander into the bowl. Return meat to the baking dish and drizzle accumulated juices over each piece of meat.
  • Cook meat under the preheated broiler for 3 minutes. Drizzle more accumulated juices over meat and continue broiling until crispy, 3 to 5 minutes. Transfer pork to a serving plate and drizzle more accumulated juices over the top.

2 oranges, quartered
1 large white onion, quartered
6 cloves garlic, peeled and crushed
¼ cup kosher salt

2 bay leaves

Steps:

  • Place the pork shoulder, oranges, onion, garlic, kosher salt, cumin, black peppercorns, and bay leaves into a large Dutch oven. Add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, and simmer for 10 minutes. Skim off any foam that rises to the top. Cover loosely, and simmer until the meat is tender, about 1 1/2 hours. Allow the pork to cool, covered, in the broth for 1 hour. Shred the meat with two forks.
