My husband gets delicious homemade tamales every Thursday at the school where he works. I always freeze whatever we can't eat and eventually we get a backlog, so I made up this recipe last night and it turned out great. Most of the measurements (other than the canned goods) are just estimates and can be adjusted according to preference.

2 (15 ounce) cans black beans
1 (15 ounce) can diced tomatoes
1 (6 ounce) can tomato sauce
4 cups chicken broth
1 cup onion, diced
1 tablespoon garlic, minced
1 tablespoon cumin, ground
1 tablespoon chili powder
1 tablespoon red pepper flakes
1 teaspoon kosher salt
1 teaspoon ground black pepper
10 -12 frozen tamales (chicken, pork, or beef)
1 cup colby-monterey jack cheese, shredded

Steps:

  • Combine all ingredients except tamales and cheddar cheese in large crockpot. Cook on low for 4 to 5 hours.
  • Meanwhile, allow tamales to thaw just enough to be able to cut them.
  • About 30 minutes prior to serving, add still-mostly-frozen tamales to crockpot and cook on high for 30 minutes.
  • Serve with cheese sprinkled on top.

Easy to make tamale soup recipe that only takes 20 minutes to make!

1 can black beans
2 cups frozen corn
1 can Ro*Tel Tomatoes With Diced Green Chilies
1 can Hormel Beef Tamales in Chili Sauce
1 can tomato paste
2 cups chicken broth
1 package taco seasoning
Handful of shredded cheddar cheese (optional)
Handful of fresh cilantro (optional)

Steps:

  • Remove paper wrappers on tamales and cut Beef Tamales up into quarters.
  • Mix all ingredients in large pot. Bring to boil, simmer for 20 minutes.
  • Serve in bowls, add shredded cheddar cheese and fresh cilantro on top.

EASY TAMALE CASSEROLE

A co-worker recently gave me this recipe. You can't get much easier than this!!! You can use fresh or frozen tamales. I'm sure you could easily substitute your favorite cheeses and add kernel corn, pinto beans, rotel tomatoes, etc. Simply great with cornbread or salsa biscuits. Can easily be expanded. Enjoy!

1 dozen tamale
1 (6 ounce) can evaporated milk
1 (10 ounce) can soup, Swanson Chicken a la King or 1 (10 ounce) can cream of chicken soup
1 (4 ounce) can green chilies
8 ounces Velveeta Mexican cheese, grated
1/2 medium onion, chopped
1/2 cup cheddar cheese, shredded for top

Steps:

  • Preheat oven to 350°F.
  • Shuck husks off tamales and place, single layer, in a 9x13 baking dish.
  • Mix all other ingredients (except for shredded cheddar cheese for top) until well blended. It will have a very soupy consistency.
  • Pour over tamales and bake for 30 minutes or until bubbling hot.
  • Sprinkle w/ cheddar cheese and bake a few more minutes until melted.
  • Serve hot!

1 can(s) whole kernel corn(don't drain)
1 can(s) beef broth
1 can(s) diced tomatoes
2 can(s) ranch style beans
1 pkg taco seasoning mix
tabasco, to taste-if desired
1 can(s) tamales (mild or spicy)

Steps:

  • 1. Mix everything except tamales and simmer 10 min. or so. Take paper off tamales and crumble into soup. Simmer until warm.

1 pound ground turkey
1 large egg, lightly beaten
1-1/2 cups 2% milk
3/4 cup yellow cornmeal
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup frozen corn, thawed
4 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
Shredded cheddar cheese, sour cream and salsa
Chopped green onions, optional

Steps:

  • In a small skillet, cook turkey over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. In a large bowl, combine egg, milk and cornmeal until smooth. Add tomatoes, corn, seasonings and turkey. , Transfer to a greased 3-qt. slow cooker. Cook, covered, on low until edges are brown, 4-5 hours. Serve with cheese, sour cream and salsa. If desired, sprinkle with green onions.

1/4 cup celery, diced
1/4 cup carrot, diced
1 cup onion, diced
Olive oil flavored pan spray
1 teaspoon dried oregano
1 teaspoon ground cumin
2 cloves garlic, minced
4 cups chicken stock
1 cup diced tomato with juice
1/2 cup tomato puree
1/2 cup zucchini, diced
1/4 cup corn kernels
1 cup garbanzo beans
1 teaspoon adobo paste from canned chipotle peppers
2 cups masa harina de maiz
1/2 teaspoon salt
1 1/4 cups warm chicken stock
4 tablespoons light butter
6 ounces cooked, boneless, skinless smoked turkey, shredded
1/4 cup red or green salsa

Steps:

  • For the Soup: Gently sweat the celery, carrot and onion using the pan spray until the onion has softened, keeping a lid on the pot except when stirring. Add oregano, cumin and garlic. Sweat for a few more minutes. Add the stock and simmer 30 minutes. Add tomato products, zucchini, corn, garbanzo beans and adobo paste. Simmer 10 minutes. Unwrap the tamales, place 2 each in 6 large bottom soup bowls. Ladle soup over tamales. Garnish, if desired, with chopped cilantro, crumbled Queso Ranchero, and a squeeze of lime.
  • Combine masa, salt and stock. In a large mixing bowl, whip softened light butter until fluffy, then incorporate into masa. Spread a 2 1/2 by 4-nch rectangle of masa mixture onto an 8 by 10 inch aluminum foil rectangle. Combine the chicken and salsa, then place 2 tablespoons lengthwise on the masa. Gently fold over the foil lengthwise. Crimp the masa together. Roll up and close first the long side and finally the ends to form a pocket. Steam, covered with toweling for 1 1/2 hours. Yield: 12 tamales

  • Brown meat and drain.

1 onion, chopped
1 green bell pepper, chopped

1 tablespoon chili powder

3 cups chicken broth
1 (14 ounce) can tomatoes, chopped,with juice
12 purchased tamales, 3 ounces each
1 (15 ounce) can pinto beans, rinsed,drained
1 cup frozen corn kernels
shredded cheddar cheese
sour cream

Steps:

  • Cook first four ingredients over medium-high heat, breaking up meat until browned; Add chili powder, cumin, cayenne and cinnamon and cook 1 minute.
  • Add broth and tomatoes with juice.
  • Cover and simmer 30 minutes.
  • Meanwhile, heat tamales according to package instructions.
  • Stir beans and corn into soup; Simmer until corn is just heated through, about 3 minutes.
  • Place 2 tamales into each of 6 bowls.
  • Sprinkle with cheese and sour cream and serve.
