- Pulse cookies in a food processor until crumbled or put in a plastic bag and hammer until crumbled completely. Add cream cheese and strawberry syrup and blend until smooth. Place mixture in freezer for about 2 hours or until firm. Using hands, roll into balls, approximately 1-inch in diameter each. Refrigerate for approximately 30 minutes or until firm. Melt white chocolate according to package instructions or use a double broiler. Using a fork, dip each ball in white chocolate, spooning over the top to completely coat. Place on wax paper to allow chocolate to harden. Add 2 drops of red food coloring to remaining white chocolate and combine. (Or you can use the Wilson candy melts). Using a fork or icing bag, drizzle pink chocolate over truffles. Enjoy.

Fold in the whipped cream; set aside. , Drain strawberries, reserving juice; set the berries aside. Gently toss cake cubes with reserved juice. Place half of the cake in a 4-qt. trifle dish or serving bowl. Top with a third of the cream cheese mixture, half of the strawberries and half of the grated chocolate. Repeat layers. I modified this recipe to make an easy trifle for my cooking class. The results are fantastic!!! This is definitely the class favorite! Try making it with other seasonal fruits...it's great with fresh peaches!

- In a bowl, toss strawberries with sugar; set aside.
- In a mixing bowl beat cream cheese and orange juice until smooth.
- Fold in Cool Whip. Set aside.
- Cut pound cake into 1/2 inch cubes.
- Drain strawberries, reserving juice.
- Gently toss cake cubes with reserved juice.
- Place half of the cake cubes in a 4 quart trifle dish or clear serving bowl.
- Top with a third of the cream cheese mixture and half of the strawberries.
- Repeat layers.
- Top with remaining cream cheese mixture.
- Garnish with strawberries, cut into fans.
- Cover and refrigerate 4 hours.
- (I've been impatient and served this almost immediately and it's still great!).

- In a large bowl, beat cream cheese and powdered sugar until fluffy; add sour cream, 1/2 teaspoon vanilla and the almond extract; set aside.
- Fold the cool whip into the cream cheese mixture.

- To make the base, butter and line a 23cm loose-bottomed tin with baking parchment. Put the digestive biscuits in a plastic food bag and crush to crumbs using a rolling pin. Transfer the crumbs to a bowl, then pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. - Slice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined. Holding onto the tip of the pod, scrape out the seeds using the back of a kitchen knife.
- Pour the double cream into a bowl and whisk with an electric mixer until it's just starting to thicken to soft peaks. Place the soft cheese, icing sugar and the vanilla seeds in a separate bowl, then beat for 2 mins with an electric mixer until smooth and starting to thicken, it will get thin and then start to thicken again. Tip in the double cream and fold it into the soft cheese mix. You're looking for it to be thickened enough to hold its shape when you tip a spoon of it upside down. If it's not thick enough, continue to whisk. Spoon onto the biscuit base, starting from the edges and working inwards, making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon or spatula. Leave to set in the fridge overnight.
- Bring the cheesecake to room temperature about 30 mins before serving. To remove it from the tin, place the base on top of a can, then gradually pull the sides of the tin down. Slip the cake onto a serving plate, removing the lining paper and base. Purée half the strawberries in a blender or food processor with the icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries onto the cake, and pour the purée over the top.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch springform pan.
- Combine cream cheese, sugar, and almond extract in a bowl and whip using an electric mixer on low speed until combined. Beat in eggs 1 at a time. Pour into the prepared pan.
- Bake in the preheated oven until set, 30 to 35 minutes. Remove from the oven and let cool for 1 hour; refrigerate for at least 3 hours more.
- Scoop cheesecake into small balls using a melon baller or a tablespoon-sized scoop. Place on a wax paper-covered cookie sheet. Freeze cheesecake balls, 8 hours to overnight.

- Using a handheld mixer or a food processor, mix the graham cracker crumbs, cream cheese, and confectioners’ sugar together. It may not come together at first, but if you keep mixing– and even use your hands for a minute– it will all come together to form 1 big clump. With a rubber spatula or wooden spoon, stir in the strawberries. The mixture will be wet from the strawberries.
- Drop balls– about 1.5 – 2 teaspoons of mixture per truffle– onto the lined baking sheet. Chill in the refrigerator for 30 minutes. During this time, the truffles will “set” making them easier to roll into smooth balls. Roll into smoother balls after they’ve been refrigerated. Place back into the refrigerator as you melt the chocolate.
- Melt the white chocolate in a double boiler or the microwave. (Alternatively, you can temper the chocolate.) If using the microwave: place the chocolate in a medium heat-proof bowl. I like to use a liquid measuring cup. Its depth makes it easier for dipping. Melt in 15 second increments in the microwave, stirring after each increment until completely melted and smooth.

- Melt milk chocolate in a microwave safe dish. For this step, I used a glass measuring glass and placed it in the microwave for about 3 minutes on power level 4! Stir chocolate until smooth. Next, using a 2 Prong Fork Dipping Tool from Chocoley, place cold cheesecake ball slightly on the tip of the prong and dip into the melted chocolate, twirling it to make sure it's covered. Pull out and allow to drip. Using a small spatula, twirl the chocolate and using the tip of the spatula to go around the truffle at the bottom, removing excess chocolate then carefully place on parchment paper. Refrigerate truffles to harden.
