1 Tbsp + 1 tsp canola oil
1 head broccoli, cut into florets
1-2 zucchini, sliced
2 Tbsp soy sauce (or Bragg's liquid amino)
2 clove garlic, minced
2 tsp fresh lemon juice

Steps:

  • 1. Heat oil in a large wok or high-sided skillet over medium-high heat. Add broccoli and zucchini and stir-fry for 2 minutes.
  • 2. Add soy sauce, garlic, and lemon juice.
  • 3. Continue to stir fry until broccoli is crisp and zucchini is tender about 5 - 10 minutes. Serve hot.

  • Place a medium saute pan over medium heat. When hot, add the olive oil and then the garlic. Cook, stirring frequently, for one minute. Add the zucchini along with a pinch or two of salt and black pepper. Saute, stirring occasionally, until bright green and fork tender, 3-4 minutes. Remove from heat and top with basil leaves. Add additional salt and pepper if desired. Serve.

1 tablespoon oyster sauce
5 tablespoons water

Steps:

  • Mix all the ingredients in the Brown Sauce, stir well and set aside.
  • Heat up your pan/skillet/wok and add the oil. When the oil is heated, add the ginger and stir-fry until aromatic, follow by the shrimp. Stir-fry the shrimp until the surface turns opaque, then add in the zucchini, carrots, and mushrooms.
  • Toss and stir-fry for about 30 seconds.
  • Add the Brown Sauce (stir right before using), stir to combine well with the ingredients. Once the sauce thickens, dish out and serve immediately with steamed rice.

2 medium zucchini (approx 1 lb.)
1/2 teaspoon salt
1 tablespoon soy sauce
2 teaspoons hoisin sauce
2 teaspoons dry sherry
1/2 teaspoon sesame oil
1 tablespoon canola oil (or peanut oil)
1 teaspoon garlic, minced (1 clove)
1 teaspoon chili flakes
1/2 teaspoon sesame seeds, toasted

Steps:

  • Quarter zucchini lengthwise.
  • Slice off the soft seed core; it's ok if some seeds remain.
  • Arrange the zucchini, cut side up, on paper towels.
  • Sprinkle with salt, set aside for 10 mins.
  • Blot the zucchini quarters dry with paper towels.
  • Cut quarters into 2 inch lengths.
  • Mix soy sauce, hoisin, sherry and sesame oil in a small bowl.
  • Heat a wok or large skillet over med-high heat for 1 min.
  • Pour in canola/peanut oil; when oil starts to shimmer and ripple (very hot), add zucchini.
  • Saute until zucchini browns and softens slightly (don't overcook- it might turn mushy), about 4 mins.
  • Add garlic and chilli flakes, saute for about 15 sec.
  • Add the sauce mixture, stir and cook just long enough for liquid to reduce and coat the zucchini (about 20 sec).
  • Remove from wok, sprinkle with toasted sesame seeds and serve immediately.

2 Tbsp soy sauce, (or more to taste)
4 tsp cornstarch
3/4 cup low-sodium chicken broth
1 Tbsp oyster sauce
1 tsp toasted sesame oil
1 Tbsp honey (or brown sugar**)
1 lb. boneless skinless chicken breasts*, (cut into 1-inch pieces)
2 Tbsp vegetable oil (or light olive oil)
1 1/2 cups sliced carrots ((about 3 medium, cut about 1/6-inch thick))
1 small yellow onion, (sliced (1 small))
2 1/2 cups broccoli florets, (chopped into bite size pieces, rinsed and leave water that clings to broccoli)
1 medium red bell pepper, (seeded and sliced into 1 1/2-inch long strips)
1 1/2 cups sugar snap peas, (sliced into halves if larger)
1 Tbsp peeled and finely minced fresh ginger
3 cloves garlic, (minced)

Steps:

  • In a small mixing bowl whisk together soy sauce with cornstarch, then whisk in chicken broth, oyster sauce, sesame oil and honey. Set aside.
  • Heat 1 Tbsp oil in a non-stick 12-inch skillet (that's deep, or use a saute pan or wok) over medium-high heat.
  • Dab chicken dry with paper towels, season with a pinch of salt. Add chicken to skillet spacing pieces apart in an even layer.
  • Cook chicken through, turning halfway through cooking, about 6 minutes total (center should be 165 degrees and should no longer be pink). Transfer to a plate or sheet of foil, leaving oil in skillet.
  • Add another 1 Tbsp oil to skillet. Add in carrots and onions and saute 4 minutes.
  • Add in broccoli, bell pepper, peas, ginger and garlic and saute until nearly tender about 4 minutes.
  • Whisk soy sauce mixture once more, then pour into pan and cook, tossing constantly, until sauce has thickened and veggies are tender, about 1 - 2 minutes.
  • Toss in chicken. Season with more soy sauce to taste if desired.
  • Serve immediately over white or brown rice. If desired sprinkle with red pepper flakes or sesame seeds or drizzle with sriracha.

1 tbsp fresh parsley
4 tbsp extra virgin olive oil
4 tbsp Parmigiano Reggiano cheese

Steps:

  • First, peel and crush the cloves of garlic.
  • Then, rinse zucchini and cut them into rounds long 2 inches, then cut zucchini chunks into quarters.
  • After that, drop the olive oil into a pan and place over medium heat. When the oil is hot but not smoking, pour the garlic.
  • Now, sautè the garlic until golden, then take out from the pan and save it aside. Raise the flame, then pour zucchini into the pan.
  • Finally, Sear zucchini until golden brown, stirring occasionally.
  • When the zucchini are golden brown, lower the heat and add 2 tbsp of grated Parmigiano Reggiano cheese and the golden garlic we previously saved.
  • Salt as needed, stir well and cover with a lid.
  • Then, cook until are zucchini well cooked but not mushy.
  • Turn off the heat and complete pan fried zucchini with the remaining of grated cheese, a dash of black pepper and a sprinkle of minced fresh parsley.
  • Eventually, cover with the lid and rest 5 minutes far from the heat before serving.

2 scallions, separate white from green parts, thinly sliced
5 dried red chilies, seeded and roughly chopped
450 gram (~ 1 lb.) zucchini, cut into bite size wedges
2 tablespoon soy sauce
1 tablespoon sugar
2 tablespoon Shaoxing wine
1 tablespoon Chinese black vinegar
corn starch slurry (1 teaspoon corn starch + 2 teaspoon water, mix well)
1 teaspoon sesame oil

Steps:

  • Heat oil in a frying pan over medium high heat. Once oil is hot, sauté garlic, white parts of scallion, and red chilies until fragrant, about 1 minute.
  • Add zucchini into the pan, stir to mix well, and cook for 2-3 minutes, until the zucchini is tender but still crispy.
  • Mix together soy sauce, sugar, Shaoxing wine, and Chinese black vinegar, then pour this sauce mixture into the pan. Gently toss to coat the zucchini.

1 pound boneless (skinless chicken breasts (or thighs or tenders), thinly sliced then cut into bite-sized pieces)
4 tablespoons low sodium soy sauce (divided)
2 teaspoons apple cider vinegar (divided)
2 teaspoons granulated sugar (divided)
1 tablespoon minced fresh ginger
3 cloves minced garlic (about 1 tablespoon)
2 tablespoons water
1 teaspoon cornstarch
1/4 teaspoon red pepper flakes
2 medium zucchini (yellow squash, or a mix)
1 large red or yellow onion
2 tablespoons extra virgin olive oil

Steps:

  • In a large bowl, combine the chicken, 1 tablespoon soy sauce, 1 teaspoon apple cider vinegar, and 1 teaspoon granulated sugar. Set aside while you prep the remaining ingredients.
  • In a small bowl or large liquid measuring cup, stir together the remaining 3 tablespoons soy sauce, remaining 1 teaspoon apple cider vinegar, remaining 1 teaspoon sugar, the ginger, garlic, water, cornstarch, and red pepper flakes. Set aside.
  • Trim off the ends of the zucchini. Cut in half lengthwise, then place the flat, cut sides on the counter. Slice crosswise into ¼-inch thick half moons. Thinly slice the onion.
  • In a wide skillet, heat 1 tablespoon of the olive oil over medium-high heat. Once the oil is hot, add the chicken and its marinating liquid. Saute until the chicken is golden brown on the outsides and fully cooked through, about 3 to 4 minutes. Remove to a plate.
  • Heat the remaining 1 tablespoon oil. Add the onion. Cook until tender and beginning to brown, 4 to 5 minutes.
  • Give the sauce one more stir, then add it to the pan. Let cook 30 seconds, then add the sliced zucchini. Cook just until the zucchini begins to soften, about 3 minutes more.
  • Remove from the heat, then stir in the reserved chicken. Serve hot with a sprinkle of sesame seeds and green onion as desired.

1 small onion (sliced)
½ cup bell peppers ((sliced thin))
¾ tablespoon garlic (chopped (1 clove))
½ teaspoon ginger (chopped (optional))
1¼ tablespoons oil ((sesame or olive oil))
1 teaspoon soya sauce
1 teaspoon vinegar ((I used apple cider))
¾ teaspoon black pepper ((coarse crushed))
1 teaspoon toasted sesame seeds (or 2 tbsps roasted & crushed peanuts)

Steps:

  • Rinse all the veggies. Slice onions and bell peppers thin. Chop zucchini to ¼ inch thickness. Chop ginger and garlic.
  • Pour oil to a hot pan. Stir fry ginger and garlic for 30 seconds.
  • Add onions and fry until transparent. Then stir fry bell peppers for 30 seconds.
  • Next add zucchini and stir fry on a high heat until half done yet crunchy. Do not over cook as they tend to turn too soft.
  • Then pour soya sauce and vinegar. Add black pepper. Stir fry just for 30 to 60 seconds.
  • Turn off the heat and sprinkle toasted sesame seeds or roasted & crushed peanuts.
  • Serve zucchini stir fry as a side or in your wraps and sandwiches.
