MEATBALLS IN BEEF GRAVY
For the best flavor I recommended to brown the meatballs in the skillet, the browned bits in the skillet will add flavor to the gravy, I have listed the yield for 4 please be aware that it is for four smaller size portions if you like lots of gravy then you may want to double the recipe ---prep time does not include preparing the meatballs --- serve with mashed potatoes

MEATBALLS AND GRAVY
"CHRISTMAS was the time when our family forgot about the food budget and splurged on one special meal. I can still see Grandmother making dozens of these little meatballs! The hint of spices gives them a savory taste that makes them authentically Norwegian."

This is such a delicious and comforting meal. It is really very easy and I recommend making the meatballs rather than using frozen ones. I like to serve buttered noodles as a side or over mashed potatoes! Recipe is from Family Circle.

FEARLESS SKILLET GRAVY
A quick, easy, and versatile gravy recipe for all the gravy-loving folks out there! So let's leave those lumpy gravy fears behind, get out the whisk, and demote that can of brown gravy you bought at the supermarket to door-stopper! It's time to keep it real and fill every inch of your home with 100% authentic gravilicious aroma! Now there's a whole slew of ways to make gravy, but my favorite is using a well-seasoned iron skillet to do the job. Don't have one? All good! You can use any skillet or saucepan you like, but an iron skillet is truly the best. Not just because it's the method my grandma and great grandma used (and pretty much everyone in the South) but I love the nostalgia of a good old skillet, and the unique flavor it infuses into the gravy will have you hankering for more. This is a basic recipe for gravy that shows the gist of what makes gravy "gravy". I've also added a few whistle-and-bell options for those who'd like to expand their gravy horizons! Have fun :)

- In a large skillet saute your diced onions and garlic in 1 tablespoon of oil on medium heat. Cook until onion is translucent, approximately 3 minutes. Remove from heat.
- In a large bowl, combine ground beef, egg, parsley, salt, pepper, nutmeg, and allspice with the sauteed onion and garlic. Use your hands to thoroughly combine ingredients. Then roll into evenly sized meatballs about 1 1/2 inches in diameter. This will yield approximately 30 to 32 meatballs. (You can make larger meatballs if you prefer but they will require more time to cook through. If your meatballs are 2 inches in diameter you'll have around 20 to 22 meatballs.)
- Add remaining 1 1/2 tablespoons of oil to skillet. Add meatballs to skillet and brown all sides, flipping as needed. If using a 12" skillet you should be able to fit all the meatballs at one time. If using a smaller skillet, saute meatballs in batches. Remove meatballs from skillet and set aside once they're browned and almost cooked through.
- To make the gravy, add ghee (or another cooking fat) and arrowroot flour to skillet. Whisk together and let simmer until bubbly. (It may have a gel consistency and that's okay as it will thin out when we stir in other gravy ingredients.) Whisk in beef stock, coconut aminos, salt, pepper, and allspice. Increase heat to medium-high. Add meatballs back into skillet with the gravy. Simmer for 8 to 10 minutes or until meatballs are cooked through and gravy is a bit thicker. Serve over my Light & Creamy Mashed Potatoes, roasted veggies, or mashed cauliflower.
