3 medium Yukon Gold potatoes (about 1 lb.)
3 tbsp. unsalted butter
1/2 tsp. kosher salt, plus more to taste
1/4 tsp. black pepper, plus more to taste
2 c. cooked corned beef, diced
1 c. yellow onion, diced
1 c. green bell pepper, diced
1 clove garlic, finely chopped
4 sunny-side up eggs
Hot sauce, for serving

Steps:

  • Place the potatoes on a microwave-safe plate. Prick 2 to 3 times each with a fork. Microwave on high for 6 minutes, turning once, until you can press a fork into the potatoes easily (for large potatoes, this might take a couple of minutes longer). Let cool to room temperature, then dice.
  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the diced potatoes in a single layer, sprinkle with the salt and pepper and let cook until golden brown on one side, about 4 minutes. Flip the potatoes and cook, flipping occasionally, until crispy on all sides, about 4 more minutes. Transfer potatoes to a plate.
  • Return the skillet to medium heat and add the remaining 1 tablespoon of butter, the corned beef, onion, and bell pepper. Cook and stir occasionally until the corned beef starts to brown and the vegetables soften, about 8 minutes. Stir in the garlic and cook 2 more minutes. Add the potatoes to the skillet and more salt and pepper, if you like. Stir to combine and reheat the potatoes for a couple of minutes.
  • Serve with a fried egg and a few dashes of hot sauce, if preferred.

Steps:

  • 1.Melt butter in a large deep skillet over medium heat.
  • 2.Add potatoes; cook 10 minutes or until lightly browned, stirring occasionally. Meanwhile, finely chop corned beef. Combine half and half and mustard; mix well. Stir corned beef and mustard mixture into potatoes; cook 2 minutes. With the back of a large spoon, make four indentations in potato mixture. Drop eggs into indentations; sprinkle with salt and freshly ground black pepper, if desired. Cover skillet; cook about 4 minutes or until eggs are cooked to desired doneness. Serve with ketchup or chili sauce, if desired.

8 ounces cooked corned beef, diced
1 white onion, finely chopped
1 bell pepper, finely chopped
2 medium baking potatoes, peeled and shredded (about 2 cups)
4 tablespoons unsalted butter
4 large eggs
Kosher salt and freshly ground pepper
4 slices cheddar cheese (about 2 ounces)

Steps:

  • Heat the oil in a medium skillet over high heat. Add the corned beef and cook, stirring with a wooden spoon, until it releases some fat and browns slightly, about 3 minutes. Stir in the onion, bell pepper and potatoes and cook, undisturbed, until brown and crisp on the bottom, about 6 minutes. Continue cooking, turning the hash as it browns evenly, about 15 more minutes.
  • Meanwhile, heat the butter in a nonstick skillet over medium-high heat. Fry the eggs sunny-side up or over easy; season with salt and pepper.
  • Place the cheese slices on top of the hash, reduce the heat and let sit until the cheese melts, about 1 minute. To serve, top each portion of hash with a fried egg.

500g potato, peeled and chopped
2 tbsp vegetable oil
1 onion, roughly chopped
340g can corned beef, cut into cubes
2 tbsp Worcestershire sauce
baked beans and a little curly parsley, roughly chopped, to serve (optional)

Steps:

  • Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for about 6-7 mins, then drain.
  • Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about 5 mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again. Season a little, then serve with baked beans and a sprinkling of parsley, if you like.

1 large sweet potato, diced small

2 to 3 dashes Worcestershire sauce

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the diced russet and sweet potatoes with 2 tablespoons of the olive oil and season with a pinch of salt and pepper. Place onto a baking sheet and roast until golden and crisp, 16 to 18 minutes.
  • Heat 2 tablespoons of the olive oil in a large skillet over a medium heat. Add the garlic and onions and cook until the onions are translucent and starting to turn golden, 4 to 5 minutes. Add the corned beef, potatoes and steak seasoning. Cook for another couple of minutes to heat the corned beef through. Add the Worcestershire sauce and stir.

4 slices bacon
4 tablespoons butter
1 head green cabbage, coarsely chopped

8 ounces deli corned beef, thinly sliced, then cut into strips

Steps:

  • Cook the bacon in large skillet over medium heat until almost crisp. Remove the bacon from the pan and set aside.
  • Melt the butter in the pan with the bacon grease. Add the cabbage, stirring well to coat the cabbage in fat.
  • Add about 1/3 cup water, and salt and pepper, to taste. Cover pan with a lid, and cook over medium heat for about 10-15 minutes.
  • Meanwhile, chop the bacon into small pieces and cut the thinly sliced deli corned beef into strips.
  • Remove the lid from the pot, and scatter corned beef and chopped bacon over top of the cabbage. Cover and cook until desired doneness.
  • I personally like a little bit of crunch left to the cabbage.

1 (12 ounce) can corned beef
2 stalks green onions, finely sliced
1 medium carrot, grated
1 large potato, cubed
1 large egg, beaten
2 teaspoons garlic powder
freshly grated black pepper, to taste
panko breadcrumbs (for dredging) or flour (for dredging)
oil (for frying)

Steps:

  • Boil cubed potato in salted water till tender, drain and allow to cool.
  • Combine the rest of the ingredients and mix well, mashing the potato into small chunks throughout the mixture.
  • Chill for 2-3 hours or overnight.
  • Heat enough oil in pan to evenly coat the bottom. (we are not deep frying these!).

My mom sent me this recipe from the March 18, 2009 Orlando Sentinel. It is from a syndicated column called "Seriously Simple" by Diane Rossen Worthington. The article reads: "Corned beef and cabbage might be the ultimate simple recipe. What could be easier than slowly cooking a corned beef with winter vegetables? Not much. I use St. Patrick's Day as an excuse to serve the dish for dinner; but I mostly like it for corned beef hash later in the week. Corned beef hash had become so popular in America by the mid-19th Century that diners and lunch counters offering some form of the dish on their menus were nicknamed hash houses. One variation on this dish is red flannel hash, which is made by adding 2 or 3 cooked, peeled and cubed beets to the mixture. Adding briny cooked cabbage brings in a bold flavor dimension. I like to serve the hash in small ramekins for brunch with scrambled eggs or poached eggs." The recipe recommends the following: "Also try Yukon gold potatoes for the hash. The hash may be prepared up to 2 days ahead, covered and refrigerated. Reheat in a skillet over medium heat. Serve the hash topped with poached eggs, if you like." I haven't tried this yet, but putting it here for safekeeping. Let me know how you like it! I will say I like my hash baked in individual ramekins with an egg nested into each one to bake. If you do this, my general rule is 325 for 30 minutes or until the egg is set as much as you like. Enjoy!

  • Cook hash, flattening with a spatula as it cooks, over medium-high heat until a slight crust forms on the bottom, about 10 minutes. Occasionally run the spatula around the edges of the skillet to keep the potatoes from sticking. Turn the mixture over; cook, stirring often, until crusty and browned, about 14 minutes. Serve on a platter or in ramekins. Garnish with parsley sprigs.
