Number Of Ingredients 6

A few tablespoons seafood seasoning, such as Old Bay, to taste
3 pounds new potatoes
Two 16-ounce packages cooked kielbasa sausage, cut into 1-inch pieces
8 ears fresh corn, shucked and cut into halves or thirds
4 pounds frozen crab legs
4 pounds fresh shrimp, shells on

Steps:

  • Heat a large pot of water over medium-high heat indoors or outside. Add the seafood seasoning to taste and bring to a boil. Add the potatoes and sausage and cook until the potatoes are fork-tender, about 10 minutes. Add the corn and cook until cooked, about 5 more minutes. Add the crab and cook another 5 minutes. Add the shrimp and cook until they turn pink, another 3 or 4 minutes.

Easy Seafood Quinoa Paella image

a splash of olive oil
1 finely chopped onion
400g (1 can) chopped plum tomatoes
1 cup quinoa
2 cups hot water
1 tbsp each thyme and paprika
1 cup seafood mix (prawns/ squids /mussels)
a bunch of fresh parsley
1 - 2 lemons
salt to taste

Steps:

  • Heat the oil in a large pan and cook the onion for a few minutes with the lid on until it softens.
  • Add the quinoa with the paprika, thyme and tomatoes. Cook for 1 minute and then add the boiling water.
  • Cook uncovered for about 15 minutes or until most of the water has evaporated.
  • Add the seafood mix and put the lid on, cook for about 5 mins. If frozen you may need to add a few minutes.
  • Squeeze over 1/2 lemon or a whole one, I personally prefer more than half. Sprinkle the fresh parsley and serve with some extra lemon wedges.

A one-pot wonder inspired by a recipe from Chilean chef Maria Eugenia Terragno. I make this with homemade lean turkey chorizo to cut down on calories.

2 cups quinoa, rinsed well
2 tablespoons olive oil
1 lb chorizo sausage, peeled
5 garlic cloves, coarsely chopped
2 red bell peppers, seeded and roughly chopped
1 serrano pepper, minced
1 onion, chopped
2 teaspoons salt
1/2 teaspoon black pepper
1 cup frozen lima beans
1 (15 ounce) can cannellini beans
2 tomatoes, seeded and chopped
4 cups chicken stock
2 tablespoons parsley, chopped
2 lemons, cut into wedges

Steps:

  • Cover quinoa with cold water and soak for 15 minutes. Drain and set aside.
  • Heat a large saucepan over medium-high heat; add the quinoa and cook, stirring, until toasted, for 15 minutes. Transfer to a bowl and set aside.
  • Return pan to medium heat. Add oil and chorizo; cook, stirring occasionally to break chorizo into pieces, for about 10 minutes.
  • Add garlic, bell peppers, serrano pepper, onion, salt and pepper. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.
  • Stir in quinoa, both beans, tomatoes, and stock. Bring to a boil, reduce heat to low and cook uncovered until liquid is slightly reduced, around 15 minutes. Remove from heat and cover; let sit for 10 minutes.
  • Uncover and stir in parsley. Serve with lemon wedges on the side.

  • Finely mince 3 cloves of garlic, finely dice 1/2 of an onion, cut 1 cleaned tube of squid into 1/2 inch by 1/2 inch squares and season 12 raw peeled & deveined jumbo shrimp with sea salt and freshly cracked black pepper (I bought mine frozen and thawed them out)
  • Add 2 cups of fish broth into a sauce pan, pinch 1/2 teaspoon of saffron threads and heat it with a medium-high heat
  • In a seperate burner heat a large fry pan with a medium-high heat and add in a generous 2 tablespoons of extra virgin olive oil, after 1 minute season the oil with sea salt and add in the squid, mix with the olive oil, after 1 minute remove the squid from the pan and set aside
  • Using the same pan with the same heat add in the diced onions and minced garlic, mix with the olive oil, 2 minutes later add in 1/2 tsp of sweet smoked paprika and mix together, then pour in 1/2 cup tomato sauce, season with sea salt & freshly cracked black pepper and add the squid back into the pan, mix together until well combined
