3 cloves of garlic
50 g mature Cheddar cheese
50 g stale bread
2 teaspoons dried oregano
olive oil
4 higher-welfare sausages
1 pinch of dried chilli flakes
3 x 400 g tins of quality plum tomatoes
400 g dried rigatoni

Steps:

  • Preheat the oven to 200ºC/400ºF/gas 6.
  • Peel and finely slice the garlic. Coarsely grate the Cheddar. Tear the stale bread into small chunks or blitz in the food processor.
  • Tip the breadcrumbs into a bowl with one of the sliced garlic cloves, a good pinch of the oregano, the grated cheese and a pinch of sea salt and a sprinkling of black pepper. Drizzle with a little oil and toss to mix it all together.
  • Pop the sausages out of their skins and break each one into 4 equal pieces. Roll each piece into a ball shape and place in an ovenproof dish. Drizzle over a little oil and roll to coat. Bake in the oven for about 10 minutes, or until golden and cooked through.
  • Heat a little oil in a frying pan over a medium heat. Add the remaining sliced garlic and oregano, and the chilli flakes. Stir until the garlic is coloured, then tip in the tomatoes.
  • Add a pinch of salt and pepper, bring to the boil, then reduce the heat and simmer for 10 minutes, stirring occasionally.
  • Cook the rigatoni according to the packet instructions, taking it off the heat 2 minutes early, so it's al dente. Drain in a colander and tip into a large baking dish.
  • Add the sausage balls, pour over the sauce and toss well. Sprinkle over the cheesy crumb mix and bake for 15 minutes, or until golden on top and bubbling.

A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

1 (12 ounce) package macaroni
1 egg
2 cups milk
2 tablespoons butter, melted
2 ½ cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
  • In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.
  • Whisk the egg and milk together in a large cup. Add butter and cheese to the egg and milk. Stir well.
  • Place the lightly cooked macaroni in the prepared baking dish. Pour the egg and cheese liquid over the macaroni, sprinkle with salt and pepper, and stir well. Press the mixture evenly around the baking dish.
  • Bake uncovered, for 30 to 40 minutes, or until the top is brown.

This big dish is guaranteed to be a crowd-pleaser - you can never make too much of this kind of food

150ml olive oil
2 large onions , finely diced
2 garlic cloves , crushed
100g fresh breadcrumb
50ml milk
500g quality beef mince
500g Italian sausage (about 8), meat squeezed from the skins
good handful chopped parsley
200ml red wine
2 x 400g cans chopped tomatoes
500g pack macaroni
50g butter
50g plain flour
600ml milk
100g grated tasty cheese , such as mature cheddar or gruyère

Steps:

  • Make the white sauce. Melt the butter in a medium pan, then stir in the flour. Keeping the heat high, whisk in the milk and bring to the boil, whisking until smooth and thickened. Season with a good pinch of salt and some pepper, then stir in most of the grated cheese and set aside, with the surface covered with cling film to stop if forming a skin.
  • Heat the oil in a large, heavy-based casserole or frying pan, then add the onions and garlic and a real good grind of black pepper and salt. Cook slowly and gently until the onions are soft but not coloured. Take half the mix out and mix with the breadcrumbs and milk in a large bowl. Using a slotted spoon, lift the rest of the onions out of the pan, leaving the oil behind, and set aside.
  • Mix the mince and sausagemeat, chopped parsley and lots of salt and pepper into the breadcrumbs. Mix really well with your hands until the whole thing becomes pasty rather than lumpy. Shape into the size of ping-pong balls, then heat the pan again and brown the Simply serve with a fresh green salad balls in batches in the leftover onion oil. Remove the final batch, then return the reserved onions to the pan with the wine. Bubble over a high heat, scraping the bottom of the pan, then stir in the tomatoes and meatballs. Bring to a simmer and cook for 5 mins. Can be made up to 2 days ahead or frozen.
  • Heat oven to 200C/180C fan/gas 6 and boil the macaroni according to pack instructions. Drain well, then mix with the meatball sauce. Tip into the largest ovenproof dish you have. Top with the white sauce (warm it a bit if it is slightly solid), then scatter with the remaining cheese. Bake for 35-40 mins until bubbling and golden.

2 tablespoons butter
1 lb sage sausage, browned, broken into chunks and drained of grease (Weber brand was my Mom's favorite, but I prefer Jimmy Dean's)
1 (16 ounce) jar spaghetti sauce (Classico was the only brand Mom would use for this.)
1 (6 ounce) jar sliced button mushrooms, drained
1 (16 ounce) package shredded mozzarella cheese
1/2 cup romano cheese, grated (Kraft)

Steps:

  • In a 2 quart, ungreased casserole dish, layer twice: 1/2 cooked macaroni, 1/2 cooked sausage, then 1/2 sauce, 1/2 mushrooms, 1/2 shredded cheese. Do the same layering again.
  • Sprinkle Romano cheese on top.
  • Bake in a preheated 350 degree oven for 30-40 minutes, until cheese is slightly browned and casserole is bubbly.

½ cup diced onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain.
  • Melt butter in a separate pot over medium heat. Cook and stir sausage and onion in melted butter until the onion is translucent, 5 to 7 minutes.

8 good quality pork sausages
1 tablespoon olive oil
2 onions, sliced thinly
Two cloves garlic, crushed
1 red pepper, diced
250g mushrooms, sliced

sea salt and freshly ground black pepper
200ml beef Stock (I use a stock pot)
One 400g can chopped tomatoes

Steps:

  • Preheat the oven to 180C/160Fan/Gas mark 4.
  • Drizzle a little of the oil in a large frying pan and gently fry the sausages. When they are brown, remove from the heat and set aside. Add the remaining oil and gently fry the onion on a low-medium heat for five to eight minutes or until softened. Add the crushed garlic and cook for a further two minutes.
  • Add the diced pepper and sliced mushrooms, tomato puree, mixed herbs and smoked paprika. Season with salt and pepper and cook for about 5 minutes or until the vegetables have softened. Pour in the beef sock and chopped tomatoes, turn up the heat slightly and allow to simmer for a couple of minutes. Transfer everything to a deep casserole dish and cook for 50-60 minutes, until bubbling and piping hot.
  • Check the casserole for seasoning and serve with buttery mash or baked potatoes.

16 ounces elbow pasta (or other short pasta shape)
1 tablespoon olive oil
1 cup chopped yellow onion
1 bell pepper (chopped)
3 cloves garlic (minced)
1 pound lean ground beef (or ground turkey)
32 ounces marinara sauce
½ teaspoon salt
¼ teaspoon pepper
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350° F. Lightly grease a 9x13-inch baking dish or other large rectangular baking dish.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions for al dente. Be careful to not overcook the pasta. Reserve ½ cup of the pasta cooking water and then drain the pasta. Return the drained pasta to the pot.
  • Meanwhile, heat the olive oil in a large skillet over medium high heat. Add the onion and bell pepper to the pan and cook, stirring often, until the vegetables soften, 3 to 4 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the ground beef to the pan. Crumble the beef and cook until it is browned.
  • Pour the marinara sauce and reserved ½ cup of pasta cooking water into the skillet. Stir in the salt and pepper. Bring to a simmer and reduce the heat to low. Simmer for about 10 minutes.
  • Pour the meat and sauce mixture from the skillet into the pot with the pasta. Stir. Stir in the shredded cheddar cheese. Transfer the pasta mixture to the prepared casserole dish. Top with the mozzarella cheese.
  • Bake for 20-25 minutes, until the casserole is hot and the cheese is lightly browned on top. Let stand for 5 minutes and then serve.

2 tablespoons extra-virgin olive oil, plus more for the baking dish
Kosher salt
1 pound rigatoni
1 pound sweet Italian sausage, removed from the casings
1 medium onion, sliced
1 medium bulb fennel, trimmed, cored and sliced
3 cloves garlic, chopped
1/4 teaspoon red pepper flakes
1 28-ounce can whole tomatoes, crushed by hand
1/2 cup heavy cream
1/2 cup fresh basil leaves, coarsely chopped
2 cups shredded mozzarella cheese (8 ounces)
1/2 cup grated parmesan cheese (1 ounce)

Steps:

  • Preheat the oven to 425 degrees F. Brush a shallow 3-quart baking dish with olive oil. Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente; you still want it to retain a little bite. Reserve 1/2 cup pasta water. Drain well.
  • Meanwhile, in a large Dutch oven over medium-high heat, add the olive oil. When the oil is hot, add the sausage and cook and crumble with a wooden spoon until no longer pink, about 4 minutes. Add the onion and fennel; cook until softened, about 10 minutes. Add the garlic and red pepper flakes and cook until the garlic is fragrant, about 1 minute. Add the tomatoes and season with salt. Bring to a simmer and add the cream. If the sauce is too thick, add a little water from the pasta. Turn up the heat to medium high and simmer rapidly to thicken the sauce and blend the flavors, about 10 minutes.
  • Add the rigatoni and basil and toss to coat the pasta with the sauce. Remove from the heat and stir in half each of the mozzarella and parmesan. Transfer the mixture to the prepared baking dish and sprinkle with the remaining mozzarella and parmesan. Bake until browned and bubbly, 15 to 20 minutes. Let sit 10 minutes before serving.

1/4 teaspoon ground black pepper
1 clove garlic, minced
2 tablespoons flour
2 cups whole milk
2 cups (8 ounces) shredded sharp Cheddar cheese
1 cup (4 ounces) American cheese, cut in cubes or shredded
Salt, to taste
8 ounces grape tomatoes, halved or quartered lengthwise
1/2 cup fine soft bread crumbs
1 tablespoon melted butter

Steps:

  • Gather the ingredients.
  • Cook the macaroni in boiling salted water following package directions. Drain and then set aside.
  • Heat the oven to 350 F.
  • Grease a 2 1/2- to 3-quart casserole.
  • Heat the olive oil in a large saucepan or sauté pan over medium heat. Crumble the sausage and add it to the pan along with the bell pepper and onion; cook, stirring and breaking up sausage, until sausage is no longer pink and vegetables are tender. Spoon off any excess grease and add the seasoning, pepper flakes, black pepper, and garlic.
  • Add the flour to the sausage mixture and cook for about 2 minutes longer, stirring constantly. Gradually stir in the milk. Continue cooking until thickened, stirring constantly. Stir in the cheeses and add salt, to taste.
  • Fold the macaroni and tomatoes into the sausage and sauce mixture. Spoon into the prepared casserole.
  • Combine the breadcrumbs with melted butter and sprinkle over the casserole.
  • Bake the for 25 minutes.
  • Increase heat to 400 F and bake for 5 to 10 minutes longer, until crumb topping is lightly browned.

  • In a skillet, sauté the sausage, onion, and green bell pepper, stirring, until the sausage is no longer pink. Pour off excess fat.

Kosher salt
1 pound elbow macaroni
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 red bell pepper, seeded and chopped
1 onion, chopped
2 1/2 cups half-and-half
1/4 teaspoon cayenne pepper
Two 8-ounce packages cream cheese, at room temperature
One 8-ounce block sharp Cheddar, grated
1 cup grated Gruyere

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
  • Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.
  • Carefully wipe out the pot, add the half-and-half and cayenne and bring to a simmer over medium heat. Simmer until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
  • Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.

1/2 tsp onion powder
1/2 tsp basil, dried
1/2 tsp oregano, dried
1/2 tsp garlic powder
1 Tbsp grated parmesan, romano, asiago cheese
1/2 c shredded mozzarella cheese
1 3/4 c pasta sauce of choice

Steps:

  • 1. Brown ground sirloin, Italian sausage and dried spices in a pan on the stove top. Cook macaroni in boiling water for 11 minutes, Drain in colander and run cold water over macaroni.
  • 2. Add cooked meat to a mixing bowl along with pasta sauce, macaroni and stir to combine. Pour in to a 9 x 6 baking dish sprayed with cooking spray.
  • 3. Top with the parmesan cheese and mozzarella cheese. Bake at 350° for 30 minutes.
