Dough
2 pounds all-purpose flour PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 ounce all-purpose flour
6 ounces granulated sugar
5 ounces raisins
4 ounces vegetable shortening
4 ounces butter (unsalted, room temperature)
2 tablespoons grated nutmeg
1 teaspoon ground bakers cinnamon
1 ounce table salt
1 cup water (100 degrees F)
4 ounces fresh yeast
1 cup pasteurized or fresh eggs
2 ounces rum extract
1 cup whole milk
Cinnamon-Sugar Mix
2 tablespoons cinnamon
1 cup sugar
Glaze
1 cup water
1/2 cup rum extract
6 ounces granulated sugar
Icing
2 ounces rum extract
2 ounces light corn syrup
1 ounce unsalted butter (melted)
12 ounces confectioners' sugar

Steps:

  • In a mixing bowl fitted with a dough hook, combine all dough ingredients. Mix for 20 minutes until dough is smooth, place on floured tray and let sit at room temperature for 10 minutes. Then refrigerate overnight. Preheat oven to 400 degrees F. Flour work surface and roll dough out 4 inches by 20 inches. Brush with melted butter (not in above ingredients) and sprinkle with cinnamon sugar mix as needed. Roll dough strips tightly together. With knife, cut into sections three fingers wide and place in greased (not in above ingredients) muffin pans. Place a towel over the buns and proof them (let them rise until double in size. Takes between 30 and 60 minutes, depending on the temperature of the room). Then bake in oven for 25 to 30 minutes or until done. Turn pans occasionally for even baking. I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

1 (12 ounce) box vanilla wafer cookies (such as Nilla®)
1 cup semisweet chocolate chips
¼ cup light corn syrup
¾ cup dark rum (such as Meyer's®)
1 cup confectioners' sugar, plus more for dusting

Steps:

  • Place vanilla cookies in a food processor and process into fine crumbs.
  • Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
  • Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
  • Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
  • Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

2 (.25 ounce) packages dry yeast
1 cup milk
¾ cup water
½ cup vegetable oil
¼ cup white sugar
1 teaspoon salt

Steps:

  • Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
  • Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
  • Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.

1 (8 ounce) package cream cheese, softened
5 cups powdered sugar
¼ cup rum
1 cup chopped nuts

Steps:

  • Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove and set aside to cool.
  • Meanwhile, beat cream cheese in a bowl with an electric mixer until creamy. Gradually beat in powdered sugar and rum; mix until well combined. Beat in melted chocolate.

They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

4 1/2 teaspoons dry yeast (2 8g packages)

Steps:

  • Mix 2 C flour& yeast in a large bowl.
  • In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.

  • Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).

2 tablespoons fast-rising yeast
¼ cup white sugar
2 cups warm water
2 tablespoons vegetable oil
6 cups all-purpose flour
2 teaspoons salt
1 egg white
2 tablespoons water

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Add oil, 2 cups of flour and the salt; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • Turn the dough out onto a lightly floured surface and divide into three equal pieces. Divide each big piece into 6 small ones. Form the pieces into rounds. Place the rounds into the prepared pan. Cover the rolls with a damp cloth or plastic wrap and let rise until doubled in volume, about 20 minutes.
  • Beat together the egg white and water. Gently brush the risen rolls with the egg wash and then bake at 350 degrees F (175 degrees C) for 15 minutes or until the rolls are golden brown.

I found this recipe in my mom's recipe box. It came from a restaurant in Washington DC, The Flagship, which was a family favorite when I was growing up.

1 cup milk, scalded
1/2 cup sugar
1/4 cup vegetable shortening
1 1/4 teaspoons salt
1/4 ounce dried yeast
1 egg
1 1/2 teaspoons rum extract
3 1/2 cups flour
2 teaspoons butter, melted
1/4 cup raisins, cut into pieces
1 cup powdered sugar
1 teaspoon rum extract
2 tablespoons hot water

Steps:

  • Pour scalded milk over 1/4 cup sugar, shortening and salt.
  • Cool to lukewarm and sprinkle yeast into it. Beat with rotary beater until smooth.
  • Add beaten egg and 1 1/2 teaspoons rum extract.
  • Add half the flour and beat with rotary beater until smooth.
  • Add remaining flour and mix until smooth. Cover with towel and let rise in a warm place (80 to 85 degrees) until double in bulk - about 3 hours.
  • Roll dough into 2 strips, each 12 inches long, 1/2 inch thick and 4 inches wide.
  • Brush top with melted butter and sprinkle with remaining 1/4 cup sugar and raisins. Roll up, pulling dough out at edges to keep it uniform.
  • It should be 15 inches long when rolled.
  • Cut rolls in crosswise slices 3/4 inch thick. Place in 3 inch greased muffin tins; cover with towel and let rise in a warm place until doubled in bulk.
  • Bake at 400 degrees for 15 to 20 minutes.
  • **To make icing, blend confectioners sugar, hot water and rum extract.
  • As soon as rolls are taken from oven, brush top with the icing.

  • For the Buns: dissolve the yeast in warm water and set aside for 10-15 minutes to proof.

  • Beat until well blended and add the yeast mixture.
  • Add the flour; beat until well mixed and the dough leaves the sides of the bowl.
  • Turn out on a floured surface and knead about 5 minutes, or until the dough is smooth and elastic.
  • Grease a large bowl and place the dough in it; turn to grease the top.
  • Cover and let rise in a warm place until doubled (about 1 1/2 hours).
  • Punch the dough down and divide in half.
  • Roll each dough half out on a floured surface to a 13x8" rectangle.
  • Brush with melted butter.
  • Combine the brown sugar, raisins and cinnamon and sprinkle over the dough rectangles.
  • Roll each rectangle from one of the long sides jellyroll style and seal the edges.
  • Slice in 1 1/2" slices and place 1" apart in a greased 13x9" pan and a greased 8" square pan.
  • Cover and let rise again for about 30 minutes, or until doubled again.
  • Bake at 400 degrees for 15-20 minutes or until golden; remove from pans and cool on racks.
  • While still warm, drizzle the glaze over the buns.
  • For the Glaze: Combine the powdered sugar, milk and rum flavoring; blend well.
  • Drizzle over buns.
