- Preheat your oven to 350F.
- In a small saucepan add the butter and melt over medium high heat. Add the rosemary, thyme, smoked paprika, dijon mustard, maple syrup and stir. Bring to a boil then remove from heat.
- Score the skin of the turkey thighs. Season your turkey thighs with salt and pepper. Pour about 3/4 of the maple/mustard mixture over the thighs and toss.
- Add the water to a roasting pan, then add the onion, celery, carrots, rosemary, and thyme. Place a roasting rack in the pan.
- Place the turkey thighs, skin side up, on the rack and brush with remaining maple/mustard glaze.
- Roast for 2 hours or until the internal temperature reads 175-180F, basting every 30 minutes with the juices from the pan.
- Remove from the oven and cover the thighs with aluminum foil. Let them rest for 10 minutes before slicing them.

- Preheat the oven to 425 degrees F (220 degrees C).
- Combine room temperature butter with thyme, rosemary, parsley, garlic powder, cayenne, salt, and pepper. Set aside.
- Pat turkey thighs dry with a paper towel; season with salt and pepper.

- Preheat the oven to 400 degrees.
- Lightly drizzle a small amount of oil on the bottom of the pan.
- Spread the sliced onions into a layer on the bottom of the pan.
- Season the turkey thighs on each side with salt, pepper and poultry seasoning to taste (the poultry seasoning is strong so use a light hand with this).
- Cut each pat of butter into smaller cubes and place them on various spots all over the skin on each turkey thigh.
- Place the turkey thighs, skin side up, on top of the onions.
- Roast for 50 minutes-1 hour until they reach an internal temperature of 165 degrees.
- Remove them from the oven and let them rest in a foil tent for 10 minutes. Serve immediately.

- Season the turkey thigh with sea salt and freshly ground pepper, add the marjoram, thyme, the vegetable mix and the garlic powder. Above it, pour sunflower oil and one cup of beer, resulting in a marinade, in which I left the meat for about an hour.
- Take an oven tray; I chose the heat-resistant glass tray and put the turkey thigh in it, along with the marinade. Add the apple and the pear, cut in two.
- Cover with aluminium foil and place it in the preheated oven at 200 degrees Celsius for one hour.
- Remove the aluminium foil and leave for about 15 minutes until it is copper. Sprinkle the meat with the juice from the tray from time to time.
- Serve with mashed potatoes and cucumber salad.

- Heat ovenproof pan over medium to medium high heat.
- Season turkey thighs with salt and pepper.

- In a large bowl or ziploc bag, combine turkey legs with vegetable oil, brown sugar, balsamic vinegar, Worcestershire sauce, paprika, salt and pepper. Toss to coat turkey in the marinade. If marinating in a ziploc bag, press the air out of the bag, seal tightly, and press the seasoning around the turkey legs to coat. Transfer turkey to the refrigerator and marinate for at least one hour. The longer, the better.
- Arrange onions, carrots, celery, and potatoes on a large roasting pan and place the roasting rack over the vegetables in the pan. Place the marinated turkey legs onto the rack. Drizzle any remaining marinade over the vegetables.
- Preheat oven to 375 F. Transfer the pan into the oven and bake for 1 to 1.5 hours (depending on the size of the turkey legs) until golden brown and the internal temperature for the turkey legs reaches 165 F.
- Turn the broiler on high and broil the turkey legs for 3-4 minutes to achieve an extra crispy skin. Make sure to monitor the colour of the turkey skin during broiling since it can burning very quickly.
- Serve with the vegetables and drizzle with the juices from the pan. You can also use the pan drippings to make an easy 2-ingredient turkey gravy and drizzle on top.

ROASTED TURKEY THIGHS

- Gather the ingredients and heat the oven to 350 F.
- Pat the turkey dry with paper towels. Never rinse the turkey before cooking it because the bacteria on the meat's surface will aerosolize and spread around your kitchen. A good pat dry is a reliable procedure and enough for the seasonings to adhere to the skin.

- Preheat your oven to 350° and drizzle olive oil into the bottom of a roasting pan.
- Pat the turkey thighs and drumsticks dry with paper towel.
- Insert your finger under the neat the skin of all turkey pieces, gently separating the skin from the flesh. Rub softened butter underneath the skin and over top of each turkey piece.
- Season with salt and pepper and place into your prepared roasting pan.
- Sprinkle with poultry seasoning and cover the pan tightly with aluminum foil.
- Roast the turkey on the middle rack of your preheated oven for 1 hour. Remove foil, and using oven mitts, tip the roasting pan and baste the turkey pieces with the pan juices.

- Once roasted, remove the turkey thighs and drumsticks from the pan and place on a platter and scatter with potatoes. Let the turkey rest for 15 minutes or so tented under foil before serving.

- Use a paper towel to pat dry the turkey thighs completely dry. Rub Italian seasoning, salt, and pepper evenly all over the thighs to season. Set aside on a plate for at least 10 minutes.
- Turn on the Sauté function on high on the instant pot. Add oil and heat until the hot oil sizzles, about 1 minute. Sear the turkey thighs for about 5 minutes on each side until golden brown. Note that the turkey doesn't need to be fully cooked at this point (and will not be).
