Ina Garten's Garlic-Roasted Potatoes from Food Network's Barefoot Contessa make the perfect classic side dish for any meal.

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
  • Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

  • Put a baking sheet in the oven and preheat to 450 degrees F. Cut 1 1/2 pounds large red-skinned potatoes lengthwise into eighths. Toss with 2 tablespoons olive oil, 1 pint cherry tomatoes, 3 sprigs rosemary, 3 smashed garlic cloves, and salt and pepper. Put cut-side down on the hot baking sheet and roast 15 minutes. Flip the mixture and roast 10 more minutes.

Skillet Roasted Potatoes image

2 lbs mini red potatoes or 2 lbs white potatoes
1 sprig fresh rosemary
2 cups chicken broth
2 tablespoons olive oil
1 tablespoon unsalted butter
1 teaspoon kosher salt (less if the broth is salty)
1 -2 tablespoon fresh chives, thinly chopped
fleur de sel

Steps:

  • Prepare potatoes and wash well in cold water.
  • Arrange in one layer in a large skillet so they are almost touching - they'll need room later when they are cracked open (nonstick pan works best).
  • Add rosemary, broth, oil, butter and salt.
  • Bring to a boil over high heat, reduce to medium, cover the pan, but leave the lid a lttle aside, and boil until potatoes are fork tender, about 20 minutes.
  • The liquid should still be about halfway up surrounding the potatoes; if not, add more broth or a little water until it does.
  • Remove the pan from heat, press on each potato with a spoon or 1/4 cup measure just until it cracks open.
  • Set the pan over medium-high heat and cook uncovered until the liquid has evaporated, let the potatoes sizzle until the bottoms have browned on one side, about 10 minutes.
  • Gently turn the potatoes and brown the other side, another 4 to 5 minutes.
  • Remove the pan from the heat and let rest for 5 minutes before serving.
  • Sprinkle with chives and serve.
  • Pass the fleur de sel so diners can sprinkle some on if they want!

  • In the prepared baking dish, toss the potatoes, tomatoes, basil, and garlic with the olive oil. Sprinkle with the rosemary.
  • Bake 20 to 30 minutes in the preheated oven, turning occasionally, until tender.

  • Cut 2 medium sized yukon gold potatoes into 1/2 inch thick cubes and add to a large bowl, then pour in a generous tablespoon of EVOO into the cut potatoes, season with sea salt and freshly cracked black pepper, toss together until well combined, add the potatoes into a baking tray lined with parchment paper and into a preheated oven, bake + broil option 250 C - 475 F
  • While the potatoes are roasting heat a large fry pan or skillet with a medium heat and add 2 tbsp of EVOO, 2 minutes later add the diced onions and minced garlic and mix with the oil, 3 minutes later add a generous 1/2 tsp of sweet smoked paprika and mix it all together, then add one 15 oz can of diced tomatoes, season with sea salt and freshly cracked black pepper and mix it all together, lower the fire to a low heat and simmer
  • After roasting the potatoes for 20 minutes, remove them from the oven and transfer them to the pan with the tomatoes, mix it all together until well combined, then crack in 3 large organic eggs and place a lid on the pan, after 4 minutes remove the lid and cook for an additional 1-2 minutes or until the eggs are cooked to your taste, remove from the heat, season the eggs with sea salt and freshly cracked black pepper and garnish with freshly chopped chives, enjoy!
