2 cups whole milk
3 tablespoons plus 1 teaspoon sugar
1/8 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In a large saucepan, combine the rice, milk, sugar and salt. Cook, uncovered, over medium heat until thickened, stirring often, about 20 minutes. Remove from the heat; stir in vanilla. Spoon into serving dishes. Serve warm. If desired, top with whipped cream, cinnamon and dried cranberries.

2 cups milk
1 cup leftover cooked rice
2 eggs
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon or to taste
1/3 cup raisins

Steps:

  • Gather the ingredients and preheat the oven to 300 F.
  • In a medium saucepan, heat the milk and rice over medium-low heat, stirring together frequently so the milk doesn't burn. Bring the mixture to a slow simmer.
  • In a separate medium bowl, combine the eggs, sugar, and vanilla.
  • Whisk about 1/2 cup of the hot milk mixture into the egg mixture to temper the eggs. Add all of the egg mixture to the saucepan of hot milk and rice, stirring constantly to avoid scrambling the eggs. Allow to cook until thick enough to coat the back of a spoon, about 175 to 180 F.
  • Add the cinnamon and raisins, stirring just to combine.
  • Finally, pour the rice pudding mixture into an 8 x 8-inch casserole or baking dish and bake in the preheated oven for 25 to 35 minutes. For a creamy texture, remove the rice pudding when it's lightly set with a slight jiggle. For a firm baked custard, cook until a knife inserted in the middle comes out clean.
  • Allow the rice pudding to cool slightly before serving.

I had a recipe for rice pudding that looked very easy and sounded pretty good. As we started putting it together, we found that we had to substitute a couple of items but it really turned out very good....

3 c milk (2% milk works)
1 c minute white rice, uncooked
1 medium red or green apple, diced
1/3 c raisins, dark or golden
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 Tbsp butter
1/3 c sugar (splenda works)
1/2 tsp salt
1/2 tsp almond extract (optional)
1 pkg (4 oz serving size) vanilla flavored instant pudding
1/3 c walnuts or pecans, chopped (optional)

Steps:

  • 1. In a medium saucepan, on medium-low heat, bring 1 cup of the milk to boil.
  • 2. Stir in rice, apple, raisins, cinnamon, nutmeg, butter, sugar, salt and extract (if using). Cover and reduce heat to low; simmer for 5 to 7 minutes. Remove from heat. Let stand 5 minutes.
  • 3. Meanwhile, in a medium bowl, combine remaining 2 cups milk with the instant pudding mix; whisk until smooth.
  • 4. Add rice mixture to prepared pudding; mix well. Stir in nuts.
  • 5. Cover surface of pudding with plastic wrap or airtight lid; cool 5 minutes.
  • 6. Serve warm or chilled, sprinkled with cinnamon (optional).

This stuff tastes just like Tapioca pudding! I wanted to make rice pudding, but didn't want to make a huge batch. Also, I wanted to start with already cooked rice and have no eggs or evaporated milk on hand. This is a VERY simple adaptation, low-fat, and turns out beautiful and creamy. This recipe can be quite easily doubled or even tripled if desired, just expect longer cooking time.

1 cup cooked rice (I use short grain white rice, but you can use any variety and length, just add more milk or cook for)
2 cups nonfat milk
1/4 cup sugar
1 teaspoon vanilla
1 dash salt
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Combine rice, milk, sugar, vanilla, and salt in medium sauce pan.
  • Put on medium-high heat and bring to light/moderate boil. Let boil for about 20 minutes until liquid has cooked down a bit and starts to thicken.(Stir often and be sure to watch so it doesn't boil over!) A little "skin" may form on top. This is what you want- it adds to the creaminess:).
  • In small bowl, combine cornstarch and water. Pour into rice mixture and stir. It should thicken up fairly quickly. If it doesn't thicken immediately, don't worry. Just keep at medium heat and stir frequently until it is of desired consistency.
  • Pour into bowls and serve immediately. You may top with cool whip if desired.

1 cup water
2 eggs or 4 egg yolks
1/2 cup sugar
1/2 cup raisins (optional)
2 1/2 cups milk (whole or 2%)
1/4 teaspoon salt
1/2 teaspoon cinnamon or 1/2 teaspoon nutmeg (whatever you prefer)

Steps:

  • Bring water and rice to a boil; reduce heat to low, cover, and simmer 14 min.
  • All water should be absorbed.
  • (alternately, use 1 cup of leftover cooked rice).
  • Heat oven to 325 degrees.
  • Beat eggs in ungreased 1 1/2 quart casserole dish.
  • Stir in sugar, raisins, milk, salt, and spice.
  • Stir in rice.
  • Bake uncovered 45 minutes; stirring occasionally.
  • Remove from oven and stir well.
  • It will still be pretty wet.
  • Let set for 15 minutes to thicken.
