1 tablespoon salt
2 cups white sugar
6 cups sliced cucumbers

Steps:

  • In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil. Boil until the sugar has dissolved, about 10 minutes.
  • Place the cucumbers, onions and green bell peppers in a large bowl. Pour the vinegar mixture over the vegetables. Transfer to sterile containers and store in the refrigerator.

1 large onion (sliced thin)
3 cups sugar
1/4 cup Kosher salt
2 cups white vinegar
1 teaspoon celery seed
1 teaspoon mustard seed
1 teaspoon turmeric

Steps:

  • Put sugar, salt, vinegar and spices in a gallon jar.
  • Shake well. Add sliced cucumbers and onion. Stir well.
  • Keep refrigerated and shake or stir well every day for four days. On the fifth day they are ready to eat.
  • Will keep in the refrigerator for about a month.

3 large cucumbers (weight will vary), peeled if desired
1 small white onion, very thinly sliced
5 large sprigs fresh dill
1 1/4 cups granulated sugar
2 cups white wine vinegar
1 teaspoon sea salt

Steps:

  • Thinly slice the cucumbers, using a mandoline or handheld slicer if you have one.
  • Layer the cucumbers, onion, and dill in the jar(s).
  • If you're a laid back sort of home cook, simply pour the vinegar, sugar, and salt into the jar(s), screw on the lid, and shake well until the sugar begins to dissolve. It won't completely dissolve and that's okay. If you're a sorta precise, take-no-chances sort of home cook, stir together the sugar, vinegar, and salt in a large measuring glass or bowl until the sugar begins to dissolve. It won't completely dissolve and that's okay. Pour the mixture into the jar(s) and screw on the lid.
  • Stash the jar(s) of pickles in the fridge for up to 1 month-but we bet they won't last nearly that long. You can try them as soon as 6 hours if you're the impatient sort although the longer the pickles remain in the fridge, the more intense the flavor.☞TESTER TIP: We found around 3 or 5 days to be the optimal waiting period before diving into your jar of pickles. By this time the dill will have mellowed, the sweetness remains noticeable, and the crunch remains pronounced.

2 small cucumbers, thinly sliced
1 ½ tablespoons salt
1 onion, finely chopped
1 cup white sugar
1 cup white wine vinegar
½ cup apple cider vinegar
¼ cup brown sugar
1 ½ teaspoons mustard seeds
½ teaspoon celery seeds
1 pinch ground turmeric

Steps:

  • Combine cucumber slices and salt in a heatproof bowl and set aside for 90 minutes.
  • Place cucumbers in a sieve and wash well under running cold water. Drain well, return cucumbers to the bowl, and add onion.
  • Combine white sugar, white wine vinegar, apple cider vinegar, brown sugar, mustard seeds, celery seeds, and turmeric in a saucepan over medium heat. Bring to a boil and stir to dissolve sugar, about 3 minutes. Pour liquid over cucumbers and let stand for 1 hour at room temperature.

1/4 cup chopped onion
3 cups thinly sliced small cucumbers
1/2 cup water
3/4 cup white vinegar
3/4 cup granulated sugar
1 tablespoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Place dill, garlic, and onion in a large mason jar. Fill jar to top with cucumbers.
  • Meanwhile, place the water, vinegar, sugar, salt, and pepper in small saucepan over high heat. Whisk until the mixture comes to a boil and sugar has dissolved. Pour hot liquid over cucumbers. Cool slightly, then place top on jar and refrigerate overnight. Shake occasionally.

1 c. thinly sliced onions, chopped into smaller pieces if desired
1 c. diced green bell pepper
1 T. pickling salt
2 c. sugar
1 c. white vinegar
1 T. celery seed
big sprig of fresh dill

Steps:

  • Combine cucumbers, onions, bell pepper, and pickling salt in large heat-proof bowl, preferably one with a lid. Stir and let sit on the counter for 1 hour. Drain. (If you don't own a mandoline, I highly recommend this one. It works so great for creating thin, even slices. Use it for the cucumbers, onions, and bell pepper in this recipe.)
  • In a medium saucepan over medium-high heat, heat the sugar, vinegar, and celery seed. Stir occasionally. When the sugar has completely melted, pour the hot mixture over the cucumbers. Add the dill. Let cool to room temperature. Place a lid on the bowl and refrigerate for 2 days before eating. Eat straight from the bowl, or transfer to jars if desired. You could also transfer the room temperature mixture to jars before refrigerating for 2 days. Pickles keep very well for a few weeks.

2 c white vinegar
1 c water
1 1/2 tsp salt
2 tsp sugar
5 clove garlic
2 tsp mustard seeds
8 tiny cucumbers for pickling
1 qt canning jar or any jar with tight lid
1 pt canning jar or any jar with tight lid

Steps:

  • 1. In a glass pitcher combine vinegar, water. Set aside.
  • 2. Make sure jars are clean. In quart jar add 1 tsp of salt and a heaping tsp of sugar. In small pint jar add 1/2 tsp of salt and a tsp of sugar. Add seeds to both jars. Add a small amount of liquid. Close jar tight and swish jar to melt sugar and salt mixture.
  • 3. Cut up cukes into chunks, spears, or slices. Put as many pieces as you can in jars. Fill both jars 1/2 way full with liquid and swish around. Take lid off and top off with the rest of the liquid. It's ok if it overflows. You want to make sure they are covered well. Place lid on top again and tighten well. Shake again. Place in refrigerator for 2-3 days. Every time you think to go ck them shake them. Eat and enjoy. Store in fridge for up to 3 weeks.

~ optional other veggies (e.g., onion, carrots, etc., see list)
1 1/2 cup white vinegar
1/2 cup apple cider vinegar
2 cups water
1 Tablespoon Kosher coarse (or pickling) salt
1 cup sugar or Stevia natural sweetener (great sugar-free snack!)
1/2 teaspoon turmeric
1/2 teaspoon celery seed
1/2 teaspoon whole mustard seed
1/2 cup fresh dill, chopped
3 clean quart jars with lids

Steps:

  • Add all ingredients except veggies in a large pan, bring bring to a boil on stovetop.
  • Prepare veggies and add to jars, leaving 1″ headspace
  • Add brine to jarred veggies (if not quite enough liquid, add water to fill completely, this will vary depending on how packed veggies are)
  • Cover jars and turn over several times to mix.
  • Place in refrigerator, turn jars to mix again in one hour. Then turn 2x daily to keep them mixed.
  • I've heard they keep in fridge for 2-3 months. Mine never last that long!

3 tablespoons kosher salt
2 tablespoons sugar
2 cups cold water
1¾ to 2 pounds Kirby cucumbers (about 6), cut into halves or spears
2 tablespoons coriander seeds
6 large garlic cloves, peeled and halved
1 teaspoon mustard seeds
¼ teaspoon red pepper flakes
16 dill sprigs

Steps:

  • Combine the vinegar, salt and sugar in a small non-reactive saucepan (such as stainless steel, glass, ceramic or teflon) over high heat. Whisk until the salt and sugar are dissolved. Transfer the liquid into a bowl and whisk in the cold water. Refrigerate brine until ready to use.
  • Stuff the cucumbers into two clean 1-quart jars. Add the coriander seeds, garlic cloves, mustard seeds, red pepper flakes, dill sprigs, and chilled brine into jars, dividing evenly. 1 1/4 pounds kirby cucumbers, ends trimmed (about 4 medium cucumbers; see Cook's Note)

Steps:

  • Bring the vinegar, 1 1/2 cups water and 1 tablespoon salt to a boil in a small saucepan over medium heat, stirring until the salt is dissolved, about 3 minutes. Remove from the heat.
  • Meanwhile, place the peppercorns, red pepper flakes, dill and garlic in a 1-quart Mason (or other glass) jar. Pack the cucumbers in the jar as tightly as possible.
  • Pour the vinegar mixture over the cucumbers so the cucumbers are completely submerged. Leave uncovered and allow to cool to room temperature, about 1 hour. Cover and refrigerate for at least 1 day before using. The pickles will keep in the refrigerator for up to 2 weeks.

  • While you are waiting for the brine to cool, prepare the vegetables. First, trim the ends from the cucumbers and discard. Slice the unpeeled cucumbers about ¼" (or slightly thinner) then add them to a large colander. Next, remove the ends from the onion, peel and cut it into quarters. Shave each quarter into paper-thin slices and add them to the colander with the cucumber slices.
  • Sprinkle 2 Tbsp of kosher salt evenly over the cucumbers and onions then toss until the salt has completely coated the vegetables. Place the colander in the sink to drain any water the salt may draw out. Allow the salt to remain on the vegetables for 30–45 minutes.
  • Rinse the cucumbers and onions under cold water to remove all excess salt then drain completely. Place the cucumber and onion mixture into a large mixing bowl, pour the room temperature brine over it and remove the bay leaves—if you’d like, you can strain all of the spices from the brine before adding it to the cucumbers.
