PORK CHOPS AND RICE
Steps:
- Preheat the oven to 350 degrees F.
- In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
- Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
- Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.
SIMPLY OVEN BAKED PORK CHOPS AND RICE
This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

- Preheat the oven to 250˚. Heat the rice as the label directs. Season the pork with the Sazón, salt and pepper. Heat a large skillet over high heat. Add 2 tablespoons olive oil. Add the pork and cook until browned on the bottom, about 3 minutes. Flip and cook until just cooked through, about 1 more minute. Remove to a baking sheet and keep warm in the oven.
- Add the remaining 1 tablespoon olive oil to the skillet and reduce the heat to medium. Add the onion and cook, stirring, until lightly browned, about 4 minutes. Add the garlic, tomato paste and turmeric. Cook, stirring, until the onion is coated, about 1 minute. Add the pigeon peas and 1 cup water. Bring to a simmer and cook until slightly thickened, about 4 minutes. Stir in the rice and olives and heat through, about 1 minute; season with salt and pepper.
- Serve the pork chops with the rice mixture; drizzle with any juices from the baking sheet. Top with cilantro.

- Preheat oven to 375°F.
- Pour vegetable oil into pan about 1/4-1/2 inch deep, and place on medium high heated burner.
- Season pork chops with garlic salt and pepper.
- Cover pork chops on both sides with FLOUR.
- When oil is hot, brown pork chops on both sides.
- Place pork chops in baking dish, and cover with water (the amount of water decides how much gravy you will have, so you decide. I suggest about 1 1/2 inches deep in an 8x11 1/2 inch pan). Place pan in oven and bake at 375°F for about 25 minutes or until pork chops are no longer pink inside.
- Take pork chops out of the oven and pour the brown gravy mix into water.
- Return pork chops to the over and bake for an additional 10 minutes.
- Now is the time to make the rice.
- Prepare according to package directions.
- Take pork chops out of the oven and serve with gravy over rice.

When I made this (my husband's favorite) the other night I was asked if I'd ever submitted this recipe to Zaar. I had to answer, "What recipe?" So, after throwing this together for over 20 years, I'm writing down this "no-brainer" recipe for you to try, which only takes around 10 minutes to prepare. Optional: You may add fresh or canned sliced mushrooms to the pan if you wish. (2/1/08:Note: Using creamed soups will totally change the texture of this dish.)

- Preheat oven to 350°F and spray baking pan with non-stick cooking spray.
- In frying pan on medium to high heat, sear to brown pork chops in oil on both sides.
- While pork chops are browning, take baking pan and layer rice, then sprinkle with black pepper,then dry onion soup mix over all.
- In small saucepan, bring water to boiling and stir into rice mixture in baking pan just as pork chops are browned.
- Place browned pork chops over all, cover with foil and bake at 350°F for 45 minutes, until tender.
- Note: Check after 30 minutes to see if rice is done or if it's drying out. Lift up pork chops to stir rice mix in pan and taste. Add more water if needed. When the rice is done, the pork chops are usually very tender. I've found that over the years (with the 4 different stoves I've had!) cooking times may sometimes vary.
