A simple slow cooker meal! Great for small gatherings because it makes a ton. Freezes well too for quick meals later.

1 (4 pound) pork shoulder roast
1 pound dried pinto beans
3 (4 ounce) cans diced green chile peppers
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons salt
2 tablespoons dried oregano
2 tablespoons garlic powder
16 flour tortillas

Steps:

  • Place the roast inside a slow cooker coated with cooking spray. In a separate bowl, stir together the beans, 2 cans of the chile peppers, chili powder, cumin, salt, oregano, and garlic powder. Pour the whole mixture over the roast, and add enough water so that the roast is mostly covered. Jiggle the roast a little to get some of the liquid underneath.
  • Cover, and cook on Low for 8 to 9 hours. Check after about 5 hours to make sure the beans have not absorbed all of the liquid. Add more water if necessary 1 cup at a time. Use just enough to keep the beans from drying out.
  • When the roast is fork-tender, remove it from the slow cooker, and place on a cutting board. Remove any bone and fat, then shred with forks. Return to the slow cooker, and stir in the remaining can of green chilies. Heat through, and serve with flour tortillas and your favorite toppings.

Easy Pork, Beef or Chicken Chalupas aka Puffy Tacos image

Number Of Ingredients 18

1 1/2 lbs. ground pork (not sausage or chorizo), can use ground beef, chicken or turkey
2 Tbl. flour
2 Tbl. cornstarch
1 tsp. seasoning salt, I like Johnny's (can sub regular table salt)
1/4 tsp. regular table salt, more to taste
1/4 tsp. cayenne
1/4 tsp. chipotle powder
1 tsp. onion powder
2 tsp. chili powder
2 tsp. sweet smoked paprika
2 tsp. garlic powder
2 tsp. cumin
2 Tbl. dried minced onion, or a 1/4 of a small onion finely chopped and sautéed with the pork
2 cups water
2 - 3 pkgs. Naan Indian Fry Bread (2 bread rounds per package)
oil for frying
shredded lettuce, chopped tomatoes, shredded cheese, sour cream, guacamole
finely chopped cilantro or parsley (optional)

Steps:

  • In small bowl, mix together Taco Seasoning Mix ingredients well, set aside. In large frying pan, sauté over medium heat the ground pork with a little black pepper until done, breaking up well as you go along. Drain grease. Sprinkle taco seasoning mix over meat. Stir to coat. Add 2 cups water, bring to a simmer, stirring, and simmer and stir until water mostly evaporates and sauce is thick. Cover and set aside. In small DEEP saucepan, add oil to about 2/3 full. Heat oil until hot. Place one naan bread into oil and press center down using tongs which will start to form a taco shell. Use tongs to fold in half and turn over so that both sides can brown. (*I used two pairs of tongs to do this.) Fry for just 30 seconds to a minute only, until deep golden browned. Carefully remove to a cooling rack placed over a baking sheet, standing up on edges to drain. Continue with rest. *Shells will be delicately crispy on the outside, soft inside, and still semi pliable. Fill lightly crispy shells with taco meat, and top with Toppings of choice! Enjoy!

6 corn tortillas (6 inches)
2 teaspoons olive oil
3/4 cup shredded part-skim mozzarella cheese
2 cups chopped cooked chicken breast
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup finely shredded cabbage

Steps:

  • Preheat oven to 350°. Place tortillas on an ungreased baking sheet. Brush each tortilla with oil; sprinkle with cheese., Place chicken, tomatoes and seasonings in a large skillet; cook and stir over medium heat 6-8 minutes or until most of the liquid is evaporated. Spoon over tortillas. Bake 15-18 minutes or until tortillas are crisp and cheese is melted. Top with cabbage.

Who can resist this sweet, savory mix of tender ground beef, raisins, almonds and olives served on slider rolls with garlic mayo? Considered comfort food throughout Latin America, picadillo works wonders as a satisfying filling for sandwiches, tacos and empanadas.

1 tablespoon vegetable oil, plus more for frying
2 pounds ground beef chuck (20 percent fat)
1 medium white onion, chopped
1 large Yukon gold potato (8 ounces), peeled and chopped
1 large carrot, chopped
1 large poblano pepper, stemmed, seeded and chopped
1 jalapeno, stemmed and chopped
4 cloves garlic, finely grated
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1 tablespoon chili powder
1 tablespoon ground cumin
2 cups homemade chicken stock or low-sodium chicken broth
Six to eight 6-inch corn tortillas
Shredded iceberg lettuce, salsa roja, grated sharp Cheddar, cilantro, chopped white onion and lime wedges, for serving

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over high heat. Add half the beef and cook, breaking it up with a spoon, until browned on all sides but not completely cooked through, 4 to 6 minutes. Transfer to a medium bowl, leaving as much fat in the skillet as possible. Repeat with the remaining beef.
  • Reduce the heat to medium and add the garlic, carrots, jalapeno, onions, poblano, potato, 4 teaspoons salt and 1/2 teaspoon pepper. Cook, stirring, until the vegetables are tender but not browned, 10 to 12 minutes. Clear a space in the pan and add the tomato paste, chili powder and cumin and cook, stirring, until fragrant, about 1 minute. Stir to bring the whole mixture together, then add the stock and reserved beef along with any accumulated juices to the skillet. Bring to a simmer and cook, stirring and scraping up any brown bits from the bottom, until the liquid has evaporated, about 20 minutes. If necessary, season with salt and pepper.
  • While the picadillo is cooking, pour oil into a large Dutch oven or heavy-bottomed pot to come 3 inches up the sides and fit with a deep-fry thermometer. Heat over high heat until the thermometer registers 375 degrees F.
  • Holding a tortilla perpendicular to the oil near the edge of the pot, carefully lower into the oil so that the tortilla slides to the bottom (this method will fry and seal both sides of the tortilla, allowing steam to inflate-or "puff"-the tortilla like a balloon). After a few seconds, the puffy tortilla will float to the surface; turn it over and push the top edge of a metal spatula (a fish spatula works best) into the center of the tortilla, bending it into a taco shape, and press it below the oil's surface. Hold it in place and cook until golden brown and crisp, about 1 minute. Invert the taco shell onto paper towels to drain. Repeat with the remaining tortillas.
  • Spoon the beef picadillo into the puffy taco shells. Top with lettuce, salsa, cheese, cilantro and onion. Serve with lime wedges.

1 (12 ounce) package corn tortillas, warmed

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef, sausage, and onion in the hot skillet until meat is browned and crumbly, 5 to 7 minutes. Drain and discard grease. My kids love this stuff! I'm really not sure if 'Chalupa' is the right term for this, but it's what we've always called it. Feel free to add more or less spice and add any toppings your family may like. It's very easy and versatile.

4 lbs pork roast, any kind
1 lb dried pinto bean
2 (4 ounce) cans chopped green chilies
2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon oregano
salt and pepper
4 cups water
1 (16 ounce) package corn chips
sour cream (optional)
diced tomato (optional)
shredded lettuce (optional)
grated cheddar cheese (optional)

Steps:

  • Combine pork roast, pinto beans, green chiles, chili powder, cumin, oregano, salt, pepper and water in slow cooker.
  • Cook on low for 4 hours.
  • Remove roast and pull meat apart, removing any bones or fat.
  • Return pork to slow cooker and continue cooking for 2 to 4 more hours, adding more water if necessary.
  • Place corn chips on serving plates.
  • Spoon pork mixture over chips and serve with desired optional toppings.

12 large flour tortillas
4 chicken breasts, cooked and diced
2 (10 3/4 ounce) cans cream of chicken soup
2 cups sour cream
3/4 lb monterey jack cheese, grated
4 sliced green onions, with tops
1 (4 ounce) can diced chili peppers
3/4 lb cheddar cheese, grated

Steps:

  • Combine: soup, chili peppers, sour cream and green onions.
  • Add the Jack cheese.
  • Remove 2 cups of mixture and add chicken.
  • Spoon chicken into tortillas.
  • Roll and place into a buttered 9x13-inch pan.
  • The tortillas can be placed on top of each other if necessary.
  • Pour the rest of the soup mixture over the tortillas and cover with cheddar cheese.
  • Spray foil and cover top of casserole.
  • Bake at 350°F for 30 to 40 minutes.
