EASY POACHED SALMON RECIPE

easy poached salmon recipe image

A moist, flaky poached salmon recipe that's on the table in 20 minutes or less? Yes please! With fresh dill and Italian parsley-it's healthy and delicious!

Provided by Cheryl Najafi

Time 20m

Number Of Ingredients 9

2 lbs salmon
4 cups water
1 Tbsp kosher salt
1/2 cup dry white wine (or dry vermouth)
1/2 yellow onion (sliced)
4 tsp fresh dill (fronds, or ½ tsp dried)
4 tsp fresh parsley (Italian, sprigs, or 1/2 tsp dried)
1 bay leaf
cracked black pepper (to taste)

Steps:

  • Ensure all bones are removed from the salmon. The salmon can be poached with the skin on or with the skin removed, but keep in mind-the salmon will hold together much better if the skin remains intact.
  • In a large sauté pan, bring water, salt, wine, onion, dill and parsley to a boil then reduce heat to medium low and simmer for 15 minutes.
  • Once the liquid has simmered for 15 minutes, reduce heat to low setting and wait for all of the bubbles to subside. At this point, you can remove the onions and herbs with a slotted spoon if desired.
  • Gently lay the salmon, skin side down, in the pan. Keep the poaching liquid just below a simmer and poach the fish for 8-10 minutes.
  • Test for desired doneness. Remove the fish from liquid with a slotted spatula then blot the bottom lightly with a paper towel. Serve the fish hot, warm or cold in a salad. Enjoy!

POACHED SALMON WITH TZATZIKI SAUCE

Poached Salmon with Tzatziki Sauce image

EatSimpleFood.com Salmon Poached in white wine and lemons and served with a refreshing cucumber yogurt sauce. This is a light dish / recipe that is served cold.

Provided by beckie

Categories     Main Dish

Time 40m

Yield 6

Number Of Ingredients 11

2lb salmon fillets (6 five ounce pieces) skin on, pin bones removed
2 cups white wine
3 cups (or more) water
2 bay leaves
2 lemons, sliced
2 cups whole milk Greek yogurt, strained
1 large cucumber, seeded & finely diced
2 tsp fresh lemon juice
1 Tbsp fresh dill chopped
pinch salt
pinch black pepper

Steps:

  • Cook the salmon. Bring white wine, bay leaves, lemon slices, and water to a simmer in a deep and wide cooking pan. Add the salmon (skin side down) and cook covered for ~5-7 minutes, or until desired doneness. The salmon should be covered in liquid, so add more water if needed.
  • You are not serving this right away and want it to be cold/room temperature when you do. The salmon will continue to cook as it cools down so you can take it out before it's completely done if you're comfortable with that. Place on a plate and put in the refrigerator.
  • Serve poached salmon with tzatziki sauce and add salt to taste. Happy Eating! Beckie

POACHED LEMON DILL SALMON RECIPE

Poached Lemon Dill Salmon Recipe image

Looking for a delicious lemon dill salmon recipe? This poached salmon recipe has the most amazing sauce and what makes it an even better recipe is that it is healthy for you too. Healthy food doesn't have to lack flavor when you have the right recipe.

Provided by Brooke Farmer

Categories     Dinner

Number Of Ingredients 11

4 6 ounce salmon fillets (skin on or off)
1 lemon
¼ cup fresh dill (minced)
1 pound asparagus (woody ends trimmed)
2 tablespoons nonfat plain Greek yogurt
2 tablespoons light sour cream
1 teaspoon fresh dill (minced)
1 teaspoon lemon zest
1 tablespoon lemon juice
salt (to taste)
black pepper (to taste)

Steps:

  • Preheat the oven to 400° F and line a rimmed baking sheet with parchment paper or a silicone baking mat.
  • Place the salmon on the baking sheet and season all the fillets with salt and pepper, to taste.
  • Zest the lemon, reserve it, and cut 4 slices off of one end of the lemon.
  • Reserve 1 tablespoon of dill, then spread the rest of it over the tops of each fillet, and place a lemon slice on each.
  • Pour enough water on the bottom of the sheet tray to cover the salmon about ½ of a centimeter.
  • Lay the asparagus around the salmon fillets and season it with salt and pepper.
  • Squeeze the remaining half of lemon over the salmon and asparagus and sprinkle about ½ tablespoon of the zest over it all. (Keep the lemon).
  • Bake for 15-18 minutes. The water will gently poach the salmon in the oven, ensuring that the fish doesn't dry out while cooking.
  • While the salmon is cooking, make the creamy dill sauce: In a small mixing bowl, combine all of the sauce ingredients together and serve with the finished salmon and asparagus. (Use the remaining lemon half that was already squeezed).
  • If the salmon is skin-on, gently insert a fish turner or straight spatula between the skin and the flesh, and easy slide the flesh away from the skin. The skin will stay on the sheet tray.

EASY POACHED SALMON WITH DILL

Easy Poached Salmon With Dill image

This is a simple recipe that tastes gourmet. Even your picky eaters will enjoy this one. Add more of the ingredients you love and omit any you don't enjoy or don't have on hand. This one is easy to prepare and hard to ruin. Great served with rice and veggies or salad **Extra fresh dill weed can be frozen in a plastic bag and keeps it's flavour beautifully.**

Provided by shannon0001

Categories     Lemon

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 kg thawed salmon fillet, with skin on 1 side (may substitute with steelhead trout)
1 -1 1/2 tablespoon pickled capers (can be found in grocery store located in same aisle as pickles)
1 tablespoon chopped dill weed (use fresh or frozen but not dried)
1/4 cup thinly sliced onion
1 tablespoon lemon juice or 1/2 fresh lemon, peeled and sliced
salt and pepper

Steps:

  • Pre-heat oven to 350 degrees fahrenheit.
  • Remove any visible bones and cut off the head and tail (if it hasn't already been done for you) If using a poacher place the tray in the poacher, add 1/4 cup water and place your salmon in the tray skin side down.
  • If you do not have a fish poacher (how many of us do?) you can use any oven safe pan large enough to hold your fish.
  • Just crumple and crinkle a medium sized sheet of tin foil and place your fish on the foil skin side down.
  • Add enough water to just come to the edge of the foil without spilling onto the fish (approx 1/3 cup).
  • On top of the fish sprinkle all ingredients.
  • Cover with lid or tin foil.
  • Cook for 12-20 min's.
  • For RARE fish, cook just until white liquid emerges from fish (this is the cooked fish oil).
  • It will be pinky white on the outside and peachy pink inside.
  • For more well done fish, cook until fish is a pinky white color all the way through.
  • Place on a platter to serve.
  • Leave onions, capers and dill on the fish.
  • Slice lemons on the side for those who like fresh lemon juice.
  • This salmon is great served with rice and steamed veggies or a salad.

PERFECTLY BAKED SALMON WITH LEMON AND DILL

Perfectly Baked Salmon with Lemon and Dill image

The trick to perfectly baked salmon is to gently bake the fish in a little liquid - such as wine, stock, or water. Then cover the dish and bake until just cooked through. You could call this oven poached salmon. It's practically no-fail. If your fish is quite thick, expect that the cooking time will be a few minutes longer than what we share below.

Provided by Adam and Joanne Gallagher

Categories     Dinner

Time 30m

Yield Makes 4 Servings

Number Of Ingredients 5

One 1 1/2-pound salmon fillet, or two 12-ounce fillets, preferably wild-caught
1 tablespoon olive oil
Salt and fresh ground black pepper
1 lemon, cut into slices 3 to 4 sprigs of fresh dill, plus more for serving
1/2 cup dry white wine, such as Sauvignon blanc (substitute: fish stock, chicken stock, or water)

Steps:

  • Heat oven to 325 degrees F.
  • Lightly oil and season both sides of the salmon with salt and pepper.
  • Arrange lemon slices and fresh herbs on the bottom of a baking dish large enough to fit the salmon, and then place the salmon, skin-side down, onto the bed of lemon and herbs.
  • Pour wine (or stock) into the baking dish, and then cover with aluminum foil. Bake the salmon until the fish flakes and white bubbles of protein appear on the surface, 12 to 30 minutes, depending on the thickness of the fillets. Check the salmon after 10 minutes to see its progress.
  • Checking the temperature of the salmon using an internal thermometer is the best way to prevent overcooking. You want the thickest part of the salmon to read 125 degrees F. Take the salmon out of the oven and loosely cover with foil for 5 minutes (the fish will continue to cook during this time). Serve, scattered with chopped fresh herbs on top.

  • Dissolve the salt in the water and brine the salmon in the refrigerator for 30 minutes to 1 hour, depending on how thick it is. Move the salmon to a cutting board and pat dry with paper towels.
  • If you have a vacuum sealer, seal each portion of salmon in its own bag -- if you jam them all together they won't cook as well -- each with at least 1 tablespoon of butter; you can use more if you'd like. If you don't have a vacuum sealer, melt the butter in a pot large enough to submerge at least 1 piece of salmon. Turn the oven on to "warm" and put a baking sheet inside; this is for the cooked pieces of salmon to rest while you do the others. Of course, you could also melt a pound or so of butter and poach all of the salmon at once, but that gets expensive.

  • Arrange lemon slices in a single layer in a large skillet. Top with the half of the minced dill, the dill sprigs, plus half of the diced shallots, about 2 tablespoons. Add the wine and water, then top the lemon slices with the salmon pieces.
  • Set the skillet over high heat and bring to a rolling simmer, then reduce heat to low, cover, and cook until the center of the salmon is still transparent when checked with the tip of a paring knife, and registers 125 degrees F, or medium rare. This will take about 11-15 minutes.
  • Remove the pan from the heat. Use a spatula to carefully transfer the salmon and lemon slices to a serving dish and discard the dill sprigs. Tent the salmon with aluminum foil.

  • Poaching the Fish: Place the fish in a wide, deep skillet and cover with water by about 1-inch (2.5 cm). Add scallions, lemon slices, peppercorns, bay leaf and a big pinch of salt. Bring to a simmer over medium heat; you want the water to be barely simmering. By the time the water comes to that simmer, check the filet. You want to cook it just until it is opaque throughout and it might be done more quickly than you imagine. I often bring the water to a simmer, then turn the heat off, cover the pan and allow the fish to sit for a few minutes, then check again. It will all depend on the thickness of your fish and how cold the fish was at the beginning. An approximation is 5 to 10 minutes per inch of fish, but again, best way to tell is to use a visual assessment.
  • Gently remove fish from the water with a slotted spatula. It can go directly on a serving plate, you can dab it on and off a wad of paper towels briefly and/or you can easily peel off the skin, if you like. If you are serving the fish without the cucumber scales, simply serve hot, warm temperature or even a little chilled with Dill Sauce alongside.
  • For the Optional Scales: Trim and discard the ends of the cucumbers. Slice crosswise paper thin; this is most easily accomplished with a mandoline, but you can also use a very sharp chef’s knife. Arrange the cucumbers as seen in images, slightly overlapping in each row and from one row to the next. If you have a whole fish, start at the tail.

  • To prepare sauce, combine the first 5 ingredients in a small bowl, stirring well. Cover and chill 2 hours.
  • To prepare salmon, heat white wine, 2 cups water, fresh lemon juice, sliced onion, and 2 dill sprigs in a large skillet to 150°. Cover and simmer 10 minutes. Add fish to wine mixture; cook at 150° for 12 minutes or until desired degree of doneness. Transfer to a serving platter with a slotted spoon. Serve with sauce. Garnish with dill sprigs and lemon wedges, if desired.
  • Wine note: Poached salmon is naturally rich and meaty. In this dish, it gets a kick from the delicious pungency of dill and mustard. A great wine companion needs to be able to counterbalance all three. For its precise, clean flavors and rush of citrus, I love the King Estate Domaine Pinot Gris from Oregon.
