1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter, cubed
3 to 4 tablespoons ice water
INGREDIENTS FOR DOUBLE-CRUST PIE:
2-1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup cold butter, cubed
1/3 to 2/3 cup ice water

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed., Shape dough into a disk for a single-crust pie; for a double-crust pie, divide dough in 2 with 1 piece slightly larger than the other. Shape into 2 disks. Wrap and refrigerate 1 hour or overnight., On a lightly floured surface, roll 1 disk of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. , For a single-crust pie: Trim crust to 1/2 in. beyond rim of plate; flute edge. Fill or bake according to recipe directions., For a double-crust pie: Add filling to pie. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Bake according to recipe directions.

  • Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.

2 teaspoons white sugar
1 teaspoon salt
½ cup vegetable oil
2 tablespoons milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place all ingredients in 9 inch pie pan. Stir together with fork. Pat mixture into bottom and up the sides of the pan. Poke holes in bottom and side of crust.
  • Bake for 15 minutes in the preheated oven, or until light brown. Use as directed in favorite pie recipe.

Cover and refrigerate for 30 minutes or until easy to handle. , For a single crust, roll out pastry on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry 1/2 in. beyond edge of plate; flute edges. Fill or bake shell according to recipe directions., For a double crust, divide pastry in two portions so that one ball is slightly larger than the other. Roll out larger ball on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge of plate. Add filling. 1 tablespoon sugar
1/2 teaspoon salt

3 tablespoons ice water (or more)

Steps:

  • Mix flour, sugar and salt in food processor. Add butter and shortening. Using on/off pulses, process until mixture resembles coarse meal. Drizzle 3 T. ice water over mixture. Process just until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into a ball; flatten into a disk. Wrap in plastic; chill until dough is firm enough to roll out, about 30 minutes.
  • Roll out dough on lightly floured work surface to 12-inch round. Transfer dough to 9-inch-diameter glass pie dish. Fold overhang under. Crimp edges decoratively.

Steps:

  • Bring butter and cream cheese to room temperature.
  • Mix all ingredients together with two knives or by hand until it forms a ball.
  • Turn out onto a floured board and knead until smooth.
  • Roll out to the desired thickness and line the pie plate.
  • Bake according to the directions for the pie you are making, usually 10 minutes at 425 degrees and then 30-40 minutes more at 350 degrees.

4 tablespoons butter, chilled in about 4 pieces
2 tablespoons shortening, chilled in about 4 pieces
3 -4 tablespoons ice water

Steps:

  • Whisk together flour, salt and sugar in a large bowl.
  • Rub in butter and shortening with your fingertips until mixture is very coarse, but no pieces larger than a large pea remain.
  • Using a fork, stir in ice water until dough almost comes together into a ball.
  • Press dough into a ball with your hands and wrap in plastic. Chill for at least 30-60 minutes before using.
  • To prebake, preheat oven to 375°F Roll dough out to fit a 9-inch pie pan and trim the crust. Prick the bottom with a fork a few times.
  • Line the inside of the crust with aluminum foil, not covering the edges, and fill with pie weights or about 2 cups of dried beans.
  • Bake for 25 minutes, until very lightly browned.
  • Remove foil and weights and bake for an additional 10 to 15 minutes, until medium brown at the edges.
  • Set aside to cool.

  • Cut in shortening. Start by combining the dry ingredients: 1-1/4 cups all-purpose flour and 1/4 teaspoon salt. Use a pastry blender to cut 1/3 cup shortening into the flour mixture.
  • Moisten the flour mixture. Sprinkle ice-cold water, 1 tablespoon at a time, over part of the flour mixture. Toss gently with a fork; push moistened flour to one side of the bowl.
  • Form dough into a ball. After all of the flour is moistened, use your hands to gently press and form the crust into a ball.
  • Roll out the dough. Flour the rolling surface just enough to keep the dough from sticking. Use your hands to slightly flatten the ball of dough.
  • Prepare to transfer dough. For easy transfer to the pie plate, wrap the pastry circle around the rolling pin.
  • Transfer dough to pie plate. Holding the rolling pin over a 9-inch pie plate, unroll the pastry. Start at one side rather than in the middle. Center the pastry so an even amount is hanging over all sides.
  • Fit the pastry into the pie plate. Gently ease the pastry into the pie plate without stretching it. (Doing so may cause it to shrink while baking.)
  • Trim the dough. Use kitchen shears to trim the excess dough to a half inch beyond the edge of the pie plate.
  • Fold the edge of the piecrust. To build up the edge of the pie shell, fold the extra half inch of pastry under itself to create a rim. Try to keep the edge as even as possible.
  • Shape the edge. To create a pretty fluted edge, place a finger against the inside edge of the pastry. Using the thumb and index finger of your other hand, press the pastry around your finger.
