Steps:
- Prepare a muffin tin by filling with cupcake liners; set aside.
- Add all ingredients to a large pot over medium-high heat. Stir consistently as you bring to a boil.
- Use a candy thermometer to check the temperature - when it reads 235-240°F remove pan from heat. (This should take about 10 minutes or so).
- Use wooden spoon to vigorously stir the mixture, so that it thickens as it cools and starts to have a cloudier appearance. This should take anywhere from 2-5 minutes.
- While the mixture is still hot, use a cookie scoop to portion out the praline mixture into your muffin tin. You want to make sure to cover the bottom of each cupcake liner.
- Allow to cool completely until firm.
- Remove the cupcake liner before serving.

PECAN PRALINES BY MICROWAVE
Here's a recipe I adapted from a stove-top recipe in a church women's collection back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. Check out the companion recipe for Peanut Patties. These candies make great gifts----I can make up a batch in less time than it takes me to "run" to the store.

- Stir. Cook on High 4 minute (6 ).
- Add vanilla and pecans.
- Stir, then cook on High 2min. (5).
- Stir in powdered sugar.
- Drop by teaspoonfuls onto waxed paper over newsprint. If candy gets too thick, reheat 20-30 secs.
- Add more nuts at the end if you run out of nuts before candy, (but these don't taste as good as the cooked nuts.).
- You can also drizzle the extra candy at the end over the first pralines which don't have as much because it was too hot at first.
- It's the powdered sugar that makes the syrup crystalize as it cools.
- You can cook on stove---get syrup to softball stage -234*; stir constantly.

Steps:
- Line two baking sheets with parchment paper; set aside.
- In a medium saucepan over medium-low heat, melt butter. Add the cream and both sugars and continue cooking until the sugars are dissolved. Increase the heat to medium and simmer until the mixture reaches 240-250 degrees F, stirring occasionally. (If the mixture begins to crystallize you can add 2 more tablespoons of the cream and continue cooking until it loosens up)
- Add the pecans, remove from heat and give the mixture a final gentle stir. Use a wooden spoon, portion about 2 tablespoons of the praline mixture onto the prepared baking sheet, spacing at least 1 inch between them. (If the mixture begins to crystallize and set up before you finish portioning all of the pralines, add an additional 2 tablespoons of cream to the saucepan and set the pan over medium heat until the mixture is creamy, then continue portioning the candies.) Cool for at least 30 minutes before transferring to an airtight container.

- In a medium-size heavy pot, combine the granulated sugar, brown sugar, salt, evaporated milk, and butter. Cook and stir with a wooden spoon over medium heat until the sugars dissolve and the mixture comes to a boil.
- Continue to cook until the temperature reaches between 235-240 degrees F on a candy thermometer (soft ball stage). Remove from heat and allow the praline mixture to cool for 5 minutes.
- Stir in the vanilla and pecans, beating by hand with a wooden spoon just until the candy begins to lose its glossiness and thickens slightly, about 2 minutes. If you beat too long, the candy will seize and start to crumble. If you don't beat it long enough, then pralines won't set properly and will stay soft and sticky.

- Candied Pecans. These are seriously addictive. Their sweet and buttery flavor is enhanced by the crunchy caramel coating and a sprinkling of flaky sea salt.
- Turtle Cookies. Turtle cookies are the culmination of everything I love in a dessert. They’re soft and chewy, rich and chocolatey, and loaded with caramel pieces, pecans, and chocolate chips.
- Easy Pecan Pie Recipe. Come Thanksgiving, there better be an extra pecan pie on the table just for me. I will fight you for the last slice. Between the gooey syrup filling and the tender, crunchy pecans, there is just nothing better.
- Pecan Crusted Salmon with Lemon Glaze. Sure, you can use boring old breadcrumbs to coat your salmon. But I can’t say enough good things about this pecan crust!
- Pecan Squares. The first time I made these, I burned my mouth as I impatiently bit into the still-hot slice. The second time, I devoured two slices before I could finish my coffee.
- Apple Cranberry Pecan Salad. I think I’ve mentioned before that when I make a salad; I need lots of toppings! Texture is so important, and without fun extras, salads can be super bland.
- Butter Pecan Chicken. Chicken is such a versatile meat. You can boil it, fry it, roast it, bake it, and it works well with everything from squash to strawberries.
- Pecan Tassies. It’s sad to say, but I didn’t grow up eating pecan tassies. In fact, I’d never tried one until I was a fully-fledged adult. The horror!
- French Quarter Pecan Cheese Spread. You’ve just found the dip for your next party. Cream cheese with garlic and onion smothered in a salty-sweet-spiced pecan topping – need I say more?
