Easy Homemade Caramel Popcorn has just the right crunch and chewiness that you want, without sticking to your teeth. It's everything you hope for in the best caramel corn recipe!

8 cups popped popcorn ((about 1 microwaveable bag, or 1/4 cup kernels))
6 Tablespoons butter
1 1/2 cups light brown sugar
6 Tablespoons light karo syrup
1/4 teaspoon salt
1/4 teaspoon baking soda ((heaping))
3/4 teaspoon vanilla extract

Steps:

  • Preheat the oven to 200 degrees F.
  • Line a jelly roll pan with parchment paper. Add popcorn to a large pan, spread out in an even layer.
  • Melt butter in a large non-stick skillet over medium heat. Once melted, stir in brown sugar, corn syrup, and salt until smooth.
  • Bring to a boil over medium heat, stirring occasionally. As soon as the caramel starts to gently boil, boil for 2 minutes, stirring constantly.
  • Remove from the heat and stir in baking soda and vanilla.
  • Immediately drizzle caramel over popcorn. Toss gently with a spatula until the popcorn is evenly coated.
  • Bake at 200 degrees F for 45 minutes, stirring the popcorn every 15 minutes.

This is habit-forming, it is soooo good and so simple to make, you can also use unskinned almonds or use whatever nut you desire --- you may also add 1/3 cup molasses for a stronger caramel flavor :)

24 cups popped corn (1 cup unpopped)
1 cup butter or 1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 1/2 cups whole peanuts (or use both) or 1 1/2 cups unsalted walnut halves (or use both)

Steps:

  • Set oven to 250 degrees F.
  • Put the popped corn in a large bowl.
  • Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
  • Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
  • Remove from heat and stir in baking soda and vanilla.
  • Add in the nuts and stir to combine.
  • Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
  • Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
  • Remove from oven then cool.
  • Break into pieces.
  • Store in a tightly covered tin box.
  • Delicious!

This recipe is sure to be a hit with friends and family. It's super easy and there's not much of a mess to clean up afterwards. My kids love watching the mixture foam after adding the baking soda. We all start eating it right away but I do prefer it after it has had time to cool. It's a real treasure to create! P.S. You might want to break it up with your hands as it starts to cool.

2 (3 1/2 ounce) bags microwave popcorn or 2 (3 1/2 ounce) bags approx 1 cup corn
1/2 cup margarine
1/4 cup light corn syrup
1 cup brown sugar
1 teaspoon baking soda
1 brown paper bag

Steps:

  • Place popped corn in brown bag.
  • Melt margarine, brown sugar and syrup in microwave on high for 5 min stirring once every 1/2 minute
  • Stir in baking soda, mixture will foam!
  • Pour over popcorn in bag and shake well.
  • Place in microwave on high for 1 inches Shake again, heat for one more minute.
  • Shake, pour into bowl to cool and then enjoy!

1 Tbsp. water
10 cups air-popped popcorn
1 cup PLANTERS COCKTAIL Peanuts

Steps:

  • Heat oven to 300°F.
  • Spray large baking sheet with cooking spray. Cook caramels, butter and water in large saucepan on low heat until caramels are melted, stirring frequently.
  • Combine popcorn and nuts in large bowl. Add caramel mixture; toss to coat. Spread onto prepared baking sheet.
  • Bake 20 min., stirring after 10 min. Spoon onto sheet of waxed paper; cool completely. Break into clusters.

18 cups popped popcorn, use light butter microwave popcorn
1 cup salted peanuts, could also use honey roasted instead
1/2 cup butter
3/4 cup brown sugar
1/4 cup molasses

Steps:

  • Preheat oven to 350.
  • Pop the popcorn and distribute it evenly between 2 large baking sheets with rims.
  • Divide the peanuts in half and sprinkle on top of the popcorn.
  • In a heavy saucepan melt butter over medium heat. Stir in brown sugar and molasses.
  • Bring to a boil and boil for 5 minutes.
  • Remove from heat and drizzle over the 2 sheets of popcorn, distributing it as evenly as possible.
  • Bake in oven for 15 minutes, gently turning the popcorn with a large spatula every 3 minutes.
  • As it bakes, the caramel will melt and cover the popcorn evenly.

That was a do everything in the microwave, and I guess you still could, it was just easier for me to adapt. I do microwave the popcorn in the MicroPopper, but do the rest on the stovetop.

2 quarts popped popcorn
1 cube butter
1/2 cup packed brown sugar
15 -18 regular size marshmallows

Steps:

  • Pop your popcorn - the most time consuming thing is making sure all of the unpopped kernels are removed. I place the popcorn in a large aluminum roasting pan(easy clean up and large enough to stir up).
  • In a saucepan, start your butter melting over medium heat. When the butter is melting, add the brown sugar and mix up and add the marshmallows. When the marshmallows are melted, pour over the popcorn and stir up with a wooden spoon, making sure everything is coated. I love this recipe!

½ cup corn syrup
1 teaspoon salt
½ teaspoon baking soda

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
  • In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
  • Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.
