⅓ cup white wine vinegar
1 tablespoon Dijon mustard
⅓ cup extra-virgin olive oil (or canola oil)
2 cloves garlic (minced)
1 teaspoon fresh thyme leaves
1 teaspoon fresh basil leaves (hopped)
1 teaspoon fresh oregano leaves (chopped)
½ teaspoon salt
½ teaspoon crushed red pepper
2 teaspoons granulated sugar
1 teaspoon fresh ground pepper
12 ounce package of Tri-Color Rotini Pasta
1 pint cherry or grape tomatoes (halved)
½ a large onion (diced (red or sweet onion are best))
1 cup assorted olives (pitted and sliced)
2 cups broccoli florets
1 teaspoon seasoned salt ((like Lawry's brand))
8-12 ounces cheddar cheese (or Colby cheese, sliced in match stick pieces)

Steps:

  • Place all the ingredients for the dressing in a glass jar or container with a tight fitting lid. Shake vigorously until well blended. Set aside.
  • Cook the pasta according to the package directions. Drain and place the pasta in a large mixing bowl. Drizzle a few tablespoons of the dressing on the warm noodles and toss to prevent them from sticking together.
  • Place the broccoli florets in a large colander. Pour hot water (almost boiling) over the florets then rinse with cold water. Drain. The hot water will give the broccoli a lovely bright green color and take the raw edge off the vegetable. Add the broccoli to the bowl with the pasta.
  • Add the tomatoes, onion, olives and seasoned salt. Pour the prepared dressing over the top of the pasta salad and toss gently to combine. Cover and refrigerate until ready to serve.
  • Add the cheese just before serving.
  • Refrigerate leftovers.

1 tbsp sugar (any)
1 large garlic clove, minced
1/2 tsp each dried basil and oregano
1/4 tsp dried parsley
1/2 tsp dried chilli flakes (red pepper flakes) (optional)
3/4 tsp salt
1/2 tsp black pepper
300g/10oz spiral pasta, or other pasta of choice
180g/6oz thick sliced salami, cut into 2.5cm/1" batons (see photo in post or videos) (I use spicy salami)
200g/7oz baby bocconcini, halved (Note 2)
1 red capsicum/bell pepper, cut into 3cm/2.2cm strips
250g/8oz whole olives (I used Sicilian and pitted black) (Note 3)
2 cups cherry tomatoes, halved (~1.5 Australian punnets)
1 cup (tightly packed) fresh basil leaves

Steps:

  • Place Dressing ingredients in a jar and shake well.
  • Cook pasta according to packet directions minus 1 minute. Drain in a colander and rinse under cold water to stop it cooking further. Shake excess water off well then transfer into large bowl.
  • Place remaining Pasta Salad ingredients in the bowl. Drizzle over Dressing and toss. Serve at room temperature.

1 block (8 ounces) cheddar cheese, cubed
1 block (8 ounces) Monterey Jack cheese, cubed

1 bottle (16 ounces) Italian salad dressing
3 tablespoons minced fresh parsley
1 tablespoon minced fresh basil
1 teaspoon Italian seasoning
1 teaspoon seasoned salt

1 can (3.8 ounces) sliced ripe olives, drained
Grated Romano cheese, optional

Steps:

  • Cook pasta according to package directions. Rinse with cold water; drain well. In two large bowls, combine the California vegetables, tomatoes, zucchini, yellow squash, onion, cheeses and pasta. , In a small bowl, combine the salad dressing, parsley, basil, Italian seasoning, seasoned salt and pepper. Steps:

  • SALAD: Cook the pasta according to package direction, drain and allow to cool to room temperature. Combine all the ingredients (except the parm) for the salad in a large bowl and refrigerate for 10-15 minutes while you prepare the dressing.
  • DRESSING: Place the ingredients for the dressing in a blender along with a big pinch of salt and pepper and blend until smooth (or add to a jar if using an immersion blender.) Taste and adjust seasonings as desired.

2 tablespoons olive oil
about 1 1/4 pounds boneless skinless chicken breasts, diced into bite-sized pieces and seasoned with salt and pepper
1 1/2 to 2 cups broccoli florets
1 yellow or orange bell pepper, diced small

Steps:

  • To a medium bowl or large measuring cup, add 2 tablespoons olive oil, lemon juice (zest the lemon before juicing it), apple cider vinegar, honey, Italian seasoning, lemon lest, salt, pepper, optional cayenne, and whisk to combine; set sauce aside.
  • Cook pasta according to package directions in salted water, drain, place in an extra-large bowl; set aside. While pasta is cooking, also cook the chicken.

Steps:

  • Cook noodles according to package. Drain and rinse under cold water.
  • Combine all of the ingredients in a large bowl.
  • Pour Italian dressing over the top and sprinkle with fresh parsley or basil. Refrigerate until ready to serve. Top with parmesan cheese if desired.

1/4 cup white wine vinegar OR red wine vinegar OR a combo of the two
2 tablespoons water
1 to 2 teaspoons honey
1 teaspoon freshly squeezed lemon juice
6 tablespoons freshly grated Parmesan (DIVIDED)
3/4 teaspoon garlic salt
3/4 teaspoon dried parsley
3/4 teaspoon dried basil
1/8 teaspoon dried oregano
Pinch of red pepper flakes
Freshly ground black pepper (to taste)
8 ounces tri-color garden rotini
1 (4-ounce) jar diced pimentos
1/3 cup finely diced green olives
1/3 cup finely diced black olives

Steps:

  • Measure oil, vinegar, water, honey, lemon juice, 3 tablespoons Parmesan, garlic salt, parsley, basil, oregano, red pepper flakes, and black pepper into a jar with a tight-fitting lid. Shake vigorously until well-blended and emulsified. Taste and adjust seasonings, adding more salt and pepper if desired.
  • Cook pasta in well-salted boiling water according to package directions. Drain pasta and transfer to a large bowl. Add the pimentos, green and black diced olives, remaining Parmesan, and about 2/3 of the dressing. Gently mix all of the ingredients with a large spoon until well combined. Refrigerate for several hours to allow the flavors to blend. Just before serving, shake and then stir in the remainder of the dressing and garnish with additional Parmesan, if desired.

14 ounces canned artichoke hearts (not marinated) (drained well with stems removed)
1/2 cup red onion (chopped)
1/3 cup diced pimentos (drained)
1/3 cup grated parmesan

Steps:

  • Bring a pot of salted water to a boil and prepare noodles according to instructions. Drain and set aside.
  • Combine olive oil, red wine vinegar, salt and pepper. Set aside.

This pasta salad with Italian dressing is easy to make and has the most incredible flavors. Crispy prosciutto, tender bocconcini balls, tangy banana peppers, cherry tomatoes, olives, basil, and parmesan cheese get tossed with your favorite pasta and delicious Italian dressing. It's irresistible!

16 ounces dry pasta (we like bow-tie)
1 cup Italian salad dressing (we like our homemade Italian salad dressing best but store-bought works, too)
4 ounces prosciutto
8 ounces mini bocconcini (or regular bocconcini cut in half)
1 green bell pepper (diced)
1 cup cherry tomatoes (sliced in half)
¾ cup olives
¼ cup thinly sliced red onion
½ cup thinly sliced basil leaves
½ cup Italian parsley (chopped)
Optional: 1 cup banana peppers
½ cup grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil over high heat. Cook the pasta according to the package directions. Drain the water then add the pasta to a large bowl and toss with ¼ cup of the Italian salad dressing.
  • While the pasta is boiling, crispy the prosciutto. Heat a large frying pan over medium-high heat then add the prosciutto in a single(ish) layer. Let it cook until it shrinks and becomes crisp then turn it over and cook it for another minute on the other side. Remove it from the pan and crumble it a little into a bowl.
  • Add the bocconcini, bell pepper, cherry tomatoes, olives, red onion, basil, parsley, banana peppers, crispy prosciutto, and parmesan cheese to the bowl with the pasta. Pour the remaining dressing over the top then toss to coat.

1 pint cherry tomatoes (halved)
8 ounces mozzarella balls

10 green onions springs (diced)
1 jalapeno, chopped (seeds removed for less heat)
½ cup grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes
½ tablespoon balsamic vinegar
¾ cup Italian Dressing (use up to ¼ cup more dressing once pasta absorbs liquid)

Steps:

  • Fill large pot with water and 1/2 tablespoon olive oil then place on stove top over medium-high heat.
  • Cook pasta according to directions ( I cooked mine for 9-10 minutes ) then rinse under cold water and allow water to drain.
  • Meanwhile, chop cherry tomatoes, green onions, cheddar cheese, and jalapeno. Use the seeds of the jalapeno for more added heat or discard if you don't want spicy.
  • In a large bowl, combine pasta with all ingredients and toss to coat. Serve with grated parmesan cheese.
  • Refrigerate until ready to serve. If pasta absorbs too much liquid, simply add more dressing.
  • **Italian dressing can also be made with dry packet mix sold in salad dressing aisle. We love to use the dry packet mix with package ingredients!

Steps:
