EASY OYSTERS ROCKEFELLER
This delicious oyster dish is huge on flavor but lower in added fat than most versions. You can make the spinach sauce up to 3 days ahead, so you can assemble and cook everything in just 20 minutes.

Steps:
- Chop spinach well and set aside.
- Melt butter in a large skillet over medium heat.
- Add shallots and cook, stirring frequently, until soft, about 4 minutes.
- Stir in flour and cook for 1 minute. Slowly add milk, stirring constantly.
- Stir in tarragon, salt, pepper, nutmeg and spinach and cook for 1 minute.
- Remove from heat and let cool.
- Sauce can be made up to 3 days ahead and refrigerated
- Preheat the broiler.
- Cover the bottom of a baking sheet with dried beans or rock salt.
- Carefully nestle rounded side of oyster shells in beans and place 1 oyster into each.
- If you have oyster liquor (juices) left over, let any grit settle to bottom and spoon liquor into spinach sauce.
- Stir sauce and spoon a generous 1 tablespoon onto each oyster.
- Sprinkle with cheese.
- Broil until tops are browned and sauce is heated through, about 4 minutes. Serve warm.
- *Steamed from about 1 pound fresh, or a little less than a 16-ounce bag frozen chopped spinach cooked according to package directions.

- In a large skillet, saute onion in butter until tender. Add spinach; cook and stir until wilted. Remove from the heat; stir in cheese, lemon juice and pepper. Spread kosher salt into 2 ungreased 15x10x1-in. baking pans. Shuck oysters, reserving oyster and its liquid in bottom shell. Lightly press oyster shells down into the salt, using salt to keep oysters level. Top each with 2-1/2 tsp. spinach mixture. Bake, uncovered, at 450° until oysters are plump, 6-8 minutes. EASY OYSTERS ROCKEFELLER
Oysters Rockefeller was created by the chef at Antoine's restaurant in New Orleans in 1899. The dish was named after the famous Rockefellers because it was so rich. The original version is a little more complex in the preparation method. This easy version simplifies the process but uses the same original ingredients.

- Preheat the oven to 450 degrees F. Open the oyster shells with a shucking knife. Remove the oysters and pat dry. Wash the shells and place on a rimmed baking sheet covered in rock salt. Place an oyster in each shell. In a bowl, mix the onion, parsley, and butter. Spread over each oyster. Sprinkle with salt, pepper, and paprika as desired. Top each oyster with two teaspoons of spinach and then sprinkle evenly with 1/2 teaspoon of the bread crumbs. Dot each with a teaspoon of butter. Place the baking sheet in the oven and bake at 450 degrees F for 10 minutes or until heated through (the edges of the oysters should start to curl). Serve hot.

- For the oysters: Melt butter in a skillet. Saute the garlic for 2 minutes to infuse the butter. Place the bread crumbs in a mixing bowl and add half the garlic butter, set aside. To the remaining garlic butter in the skillet, add shallots and spinach, cook for 3 minutes until the spinach wilts. Deglaze the pan with Pernod. Season with salt and pepper, add a dash of red pepper sauce. Allow the mixture to cook down for a few minutes. Finish off the bread crumbs by mixing in olive oil, Parmesan and chervil, season with salt and pepper. Spoon 1 heaping teaspoon of the spinach mixture on each oyster followed by a spoonful of the bread crumb mixture. Sprinkle a baking pan amply with rock salt. Arrange the oysters in the salt to steady them. Bake in a preheated 450 degree F oven for 10 to 15 minutes until golden. Serve with lemon wedges and red pepper sauce.
- For the sauce: In a small bowl whisk together all ingredients. Cover and chill 1 hour before serving with oysters. Yield: 3/4 cup
OYSTERS ROCKEFELLER

- Preheat oven to 450 degrees F (220 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Clean oysters and place in a large stockpot. Pour in enough water to cover oysters; bring the water and oysters to a boil. Remove from heat and drain and cool oysters. When cooled break the top shell off of each oyster.
- Using a food processor, chop the bacon, spinach, bread crumbs, green onions, and parsley. Add the salt, hot sauce, olive oil and anise-flavored liqueur and process until finely chopped but not pureed, about 10 seconds.
- Arrange the oysters in their half shells on a pan with kosher salt. Spoon some of the spinach mixture on each oyster. Bake 10 minutes until cooked through, then change the oven's setting to broil and broil until browned on top. Serve hot.

CRISPY "OYSTERS ROCKEFELLER"

- In a food processor, place the tarragon and spinach and pulse 1 to 2 times to coarsely chop. Add the panko and pulse until completely combined with the tarragon and spinach (it should look like green bread crumbs). Transfer the mixture to a medium bowl and set aside.
- In a small saute pan set over medium-high heat, add the olive oil and pancetta and cook until the pancetta is golden-brown and crispy, about 4 minutes. Remove the pan from the heat and add the lemon juice, sugar and salt, stirring with a wooden spoon until the sugar is dissolved. Add the parsley and set aside.
- Pour enough grapeseed oil into 10-inch saute pan to fill it by 1/3 inch. Heat the oil over medium heat to 350 degrees F or until a few breadcrumbs sprinkled in the pan sizzle immediately but do not burn. Lightly beat the egg in a medium bowl. Add the oysters to the egg and toss gently to coat. One by one, lift them out of the egg and place them in the herb breadcrumbs. Again toss gently to make sure the oysters are coated all around, pressing gently to adhere.
- Place the breaded oysters, one at a time, into the hot oil. You should be able to fry about 6 at a time. Fry until golden brown, about 1 minute. Flip the oysters and cook another 1 minute to brown on the other side. Remove from the oil with a slotted spoon and drain on a paper towel-lined plate. Repeat the process with the remaining oysters.
- Place one oyster in each half shell and spoon some of the pancetta vinaigrette over the top. Serve warm.
OYSTERS ROCKEFELLER
In this classic recipe, the Rockefeller name refers to the dollar bill-green color of the sauce - and its richness, as it's loaded with butter, garlic, spinach and herbs. You can make the butter sauce up to three days ahead and store it in the refrigerator, then drop dollops of it on shucked oysters just before broiling. Watch the oysters carefully as they broil. You want the bread crumbs in the topping to turn golden and the oysters to warm up slightly but not cook through. Serve these with forks on the side; all the hot, buttery sauce makes them too slick for slurping.

- In a large skillet over medium heat, melt the butter. Add the bread crumbs and sauté until they are just a tiny bit golden, about 2 minutes. Stir in the spinach, parsley, shallot and garlic. Cook until fragrant, 1 minute. Remove from the heat and stir in a small pinch of salt.
- Finely grate 1/2 teaspoon zest from the lemon and add it to the bread crumb mixture. Cut the lemon in half and squeeze out 1 tablespoon of the juice; mix into the pan.

Serve hot, with a squeeze of lemon on top, if you like.

- Shuck oysters, remove meat and set bottom portion of each shell in an oven proof pan of rock salt to steady them and protect them from high heat.
- Discard top of shell.
- Set oysters aside.
- Heat butter in a skillet over medium heat Add shallots cook for 2 minutes.
- Add Garlic, spinach, bacon and parsley.
- Season with salt, pepper and nutmeg.
- Saute until hot.
- Stir in flour and cook 2 minutes.
- Stir in wine, lemon juice, Worcestershire Sauce, and cream.
- Bring to a boil.
- Simmer until thickened about 5 minutes.
- Stir in parmesan cheese.
- Divide this mixture among prepared shells.
- Place 1 oyster in each shell on top of spinach mixture.
- Broil 2 minutes .
- Coat lightly with Hollandaise (Recipe#91452.).
- Broil 3 more minutes or until golden.
- Serve immediately.

- Clean oysters, and place in a large stockpot. Pour in beer and enough water to cover oysters; add 2 cloves garlic, seasoned salt, and peppercorns. Bring to a boil. Remove from heat, drain, and cool.
- Once oysters are cooled, break off and discard the top shell. Arrange the oysters on a baking sheet. Preheat oven to 425 degrees F (220 degrees C.)
- Melt butter in a saucepan over medium heat. Cook onion and garlic in butter until soft. Reduce heat to low, and stir in spinach, Monterey Jack, fontina, and mozzarella. - Clean& drain oysters and set aside.
- In skillet, melt butter& saute celery& onion, stir in parsley, spinach, anise, worcestershire, and pepper.
- Remove from heat.
- Grease or spray 8 ramekins.
- Place 3 oysters in the bottom of ea ramekin.
- Cover oysters with spinach mixture.
- (***youcan do it in advance up to his point and refrigerate).
- Bake@ 350 for 30 minutes.
- Remove& top with cheese and crumbs.
- Return to oven for 10 minutes.
- **Ifyou don't own ramekins, bake in a shallow baking pan.
- This is not a beautiful dish, so the attractive containers help.
- I made this for years without them.
- The ramekins make it easier to serve, too.
- I usually do this as an appetizer, but it makes a main course for 4.
