EASY MULLED APPLE CIDER MADE IN A PERCOLATOR OR CROCK POT
Make hot spiced apple cider for a crowd easily and quickly this Christmas and Thanksgiving season with this recipe and technique.

- Place all ingredients in a crock pot, percolator, or in a large saucepan.
- Heat until the mixture is warm and fragrant. Serve hot. Mixture can continue to steep and be heated for several hours.
SHORTCUT SLOW-COOKER APPLE CIDER
This homemade cider couldn't be easier: Cut a dozen of your favorite apples into wedges -- skins, seeds, stems and all -- and add to a slow cooker with some spices and water. A bonus: your house will smell delicious too!

- Thoroughly wash and dry the apples. Cut each apple into 8 wedges (skins, seeds and stems included) and transfer to a 7-quart slow cooker. Add the cloves, cinnamon sticks and 12 cups water. Cook on high, covered, for 4 hours.
- Remove the lid and carefully crush the apples with a potato masher. Cover again and cook on high for another 2 hours.
- Set a large, fine-mesh strainer over a large stockpot. In batches, ladle the apple mixture into the strainer and use the back of the ladle to press down on the apple pulp to extract the liquid. Discard the pulp. Stir in 1/2 cup of the brown sugar until completely dissolved. Taste and add additional sugar if needed.
- Serve the apple cider hot or allow it to cool fully, then serve it chilled over ice.

- Fill the filter-lined basket of a large automatic percolator with the brown sugar, cloves, allspice and cinnamon sticks. Prepare as you would coffee according to manufacturer's directions, but substitute cider for water.

MOM'S MULLED CIDER FOR THE CROCK POT
My mother always made mulled cider during the fall and winter for any holiday gatherings. It makes the house smell wonderful. This version works best with good quality cider, but I have sometimes been forced to use grocery store jugs and it still tastes good. This will be highly spiced and has a bit of a citrusy tang from the lemons. Serving size will vary greatly depending upon the size of your crock.

- Set a medium or large crock pot to HIGH heat.
- Fill crock pot with cider- leaving room for the apple and orange to float around (we'll get to them in a minute).
- You will have extra cider at this point- use this for replenishing later.
- Wash the orange and apple and dry off.
- Poke cloves into the flesh of the orange and the apple- as many as you like.
- Set the cloves studded fruit into the crock pot.
- Add cinnamon sticks and some brown sugar to taste.
- Using a vegetable peeler, cut off two long strips of lemon rind from one of the lemons, being careful not to get any of the white pith.
- Drop these into the cider pot and save the rest of the partially zested lemon for another use.
- Slice the remaining lemon into thin slices and drop 4-5 slices into the cider pot.
- Save the remaining slices for later or another use (I set them in a dish for guests to use as garnish).
- Cover crock pot and let mixture come to almost a boil (this may take up to an hour- this will vary greatly depending upon the size of your crock pot).
- Once it is almost boiling,sprinkle with a very light dash of each ground spice to taste (don't add too much or it will be gritty).
- Turn the heat down to LOW and allow cider to cook at least another hour before serving.
- Leave the crock pot on LOW and allow guests to ladle out mugfuls.
- Keep replenishing more cider as the crockpot empties.
- You will NOT need to add more spices, etc, as long as you still have 1/4 of the original mulled cider left in the crock.
- No need to return to a boil, just pour in the new cider and continue to heat on LOW.
- The last dregs of cider will be very heavily spiced- I usually discard the remaining 1/4 of liquid after I am finished replenishing the cider for the day.
HOT SPICED APPLE CIDER IN A CROCK POT

- Pour enough cider to fill crock pot to ¾ full. Add brown sugar. Stick whole cloves into skin of orange and apple wedges. Place apple, orange and all remaining ingredients into cheese cloth, tie with string and drop into crock pot. Bring to a boil, about 2 to 2 ½ hours on high.
- Once the cider is boiling, reduce setting to low. Keep on low for 2 hours or more before serving. Replenish with additional cider when needed; if cider is cold, return setting to high until heated.
- Serve or have guests serve themselves from the crock pot. If desired, leave a bottle of spiced rum nearby.

- Mix together the apple juice and the brown sugar in the crock pot.
- Rinse the cheesecloth and wring it dry.
- Wrap the cinnamon sticks and allspice berries in the cheesecloth and tie it securely with cotton string.
- Quarter the orange and pierce it with cloves.
- Place the spice bag and orange sections in the slow cooker.
- Cover and cook on high for 2½-3 hours.
- This can be kept warm (on low) for up to 3 hours.

- Pour apple cider into a 3 1/2 quart crock pot. Add 4 or 5 cinnamon sticks. Punch holes in the orange with a toothpick and stick in whole cloves. You can add as many or few as you like. I usually just make several rings around the orange with the cloves.
- Place the orange into the crock pot. Heat on low for about 4 or 5 hours. Remove orange and cinnamon sticks before serving. If using rum or bourbon just have guests add to their cup or glass how much they like and then add the mulled cider along with a cinnamon stick.
- Makes 8 cups. This will keep for several days in the refrigerator and can be reheated in the microwave when you want to enjoy a cup. Your house will smell wonderful when this recipe is simmering in the crock pot.
