Easy Homemade Mocha image

How to make an easy and delicious homemade mocha, no espresso machine or hot chocolate mix needed.

1 to 2 tablespoons (12g to 25g) granulated sugar (to taste)
1 tablespoon (5g) unsweetened cocoa powder
1 tablespoon water (omit if making using the mason jar method)
1 cup hot coffee
¼ cup milk (any percentage)
1 tablespoon heavy cream (optional)
Whipped cream (for topping, optional)

Steps:

  • In a small pot or microwave-safe cup, stir together sugar, cocoa powder, and water. Heat on the stove (or in your microwave for about 15 seconds), and stir until sugar and cocoa powder dissolve and sauce is completely smooth.
  • Stir in coffee and milk and continue to heat until steaming (about 30 seconds in the microwave). If making on the stove, you can whisk the mixture vigorously until foamy. Pour into a cup, top with whipped cream if desired, and enjoy!
  • Combine all ingredients except the water and optional whipped cream in a mason jar. Screw the lid on securely and wrap top with a towel (in case your jar leaks). Give a few very good shakes, until everything is well-mixed and mixture is foamy.
  • Pour into a mug and microwave for 30 seconds or until steaming. Top with whipped cream if desired. Enjoy!

¾ cup granulated sugar
½ cup lightly salted butter, softened
2 large eggs
2 cups all-purpose flour
3 tablespoons finely ground coffee
3 tablespoons cocoa powder
1 ½ teaspoons baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a baking sheet.
  • Combine sugar and butter in a large bowl and mix until light and fluffy. Add eggs 1 at a time and blend well.
  • Mix flour, coffee, cocoa powder, and baking powder in a bowl and whisk to blend. Slowly add flour mixture to butter mixture and stir until dough is blended.
  • Lightly oil a large square of aluminum foil. Place dough on top and use foil to roll into a log about 12 inches long. Open the foil and slip dough log onto the prepared baking sheet. Gently flatten log to about 1 1/2 inches in height.
  • Bake in the preheated oven for 25 minutes. Remove and let cool 10 minutes, leaving oven on. Slice log into 12 biscotti using a serrated knife. Stand biscotti upright on the baking sheet, leaving 1/2 inch space between each.
  • Return to the oven and bake 12 minutes more. Remove and let cool completely, about 1 hour. Store biscotti in an airtight container.

  • Add hot water and stir constantly to dissolve.

4 large eggs, room temperature
3 teaspoons vanilla extract

1-1/3 cups sour cream
FROSTING:
12 ounces cream cheese, softened
6 tablespoons butter, softened
6 ounces unsweetened chocolate, melted
6 tablespoons brewed coffee
2 teaspoons vanilla extract
4-1/2 to 5-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt; add to creamed mixture alternately with coffee and sour cream, beating well after each addition. , Pour into three greased and floured 9-in. round baking pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. You aren't meant to taste coffee in this cake but you do get a taste of the chocolate now and then, which I love - I guess I just don't chop it finely enough. I found this recipe in an Australian Weight Watcher's cookbook and added the alcohol for flavour. Although I use Cadbury, any block of chocolate from a confectionary store would do. I am guessing at the servings as it is meant to be eaten in small slices being a Weight Watcher's recipe. The prep. time doesn't include soaking dried fruit overnight.

2 cups self raising flour
150 g chocolate with fruit and nuts, I use a block of Cadbury
1 kg dried fruit (raisins, sultanas and currants)
2 cups strong coffee
rum, to taste, brandy can be used instead

Steps:

  • Chop raisins if they are large in half then soak fruit overnight in coffee and rum (or brandy).
  • Preheat oven to 180 deg C (350 deg F) and coat a 20cm x 28cm (8" x 12")tin with cooking spray, then line base with baking paper.
  • Chop chocolate into pieces, then mix together with dried fruit mixture and flour.
  • Spoon into prepared tin and bake 2hrs or until cooked through.
  • Put some baking paper on top of cake to prevent burning.

12 tablespoons unsweetened cocoa
1 1/2 tablespoons butter
1 1/2 teaspoons vanilla
enough fresh hot coffee (to blend)

Steps:

  • Mix on med/high speed all ingredients gradually adding the hot coffee and blend to a smooth paste (be careful when adding coffee that you do not put too much in or it will be runny).
  • Cool cake and frost spreading on the top and sides of a bundt cake or a single layer cake.
