8 cherry tomatoes - chopped

Steps:

  • Use a 14 x 10-inch serving platter.
  • Spread the refried beans on the bottom of the platter, as the first layer.
  • Then in a small bowl, blend together chunky salsa and sour cream.
  • Spread sour cream mixture over the refried beans.
  • Scatter on top with black olives, chopped cherry tomatoes, and green onions.
  • Refrigerate for at least 1 to 2 hours. Serve with baked tortilla chips!

2 pounds lean ground beef
1 (16 ounce) jar taco sauce
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 (16 ounce) package shredded Cheddar cheese
1 cup shredded lettuce
1 tomato, cubed
2 green onions, sliced
1 (2 ounce) can sliced black olives, drained

Steps:

  • Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.
  • In a large bowl, mix the sour cream, cream cheese and taco seasoning mix. Spread the mixture into a medium serving dish.
  • Layer the sour cream mixture with beef mixture, Cheddar cheese and lettuce. Top with tomato, green onions and black olives.

1 (30 ounce) can refried beans (I use no fat)
1 lb hamburger (I use as lean as possible)
1 (2 1/4 ounce) package taco seasoning
1 cup shredded cheese (I use cheddar or co-jack)
2 tablespoons taco sauce (I just add to taste) or 2 tablespoons hot sauce (I just add to taste)

Steps:

  • Brown hamburger in skillet.
  • Add taco seasoning following directions on the pakage.
  • When meat is done reduce heat and add beans and stir until well mixed.
  • Sprinkle in cheese until melted.
  • Add sauce to taste.
  • If you like more of a tomato flavor you can use salsa.

  • Preheat oven to 375 degrees F (190 degrees C).

3/4 cup guacamole
1/2 cup sour cream
1 (4 ounce) can diced green chilies

1/4 cup green onions with top, sliced
1 large tomatoes, diced small
2 cups shredded cheddar cheese

Steps:

  • Spread bean dip in an even layer on a medium sized serving platter.
  • Spread guacamole over the bean dip.
  • Spread the sour cream over the guacamole.
  • Sprinkle the chilies, jalapeños, olives, onions, and tomatoes over the sour cream.
  • Sprinkle the cheese over the entire dip covering all the ingredients beneath.
  • Serve with chips.
  • Note: If desired, you could turn this into a wonderful taco salad by making this in individual taco salad tortilla bowls and adding seasoned ground beef and shredded lettuce.
