3 cups flour
2 cups sugar
1 cup oil
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla
3 eggs, beaten
3 cups chopped apples
1 cup chopped walnuts
1/2 cup raisins
1/2 cup chopped dates (optional)

Steps:

  • Preheat oven to 325.
  • Grease a 9x13 pan.
  • Mix flour, sugar, oil, soda, salt, vanilla and eggs.
  • Stir in apples, nuts, raisins and dates.
  • Spread in pan.
  • Bake 1 hour or until toothpick inserted in center comes out clean.

This recipe was given to me by a co-worker. It is an absolutely delicious apple cake and easy to make.

3 cups flour
2 cups sugar
1 cup canola oil
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla
3 eggs
3 cups diced peeled cooking apples
1 cup chopped walnuts
1/2 cup chopped raisins
confectioners' sugar

Steps:

  • Preheat oven to 325°F.
  • Grease and flour two 8x8-inch square pans.
  • Mix first 7 ingredients with mixer on low.
  • Beat 3 more minutes.
  • Stir in apples, nuts and raisins.
  • Spread in pans, bake 1 hour.
  • Cool.
  • Place paper doily on top of cake.
  • Sprinkle with confectioner's sugar.
  • Remove doily.

  • Prepare cake batter according to box directions. Fold in the apples, walnuts, pecans, raisins, golden raisins and dried cranberries. Distribute the batter evenly between the two prepared pans.
  • Bake in preheated oven for 50-55 minutes, rotating pans halfway through baking. Remove from oven and cool on wire rack for 20 minutes. Remove from pans and cool on racks to room temperature.
  • Place paper doily on top of cake and sift confectioners' sugar directly over the doily. Carefully remove doily, shake excess into sink and repeat for second cake.
