½ cup canola oil
2 teaspoons garam masala
½ teaspoon seasoned salt

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine oil, garam masala, and seasoned salt together in a large bowl. Add potato pieces and toss to coat. Spread on an ungreased baking sheet.
  • Broil potatoes in the preheated oven until starting to brown, about 7 minutes. Remove from oven and flip potatoes over. Return to the oven and continue broiling until golden brown, about 5 minutes more.

5 tablespoons unsalted butter
1 1/2 pounds boiling potatoes, peeled and 1/2-inch diced
1 1/2 cups chopped yellow onions (2 onions)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced scallions (white and green parts)

Steps:

  • Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley and scallions. Serve hot.

Hash browns are one of those brilliant recipes that taste amazing, look impressive and take very little effort. A welcome addition to any breakfast or lunch.

4 medium floury potatoes, peeled (like Maris Piper or King Edwards)
1 medium onion
1 egg, beaten
salt and pepper
vegetable oil, for frying

Steps:

  • Coarsely grate the potatoes and onion into a clean tea towel and then squeeze out the excess liquid by twisting the towel. Place the mix in a large bowl.
  • Add the egg, a good couple of pinches of salt and freshly ground black pepper (you need to salt the mixture well otherwise the hash browns can be quite bland). Mix the ingredients well.
  • Heat a good glug of oil in a heavy based frying pan and when the oil is hot (but not smoking), add spoonfuls of the potato mixture into the pan and flatten into patties about 1cm/½in thick. Flip over once browned and crispy - about 2-3 minutes each side.
  • Serve hot as a breakfast or supper side dish. Especially good with bacon and eggs.

2 cups Potatoes (Aloo) , Peeled and shredded
3 tablespoons All Purpose Flour (Maida)
1 Whole Egg , whisked well with a fork (or 1/2 cup yogurt)
1/4 cup Cheese , grated
Coriander (Dhania) Leaves , Small bunch, chopped (or parsley)
Oil , for frying
Salt and Pepper , to taste

Steps:

  • To begin making the Breakfast Hash Browns Recipe, mix all the ingredients well in a large bowl until well combined.
  • Heat about 1/4 cup of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan and spread to cover evenly the whole bottom of the pan.
  • Cook until golden and crisp, 5 to 7 minutes, and then flip and cook another 2 minutes. Transfer to a paper-towel-lined sheet to drain the excess oil.
  • You could alternatively do smaller portions at a time by dividing the potato mixture into 7 to 8 portions and then cooking them separately on the pan.
  • Remove from pan, and drain on paper towels and serve hot.
  • Season the Breakfast Hash Browns with salt and pepper and serve along with Chilli Cheese Toast Recipe, boiled eggs and a glass of Homemade Fresh Orange Juice Recipe.

A very easy and tasty hash brown recipe. You can also add some bacon, onions, herbs, etc. to it. Experiment yourself!! You will need a large clean towel to remove the juice from the potatoes, and this step is very important, otherwise it won't come out crispy. Also, be generous on the amount of oil when you cook the hash brown, oil makes it crispier.

  • Peel the skin of potatoes if they are dirty, otherwise you can also leave them on.

1 pkg ore ida shredded hash brown potatoes
1 medium onion, finely chopped
1 can(s) cream of chicken soup
1 lb ground sausage meat (optional)
8 oz sour cream
1/2 c melted butter
1 tsp salt
2 c grated cheddar cheese
2 c crushed corn chex (or corn flakes)

Steps:

  • 1. PREHEAT oven to 350 degrees.
  • 2. Saute sausage meat and onion until nice and brown. Drain, cool and set aside.
  • 3. Mix the soup, sour cream, salt and 2/3 rds of the melted butter. Stir in the grated cheese and frozen potatoes.
  • 4. Add cooled onion and sausage mixture and blend all ingredients.
  • 5. Spread in a greased 9" X 13" pan.
  • 6. Place the corn chex/flakes in a blender and crush to desired texture. I like mine fine so a few pulses and the job is done.. Add the melted butter and toss. Spread over top of casserole and pop in a 350 degree oven for 1 hour or until bubbly.
  • 7. Let stand for 10-15 minutes before serving.

1 cup frozen peas and carrots
1/2 cup summer sweet corn, canned or fresh
2 C sour cream or plain yogurt
1 can cream of chicken soup
1/3 cup milk
3 cups cooked shredded roasted chicken
2 cups bread crumbs, Ritz cracker crumbs or corn flake crumbs

Steps:

  • Heat the oven to 400 degrees. Place potatoes in 9 by 13 baking dish. In a large bowl, mix together the remaining ingredients, except the crumbs. Pour the soup and vegetable mixture over the potatoes. Sprinkle the crumbs on top. Bake for 1 hour or until the top is golden brown.
