CRISPY KETO FRIED CHICKEN IN THE AIR FRYER



Crispy Keto Fried Chicken in the Air Fryer image

This keto-friendly fried chicken is so tasty you may not even realize it's not the real deal. Cooking it in an air-fryer also speeds up the cooking time. This recipe is for boneless chicken. Bone-in chicken pieces will result in a longer cook time. I use a microplane to grate my Parmesan. Serve with your favorite sides.

½ cup whole-milk plain kefir (such as Lifeway®)
1 tablespoon hot sauce
1 ½ pounds chicken tenders
2 (3.25 ounce) packages pork rinds, crushed
3 ounces finely grated Parmesan cheese
1 ½ teaspoons garlic powder
¾ teaspoon cantanzaro herbs (such as Savory Spice Shop®) or Italian seasoning
½ teaspoon sweet smoked paprika

Steps:

  • Combine kefir and hot sauce in a shallow bowl. Add chicken tenders and marinate for 30 minutes to 1 hour, or longer if preferred.
  • Pour crushed pork rinds into a resealable shallow container. Mix in Parmesan cheese, garlic powder, cantanzaro herbs, and paprika.
  • Preheat the air fryer to 390 degrees F (200 degrees C), about 3 minutes.
  • Drain chicken from kefir mixture and dredge through the pork rind mixture.
  • Air fry in the preheated fryer for a total of 17 minutes, turning chicken at the halfway point.

1½ pounds chicken pieces (thighs and drumsticks, with skin on)
2 eggs
½ cup pickle juice
½ cup almond flour
½ cup crushed pork rinds
¼ cup parmesan cheese
½ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder

Steps:

  • Preheat air fryer to 370°F.
  • Combine chicken, eggs and pickle juice together and refrigerate for at least 30 minutes.
  • Combine all breading ingredients in a bowl and mix until fully incorporated.
  • Let access liquid drip off the chicken, then dip it into the breading mixture making sure it is fully coated.
  • Place chicken on a plate and spray with cooking spray or oil. Once coated place chicken in the air fryer basket.
  • Cook chicken for 25-30 minutes flipping the pieces halfway through the cooking time.

1/4 cup olive oil (extra virgin)
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 tablespoon paprika powder
1 teaspoon garlic powder
pinch cayenne pepper (optional)
4 drumsticks
2 eggs
4 cups pork rinds

Steps:

  • In a medium-sized bowl, add the olive oil, sea salt, black pepper, paprika powder, garlic powder, and cayenne pepper. Mix everything together with a fork.
  • Add the chicken drumsticks to the mixture and cover them in the seasoning.
  • In a small bowl, whisk the two eggs and add them to the bowl with the seasoned chicken. Mix everything together and set it aside.
  • Put the pork rinds in a food processor and turn them into crumbs. Transfer the crumbs into a medium-sized bowl.
  • Cover each seasoned chicken drumstick in the crumbs and place in the air fryer basket.
  • Air fry the drumsticks for 40 minutes at 180 degrees Celsius, or 355 degrees Fahrenheit.
