INSTANT POT® SHEPHERD'S PIE
This family friendly shepherd's pie uses ground beef (instead of the traditional lamb), and your Instant Pot® or multi-cooker pressure cooker to prepare the filling and potatoes.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil and add ground beef, onion, garlic, salt, and pepper. Cook until ground beef has browned and onions are soft and translucent, about 5 minutes. Stir in tomato paste, Worcestershire sauce, and thyme. Pour in beef broth and add frozen peas and carrots. Stir until everything is well blended and turn off Saute function.
- Place your Instant Pot's® metal collapsible trivet in the pot so that it rests a little bit above the meat mixture. Place the peeled potatoes on top of the trivet. Close and lock the lid. Select high pressure according to manufacturer's instructions. Set timer for 15 minutes if potatoes are on the smaller side or 20 minutes if they are medium or large. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Open the lid and transfer potatoes to a bowl. Turn off Instant Pot® and carefully remove the metal trivet (it will be hot).
- Add half-and-half, butter, and garlic salt to bowl with the potatoes. Mash until well blended.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Assemble the pie by pouring the meat mixture from the Instant Pot® into an 8-inch square baking pan. Spoon the mashed potatoes over the meat mixture and spread out evenly.
- Broil the shepherd's pie in the preheated oven until the top starts to golden and brown, about 3 minutes.

EASY SHEPHERD'S PIE WITH INSTANT MASHED POTATOES
Shepherd's Pie, or Cottage Pie, rather, is a comfort dish made with ground beef, mashed potatoes, and in this case- corn. Combined with a homemade sauce and instant mashed potatoes, this meal is filling and delicious.

- Preheat oven to 350 degrees F and grease a 9x13 baking dish.
- In a large skillet, brown your ground beef and drain. Cook onions until clear.
- Add in the minced garlic and stir.
- Add in the Italian seasoning, salt, pepper, ketchup, and Worchestershire sauce. Stir well to combine.
- Stir in the flour until well coated.
- Slowly add in the beef broth and stir until thickened. Remove from heat.
- In another pot make instant mashed potatoes according to box for the 8 servings option.
- In your baking dish, spread your ground beef over the dish to cover nicely.
- Scatter the drained corn over the top of the ground beef, trying to make a nice even layer.
- Take the instant mashed potatoes and spread them out over the top of the corn.
- Bake in the oven for 45 minutes. Let cool 5 minutes before serving.

- Pour chicken broth into a multi-functional electric pressure cooker. Place a steamer rack into the pot. Add yam and potato; sprinkle pink salt on top. Close and lock the lid. Turn valve to Seal. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid. Remove yam, potato, and rack. Strain liquid into a glass measuring cup and reserve. Return yam and potato to pot. Add milk and butter; mash using a potato masher until smooth. Scrape mashed potato topping into a bowl using a silicone spatula.
- Preheat the oven to 350 degrees F (175 degrees C).
- Select Saute function on the pressure cooker. Heat oil on high mode. Add onion and garlic; saute until slightly tender, 1 to 2 minutes. Add ground beef, salt, and pepper. Cook and stir until filling is well combined, 2 to 3 minutes. Add mushrooms; saute until starting to soften, about 1 minute.
- Stir corn, peas, broccoli, carrot, and celery into the pot with the filling. Pour in reserved potato liquid. Close and lock the lid. Set pot to Manual function. Select low pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 5 to 10 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid. Strain out excess liquid and discard; return filling to pot. Set pot to Saute mode.
- Dissolve gravy mix in just enough water to dissolve the powder; add to the filling in the pot. Cook and stir until gravy thickens, about 2 minutes. Transfer filling to a baking dish and cover with the mashed topping. Sprinkle Cheddar cheese on top.
- Bake in the preheated oven until cheese is melted, about 10 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Broil shepherd's pie until top is browned, 3 to 5 minutes. Let sit for 5 minutes before serving.

- Preheat Oven to 325'F.
- Use vegetable spray on casserole dish.
- Prepare instant mashed potatoes following box directions.
- Boil frozen vegetables in saucepan.
- Brown ground beef.
- Add 1/2 can of beef gravy.
- Add garlic powder.
- Stir until well blended.
- Drain vegetables.
- Add the beef mixture to casserole dish.
- Add the vegetables and spread evenly.
- Add large spoonfuls of the mashed potatoes
- over the vegetables.
- Wait a few minutes for potatoes to cool before spreading.

Steps:
- 1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
- 2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.
- 3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.
- 4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.
- 5 Mash potatoes in bowl with remainder of butter, season to taste.
- 6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
- 7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

- Prepare potato flakes according to package directions, using 1-2 packages depending on how thick you want them to be on top of casserole.
- Mix ground beef, vegetable stew, and mixed vegetables in large mixing bowl.
- Layer ground beef/ veggie mixture on bottom of large baking dish.
- Spread layer of potatoes on top of beef mixture making as thick as you would like.
- Top with 1-2 cups cheese according to taste.
