GRILLED BLUE CHEESE BURGERS
I normally like to add more blue cheese, but my husband complains that they fall apart on the grill. Add additional sprinklings on top should you desire more of that blue-cheesy flavor. Can make the patties in the morning and store in the refrigerator until ready to use.

GRILLED BLUE CHEESE BURGERS
A great twist on the grilled burger! A must for blue cheese lovers, and the sauteed mushrooms finish these off perfectly! I had these at a friend's cook-out, and I had to have the recipe. If you like your meat spicier, feel free to add more spice to the meat mixture.

Steps:
- Combine ground beef, salt, and pepper in a large bowl; mix well, and shape into 16 thin patties. It easier to form 8 equally portioned balls of meat, then halve it to form the patties.
- Combine cream cheese, blue cheese, onion, horseradish, and mustard in a small bowl; beat at medium speed of an electric mixer until blended. Divide cheese mixture evenly among 8 patties; spread to within 1/2 inch of edges. Top with the remaining patties, pressing edges to seal. Make sure to seal them well.
- Grill hamburgers over medium-hot coals (350 to 400 degrees) 10 minutes on each side or to desired degree of doneness. Set aside, and keep warm.
- Saute mushrooms in melted butter in a skillet until tender. Top burgers with sauteed mushrooms.
HAWAIIAN HAMBURGERS WITH GRILLED PINEAPPLE
Plan ahead the shaped uncooked burger patties need to marinate for a minimum of 6 hours to blend the flavors before grilling. If possible use fresh pineapple rings for this about 1/2-inch thick or a little larger. If you prefer a little kick then add in a small amount of cayenne pepper --- You can also use half ground pork and beef --- you will LOVE these burgers!

- In a medium saucepan, combine water, soy sauce, light brown sugar, honey, toasted sesame seeds, ginger, and garlic powder. Heat to medium high, then combine cornstarch with cold water and add to the sauce. Cook on medium high until a slow boil is reached, reduce heat if necessary. Cook until the sauce thickens (you can add more water to thin the sauce if it thickens too fast, if needed). Remove from heat and allow to cool to warm room temperature, about 15 minutes.
- Add sesame seed oil to ground beef, then portion into 4 patties (1/4 lb each) that are about 3/4 of an inch in thickness and set aside. Toast or grill brioche or hamburger buns until golden brown, if desired. Grill pineapple, just enough to heat the pineapple and leave grill marks.
