EASY FRUIT-JUICE GELATIN



Easy Fruit-Juice Gelatin image

Skip artificially flavored gelatin in favor of this super-simple homemade version using any fruit juice you like.

Number Of Ingredients 2

4 cups fresh or premade fruit juice (aside from mango, papaya, and pineapple, any kind -- pulpy or not -- will work)
2 envelopes (1/4 ounce each) unflavored gelatin

Steps:

  • Place 1 cup juice in a glass bowl. Sprinkle with gelatin. Meanwhile, bring remaining 3 cups juice to a boil. Pour boiling juice over gelatin-juice mixture, and stir until gelatin dissolves completely. Pour into 5-ounce juice glasses, which make great single servings. Refrigerate until firm, about 4 hours.

This is an awesome dessert for spring/summer that I got from a friend of mine. I have always had rave reviews wherever I have taken it!! Perfect for a family gathering or potluck!

1 (6 ounce) box raspberry Jell-O gelatin
2 cups boiling water
1 (21 ounce) can blueberry pie filling
1 (21 ounce) can crushed pineapple, undrained (large can)
8 ounces cream cheese, softened
1 cup powdered sugar
8 ounces sour cream
1 teaspoon vanilla

Steps:

  • Dissolve jello with boiling water (use 1 3/4 cup water for firmer jello).
  • Mix in pie filling and pineapple with juices.
  • Put in fridge to set for 4-6 hours or longer if needed.
  • Mix all remaining ingredients for the topping.
  • Beat until smooth and spread onto set jello.
  • OPTIONAL: Sprinkle with fresh blueberries, raspberries and or nuts.

2 quarts fresh or frozen blueberries
4 cups water
12 cups sugar
2 pouches (3 ounces each) liquid fruit pectin

Steps:

  • Place blueberries in a Dutch oven and crush slightly. Add water; bring to a boil. Reduce heat to medium; cook, uncovered, for 45 minutes. Line a strainer with four layers of cheesecloth and place over a bowl. Place berry mixture in strainer; cover with edges of cheesecloth. Let stand for 30 minutes or until liquid measures 6 cups., Pour juice back into Dutch oven; gradually stir in sugar until it dissolves. Bring to a boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly., Remove from heat; skim off foam. Ladle hot mixture into six hot sterilized pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

2 cups fresh blueberries
¾ cup water, divided
2 teaspoons lemon juice
1 ½ teaspoons unflavored gelatin
3 tablespoons white sugar

Steps:

  • In a heavy saucepan over medium-high heat, combine blueberries, 1/2 cup water and lemon juice. Bring to a boil, then reduce heat and simmer gently for about 8 minutes, stirring frequently.
  • Meanwhile, soak gelatin in 1/4 cup cold water.
  • Remove blueberries from heat and stir in gelatin and sugar. Pour into hot, sterilized jars and seal. Cool and store in the refrigerator.
