EASY BLACK BEAN DIP

Easy Black Bean Dip image

This is one of the easiest recipies I know of and it can be served and eaten many ways. It can be served with virtually any chip as a dip for a party (or as I more commonly eat it which is whenever I'm hungry for 2 or 3 days till it's gone). It can be used on top of salads or as a condiment for Southwest-style wraps or eaten like a bean salad.

Provided by BeautyBlondeC

Categories     Black Beans

Time 10m

Yield 1 large bowl, 20 serving(s)

Number Of Ingredients 5

2 (15 ounce) cans black beans (drained)
2 (12 ounce) cans white shoepeg corn (well drained)
2 (10 ounce) cans Rotel Tomatoes (regular or medium)
1 bunch green onion (chopped)
1/4 bunch cilantro (chopped)

Steps:

  • Chop green onions and cilantro and place in large bowl.
  • Next, drain beans and corn.
  • Drain one can of Rotel tomatoes fully and partially drain second can.
  • Add all canned ingredients to bowl with green onions and cilantro.
  • Mix well and enjoy! This recipe can be eaten immediately after preparation or chilled and served later. Keeps well and lasts for days!
  • **Note: You can add salt and pepper to taste if desired however the salt in the canned ingredients is usually all you need). Also, you can substitute parsley for the cilantro if you aren't a big fan of it's flavor.

BLACK BEAN DIP

Black Bean Dip image

Delicious, healthy and easy-to-make black bean dip.

Provided by Jennifer Segal

Categories     Appetizers

Time 20m

Yield Makes about 3 cups

Number Of Ingredients 10

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

  • Add oil to a skillet over medium heat. Once hot add onion and garlic and cook, tossing frequently so the garlic doesn't burn. After about 5 minutes add in the spices (cumin, chili powder, sea salt and cayenne pepper). Toss to combine and continue cooking another 5 minutes. Add a tablespoon of water if the pan starts to dry out. After about 10 minutes of cooking total, remove from heat.
  • Place garlic and onion mixture, black beans, reserved black bean liquid, tomato paste, lime juice, apple cider vinegar and fresh cilantro into a blender. Blend until smooth. Taste and add additional spices, if needed. More salt or perhaps more cayenne pepper if you want the dip to be spicier.

  • Drain and rinse the cans of beans and add them to the bowl of your food processor. Add half the salsa, the first round of seasonings (the 1/4 of each) and a few good shakes of salt. Process the mixture until it starts to become smooth and uniform in color, about 2 minutes.
  • I like the beans to be about as thick as mashed potatoes, you can experiment to see what you like. Add more salsa to make the mixture thinner and use less to make the mixture thicker. Taste and add more seasoning if needed. Reprocess the mixture each time you add something.
  • Add salt to taste. Beans are generally bland so salt is really important to making them taste like something. A little on the salty side is better than under-salted in this case.
  • Once the beans are to your liking scoop them out into a bowl and serve inside your favorite burritos, as a base for bean dip, on top of nachos, or as a side to tacos.
