2 tablespoons canola oil
1 medium onion, cut into 1/4-inch thick rings
1 cup chicken broth
1 (8 ounce) can pineapple chunks, undrained
2 tablespoons lemon juice
3 tablespoons reduced-sodium soy sauce
1 tablespoon cornstarch
½ teaspoon dry mustard
6 skinless chicken thighs
1 small red bell pepper, cut into 1/4-inch rings

Steps:

  • Heat canola oil in a skillet over medium heat. Add onion rings and cook and stir for 3 minutes. Pour in chicken broth, pineapple juice, and lemon juice carefully. Bring to a boil.
  • Mix soy sauce with cornstarch and dry mustard in a bowl. Add to the sauce in the skillet, stirring until clear and thickened, 2 to 3 minutes.
  • Place chicken thighs in the sauce. Cover and simmer, stirring occasionally to prevent sticking, until chicken juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Add pineapple chunks and bell pepper to chicken; simmer until tender, about 5 minutes more.

1 cup seedless red grapes, halved
3/4 cup sliced celery
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup navel orange segments
3/4 cup sliced firm bananas
1/3 cup salted peanuts

Steps:

  • In a bowl, combine the first seven ingredients. Fold in oranges. Cover and refrigerate until chilled. Just before serving, fold in bananas and sprinkle with peanuts.

  • In a medium bowl, beat cream cheese until fluffy. Mix in salad dressing and 2 tablespoons reserved pineapple juice. Stir in the pineapple tidbits, chicken, almonds, and grapes until evenly coated. Chill until serving.

2 (9 1/2 ounce) cans white meat chicken (it suggests Swansons)
1 (12 ounce) can crushed pineapple in syrup
8 ounces cream cheese
2 stalks celery
1/2 small onion, minced
salt and pepper
1 loaf Hawaiian bread, round
pecans, chopped (or coconut)

Steps:

  • Drain meat well and blot on paper towels to dry meat and drain pineapple well. Bring cream cheese to room temperature to soften and chop celery and onion, med to fine. Mix meat, pineapple, celery, onion and cream cheese in large bowl,mix well with fork. Season to taste with salt and pepper. Cover and chill several hours or overnite is better. To serve cut the center out of the bread and stuff with salad. Chop the center bread that was removed into cubes. Garnish with coconut or pecans.(I prefer pecans)serve on party crackers and bread cubes.

1/2 cup canned pineapple juice*
1/3 cup olive oil
1/3 packed light brown sugar
1/4 cup reduced sodium soy sauce

3 tbsp butter
1/4 cup soy suace
16 oz pineapple tidbits ((we use frozen tidbits but canned works great too!))
1/4 cup honey ((or 3 tablespoons of brown sugar))
2 tsp sugar
1/2 tsp cloves and ginger ((or cloves and cinnamon, or cinnamon and ginger...one of those combos))
3 tablespoons flour ((if needed, use a gluten-free substitute))

Steps:

  • Melt your butter in a large skillet. Add chicken and cook about 3-4 minutes on each side. Remove the chicken from the pan and set aside.
  • Add the pineapple, soy sauce, honey, sugar, and spices to the pan scraping the bottom a bit to bring up the browned bits. Let come to a boil.
  • Turn the heat down a bit. Push aside the pineapple and add the flour to the liquid, slowly...whisking with a fork as you add it.
  • Add enough flour to bring the sauce to the thickness you prefer.
  • Remove from heat.

2 tablespoons butter
juice of 1 lime
zest of 1/2 a lime
chopped cilantro

Steps:

  • Add 1 cup rice to a saucepan.
  • Drain crushed pineapple in a 2 cup measuring cup.
  • Fill remaining cup with water until you have 2 cups. Add to saucepan.
  • Add crushed pineapple and butter. Heat on medium high until boiling.
  • Once boiling, reduce heat to simmer and cover. Cook for 15-20 minutes or until rice is cooked.
  • Remove from heat. Stir well. Add lime juice, zest and mix well. (optional sugar is added here as well)

1 tsp cilantro
1 tbsp olive oil
1/2 lime ((juice only))
1/4 tsp white wine vinegar
1 chicken breast fillet
1 tsp Cajun seasoning ((or any other seasoning))
1/2 avocado
2 radishes
1/2 red bell pepper
5 cherry tomatoes
100 g fresh pineapple ((peeled and sliced))
handful cilantro ((green coriander))

Steps:

  • First, prepare the chicken breast fillets by seasoning them. I like to add salt, pepper, paprika and garlic powder to them, but you can definitely just use whatever seasoning you like.
  • Preheat your oven to 350 °F or 180 °C. Heat a splash of oil in a frying pan or skillet on medium heat, and pan sear the chicken for a few minutes until golden on both sides.
  • Place the chicken in a casserole dish, or on a sheet covered baking tray, along with pineapple slices, and bake in the oven for 5-15 minutes, or until the internal temperature of the chicken reaches 74 °C or 165 °F.
  • Remove the chicken from the oven, and leave it to rest for a few minutes before slicing.
  • Finely dice fresh chili and cilantro, and add these to a small container. Add white wine vinegar, olive oil and lime juice. Stir or shake to combine the ingredients. Optionally, you can add some black pepper to taste.
  • Dice the vegetables and place them in a bowl. Add roasted or grilled pineapple and chicken, and drizzle the dressing over the top. Serve the salad immediately!

  • Add peppers and pineapple to pan, and cook a few minutes more, until sauce is thick, sticky, and glossy, and peppers are tender
  • Serve over cooked white rice.
