HAMBURGER STEW
Hamburger stew has plenty of wholesome veggies and rich layers of bold flavor making it the ideal cold-weather recipe to satisfy hearty appetites.

- Heat a large pot or Dutch oven over medium-high heat. Crumble the ground chuck (2 pounds) into large chunks in the hot pan, and cook until evenly browned. Transfer cooked beef to a paper towel-lined plate. Discard all but 2 tablespoons of drippings from the pot. If you do not have that amount remaining, add vegetable oil to make up the difference.
- Add the onion (1), garlic (3 cloves), and carrots (4) and saute, over medium heat, until soft, about 5-6 minutes.
- Sprinkle flour (3 tablespoons) over vegetables, stirring constantly, until the flour coats the vegetables. Cook for 2-3 minutes to toast the flour. Remove skillet from heat.
- Add beef stock (3 cups), stewed tomatoes with their juices (2 (14.5-ounces) cans), tomato soup (1 (10.75 -ounce) can), Better Than Bouillon (1 heaping tablespoon), Worcestershire sauce (2 tablespoons), potatoes (3), Italian seasoning (1 teaspoon), thyme (1/4 teaspoon), bay leaf (1), salt (2 1/4 teaspoons), pepper (1 teaspoon), green beans (1 1/2 cups), pearl onions (1 cup), and browned beef; stir to blend then simmer over low heat for at least 2 hours, stirring occasionally.
- Adjust seasoning. Ladle into individual bowls and serve.

SLOW COOKER POOR MAN'S STEW
A budget friendly meal that costs less than $2 per serving! This recipe is Whole30 and Paleo compatible, and you can make it in the Slow Cooker, Instant Pot, OR Dutch Oven!

- Heat a medium sized skillet over medium heat. Add the beef to the skillet, using a spatula to turn the meat and break it apart as it cooks. Transfer the cooked meat to the slow cooker.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your slow cooker and use a large spoon to mix everything together. Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours. If using frozen peas, add them in the last 30-45 minutes so that they cook through but aren't mushy. Test to make sure the vegetables are cooked through and tender, then season to taste with salt and pepper and serve.
- Set your Instant Pot to Sauté mode. Add the beef and cook for about 5 minutes, breaking it apart and turning with a spatula as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your Instant Pot. Cover and turn to High Pressure for 15 minutes. Allow for a Natural Pressure Release (do nothing and allow the pressure to naturally dissipate) for at least 10 minutes, then turn the steam release valve. Carefully open the Instant Pot.
- If using frozen peas, stir them into the stew now. Set the Instant Pot back to Saute mode and cook together, stirring occasionally, for about 10 minutes.
- Season to taste with salt and pepper and serve.
- Place your dutch oven on the stovestop and turn the heat on the burner to medium. Add the ground beef. Cook for about 5-6 minutes, using a spatula to turn the meat and break the pieces apart as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your dutch oven. Stir together. Bring to boil, then lower the heat, cover, and simmer for about 45 minutes, opening and stirring occasionally.
- If using frozen peas, stir them into the stew the last 10-15 minutes.
- Season to taste with salt and pepper and serve.

- Add the oil, onion, and celery to a soup pot and sauté over medium-high heat for 5-7 minutes.
- Stir in the garlic and cook for 30 seconds.
- Add the beef to the pot and cook, breaking it up with your spoon as you go along, until it's browned (about 8 minutes).
- Sprinkle in the flour and cook for 1-2 minutes (stirring often).
- Stir in the tomato paste.
- Add in the broth, Worcestershire sauce, Italian seasoning, potatoes, and carrots. Increase the heat to high and bring it to a boil. Reduce the heat to a rapid simmer and cook, covered (with the lid slightly open), stirring occasionally, for at least 30 minutes or until the potatoes and carrots are tender and the flavors have had some time to build. Add more broth if the stew starts to get too thick, and if you want it thicker, cook it for longer with the lid off.
- Stir in the frozen peas and season with salt & pepper as needed.

- In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink, breaking it into crumbles; drain. Add the tomatoes, carrots, celery, potatoes, water, rice, salt and pepper; bring to a boil. - Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
- Stir tomato sauce, diced tomatoes, water, sofrito, Worcestershire sauce, Italian seasoning, seasoned salt, and bay leaves into beef mixture. Bring mixture to a boil, reduce heat to low, cover the pot, and simmer, stirring occasionally, until flavors blend, about 20 minutes.

EASY GOULASH OR POOR MAN'S HAMBURGER STEW
This is recipe is one that my mom used to make all the time. It is super easy and yummy. My kiddos really like this recipe. It is really good just as it is, or if you have left overs the next day it is really good with tostito chips, fitos, or tortillas. The ultimate quick man meal. My husband always wants me to cook this, and the left overs are just as good if not better. :)

- First brown the ground beef, and drain, then add the onions and green peppers. Season your meat with salt, pepper to taste. Or how you normally season it.
- Then add the cans of corn and diced tomatoes and let it cook covered in the juice until the potatoes are tender.
- This is really yummy with corn bread and tortillas. This one is my family's favorite goulash, we have tried many.
