CHINESE BRAISED BEEF WITH GINGER

Chinese braised beef with ginger image

Slow cooking beef shin or brisket in Asian aromatic spices gives a melt-in-the-mouth main course that's delicious with steamed rice and crisp stir-fried vegetables

Provided by Good Food team

Categories     Dinner

Time 3h35m

Number Of Ingredients 17

2 - 3 tbsp vegetable or sunflower oil
1 ¼kg beef shin or brisket , cut into very large chunks
2 onions
50g ginger
3 garlic cloves
small bunch coriander
2 tsp Chinese five-spice powder
6 whole star anise
1 tsp black peppercorn
100g dark brown muscovado sugar
50ml light soy sauce
50ml dark soy sauce
2 tbsp tomato purée
beef stock
thumb-sized chunk ginger , shredded into matchsticks
1 tbsp vegetable or sunflower oil
cooked jasmine rice

Steps:

  • Heat a little of the oil in a large flameproof dish. Add the beef chunks, in batches, and fry until browned. When each batch is browned, transfer the beef to another dish. Very roughly chop the onions, ginger, garlic and coriander stalks. Put in a food processor and whizz to a paste.
  • Wipe any oil out of the dish you browned the beef in. Add the paste with a good splash of water and gently fry, scraping up any beef bits, until the paste is fragrant and softened (add more water if the paste sticks). Stir in the five-spice, star anise and peppercorns, cook for 1 min, then add the sugar, soy sauces and tomato purée. Return the beef and any juices to the dish, then stir in enough stock to just about cover. Bring to a gentle simmer. Heat oven to 160C/140C fan/gas 3. Cover the dish, put in the oven and cook for 21⁄2 hrs until the beef is really tender.
  • Lift the beef out of the sauce into a dish, to keep warm. Boil the sauce until reduced by about half and thickened. Meanwhile, fry the ginger in the oil until golden and crispy. Return the beef to the sauce. serve the beef spooned over rice and scattered with the crispy ginger.

MONGOLIAN BEEF

Mongolian Beef image

Mongolian Beef is easy to make in just 30 minutes, crispy, sweet and garlicy with flavors you love from your favorite Chinese restaurant.

Provided by Sabrina Snyder

Categories     Main

Time 25m

Number Of Ingredients 9

1 pound flank steak
1/4 cup cornstarch
1/4 cup canola oil
2 teaspoons fresh ginger (, minced)
1 tablespoon garlic (, minced)
1/3 cup lite soy sauce (, low sodium)
1/3 cup water
1/2 cup dark brown sugar
4 stalks scallions (, green parts only, cut into 2 inch pieces)

Steps:

  • Slice the flank steak against the grain (the grain is the length of the steak) the long way in 1/4 inch thick pieces and add it to a ziploc bag with the cornstarch.
  • Press the steak around in the bag making sure each piece is fully coated with cornstarch and leave it to sit.
  • Add the canola oil to a large frying pan and heat on medium high heat.
  • Add the steak, shaking off any excess corn starch, to the pan in a single layer and cook on each side for 1 minute.
  • If you need to cook the steak in batches because your pan isn't big enough do that rather than crowding the pan, you want to get a good sear on the steak, and if you crowd the pan, your steak with steam instead of sear.
  • When the steak is done cooking remove it from the pan.
  • Add the ginger and garlic to the pan and sauté for 10-15 seconds.
  • Add the soy sauce, water and dark brown sugar to the pan and let it come to a boil.
  • Add the steak back in and let the sauce thicken for 20-30 seconds.
  • The cornstarch we used on the steak should thicken the sauce, if you find it isn't thickening enough add 1 tablespoon of cornstarch to 1 tablespoon of cold water and stir to dissolve the cornstarch and add it to the pan.
  • Add the green onions, stir to combine everything, and cook for a final 20-30 seconds.
  • Serve immediately.

  • Batter the beef: Cut the flank steak into 1/4" thin strips, slicing against the grain. It may help to freeze the meat for 10-20 minutes before slicing. Whisk the cornstarch, flour, and white pepper together in a mixing bowl. Add the water and egg and whisk until the batter is smooth. Toss the beef strips in with the batter to coat.
  • Fry the beef: Add the vegetable oil to a pot, filling it 2-3 inches with the oil. Heat the oil to 350F. Add the beef strips, working in batches, and use a fork to stir and break them apart as they cook. Fry for 3-4 minutes, or until golden brown. Remove the beef strips with a slotted spoon and let them drain on a paper towel lined plate.
  • Cook the sauce: Whisk the sauce ingredients together in a bowl. Heat the sesame oil in a large skillet over medium-high heat. Add the garlic and ginger, and cook for 1 minute or until fragrant. Add the sauce to the skillet and let it bubble, while stirring, for 1-2 minutes until slightly thickened.
  • Finish: Add the fried beef strips to the skillet and toss to coat well in the sauce. Cook for another 1-2 minutes until the sauce is thickened and fully coats each beef strip. Garnish with sesame seeds and green onion.
